Steps:
- Place all ingredients in the crock pot, minus the tortellini. Make sure cream cheese is cut up in 1 inch cubes before placing in crock pot.
- Cook on HIGH for 2-3 hours stirring occasionally.
- Add tortellini and continue cooking on HIGH for an additional hour. Serve warm.

This hearty, creamy vegetarian dinner is easy, cheesy and the best use of the slow cooker since your grandma's pot roast.

Steps:
- Spray 4 1/2- to 5-quart slow cooker with cooking spray. Mix mushrooms, onions, melted butter, soy sauce, salt and pepper in cooker. Pour vegetable broth over vegetable mixture.
- Cover; cook on Low heat setting 7 to 8 hours or until vegetables are very tender and browned.
- Stir in tortellini and cream cheese. Cover; cook on Low heat setting 15 minutes. Cook and stir 14 to 16 minutes longer or until tortellini are tender. Stir in spinach. Let stand 5 minutes. Top with Parmesan cheese and basil.

TORTELLINI CROCK POT MEAL
Since I'm out of the house by 7am, and not home until 5pm I learned to love crock pot meals. I saw this recipe on Facebook and we loved it, especially dipping the bread into the broth. Plus it's a recipe you can make your own by adding whatever you like, so I thought I would share with you !!

- 1. Put all ingredients into crock pot, chunking up the cream cheese, and cook on low for 5 hours.
- 2. I used the meat tortellini, added a side salad with crusty Italian bread and it was a hit.
- 3. The next time I make it I'm going to try cheese tortellini and maybe add some chicken.

- In a microwave-safe bowl add the onions, flour, basil, garlic, tomato paste and drizzle with olive oil. Microwave for 5 minutes, stirring every 90 seconds or so. (The mixture will be pasty and look weird but don’t worry it will all be okay in the end). Add the mixture to the slow cooker*.
- Cover and cook on LOW for 4-6 hours or on HIGH for 3-4 hours (or until chicken is very tender).
- Remove the lid use a fork to remove the chicken out of the slow cooker. And add in tortellini and spinach, Parmesan cheese and warmed cream (cream should be warmed because it may cause curdling if added in cold).

- Saute the sausage in 1 Tbsp of olive oil for 5 mins, you can drain the sausage after cooking, but be sure to leave at least 1 Tbsp of grease in the pot for cooking the onions and garlic so they won't stick.
- Add the chopped onion and minced garlic to the cooked Italian sausage and saute for 2 more mins. Stir in the Italian seasoning and mix the seasoning sausage mix together.
- Add about a 1/2 cup of the chicken broth to the instant pot to help scrape up the brown sausage bits from the bottom of the pot. We do NOT want to get a burn signal while pressure cooking the soup!
