1 (26 ounce) jar spaghetti sauce
1 green bell pepper, seeded and sliced into strips
1 onion, sliced
6 hoagie rolls, split lengthwise

Steps:

  • Place the Italian sausage links, spaghetti sauce, green pepper and onion into a slow cooker. Stir to coat everything in sauce.
  • Cover, and cook on Low for 6 hours. Serve on hoagie rolls.

1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup chicken broth
1/3 cup white vinegar
3 tablespoons lemon juice
3 tablespoons reduced-sodium soy sauce
3 tablespoons tomato paste
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1-1/2 pounds boneless pork loin chops, cut into 1-inch cubes
1 large onion, cut into 1-inch pieces
1 large green pepper, cut into 1-inch pieces
1 can (8 ounces) pineapple chunks, drained
3 tablespoons cornstarch
1/3 cup chicken broth
Hot cooked rice

Steps:

  • In a 3- or 4-qt. slow cooker, mix the first 10 ingredients. Stir in pork, onion, green pepper and pineapple. Cook, covered, on low 6-8 hours or until pork is tender. , In a small bowl, mix cornstarch and broth until smooth; gradually stir into cooking juices. Cook, covered, on low 15-20 minutes longer or until sauce is thickened. Serve with rice. To make ahead: In a large resealable plastic freezer bag, combine the first 10 ingredients. Add pork, onion, green pepper and pineapple; seal bag, turn to coat, then freeze. To use, place filled freezer bag in refrigerator 48 hours or until contents are completely thawed. Cook as directed.

Spend 20 minutes prepping and you can walk away for the rest of the day, as this slow-cooker stuffed pepper recipe cooks for around five hours.

6 large bell peppers
1 lb ground beef (at least 80% lean)
1 cup finely chopped onions
1 teaspoon salt
1 teaspoon black pepper
6 cloves garlic, finely chopped
1 1/2 cups cooked white rice
1 can (15 oz) Muir Glen™ organic tomato sauce
2 cups shredded cheddar cheese (8 oz)

Steps:

  • Spray 6-quart oval slow cooker with cooking spray. Trim tops off bell peppers; remove ribs and seeds. Set aside.
  • In 12-inch nonstick skillet over medium-high heat, cook beef, onions, salt and pepper 8 to 10 minutes, stirring frequently, until beef is cooked through and onion softens. Add garlic; cook 15 seconds. Drain.
  • Stir rice and 1/2 cup of the tomato sauce into beef mixture in skillet; mix to combine. Stir in 1 cup of the cheese. Stuff peppers with beef mixture; arrange in slow cooker. Pour remaining tomato sauce over peppers.
  • Cover; cook on Low heat setting 4 1/2 to 5 1/2 hours or until peppers are soft. Top peppers with remaining 1 cup cheese. Cover; cook 3 to 8 minutes longer or until cheese is melted. Use slotted spoon to lift peppers from slow cooker.

1 large onion, cut into 1-inch cubes
1 large carrot, peeled and diced
2 stalks celery, cut into 1/2 inch pieces
1 small green bell pepper, cut into 1 inch pieces
1 (4 ounce) jar whole mushrooms, drained
1 cup canned diced pineapple in juice, drain juice and reserve
2 ½ pounds large boneless pork chops or cubed pork loin
1 cup reserved pineapple juice from the can
2 tablespoons sherry wine
2 tablespoons apple cider vinegar
2 tablespoons low-sodium soy sauce
1 teaspoon cornstarch
2 tablespoons brown sugar
¼ teaspoon ground white pepper
¼ teaspoon minced fresh ginger root
¼ teaspoon mustard powder
¼ teaspoon minced garlic
1 pinch salt and ground black pepper to taste
2 dashes hot pepper sauce, or to taste
1 (6 ounce) can tomato paste

Steps:

  • Place the onions in the bottom of a 5 quart slow cooker. Layer carrots over the onions, followed by layers of celery, mushrooms, and pineapple. Season pork chops with salt and pepper. Place them on top of the vegetables. If you like, you may brown them in a hot skillet first.
  • In a medium bowl, stir together the pineapple juice, sherry, cider vinegar, and soy sauce. Stir in the cornstarch until dissolved. Mix in the brown sugar, white pepper, ginger, mustard powder, garlic, salt, pepper, hot pepper sauce and tomato paste. Pour this over the pork chops and vegetables. The sauce will taste less sharp after a few hours in the slow cooker. Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.

2 red bell peppers, cut into 1-inch pieces
2 green bell peppers, cut into 1-inch pieces
2 yellow bell peppers, cut into 1-inch pieces
20 roma tomatoes
1 cup onion, chopped
10 ounces tomato paste, no salt added
2 lbs ground turkey or 2 lbs lean ground beef
3 tablespoons Splenda sugar substitute
2 tablespoons red pepper flakes
2 tablespoons ground black pepper
4 garlic cloves, minced
2 tablespoons dried basil
2 tablespoons dried oregano
1 cup water

Steps:

  • Brown turkey, and refrigerate until ready to use. Add a generous coating of Mrs. Dash Italian Seasoning Blend to turkey while it is browning. Substitute lean ground beef instead of ground turkey if desired.
  • Puree 1/2 your roma tomatoes in your food processor to make your own low sodium sauce. Chop the other half of the tomatoes into wedged slices.
  • Place all all ingredients except turkey in 5 quart slow cooker and stir. Cook on LOW 7-8 hours. Add browned turkey anytime after 6 hours. Stir gently while adding turkey.
  • About 30 minutes before serving, stir in additional seasoning to your taste preferences, then sprinkle about 1/2 cup fresh chopped spring onions across the top without stirring them inches.
  • Serve over pasta with oven-roasted zucchini chunks on the side. The sauce also goes great on the zucchini. Sprinkle with grated cheese if desired.
  • Nutritional analysis is based on 1 cup of sauce per serving. Store extra sauce in your freezer for those days you don't feel like cooking.

3 (6 ounce) cans tomato paste
1 (12 ounce) can beef broth
1 teaspoon cinnamon
2 tablespoons Worcestershire sauce
4 tablespoons sugar
2 tablespoons italian seasoning
1 teaspoon crushed red pepper flakes (optional)
1 onion
1/2 cup green bell pepper
4 garlic cloves

Steps:

  • Mix ground beef, bread crumbs, onion powder, garlic powder, and ketchup. Place in skillet and brown, breaking into smallest pieces possible with wooden spoon. Drain if necessary. Dice onion and green pepper. Mince garlic. Saute onion, pepper, and garlic in 2 Tbsp butter just until garlic begins to brown. Place all ingredients in crock pot. Stir well.
