5 cups dry bread cubes
¼ cup instant stuffing mix
1 cup sliced fresh mushrooms
½ cup chopped onion
½ cup chopped celery
¼ cup olive oil
1 teaspoon poultry seasoning
½ teaspoon salt
¼ teaspoon dried sage
¼ teaspoon ground black pepper
1 (12 ounce) jar turkey gravy
1 (10.75 ounce) can condensed cream of mushroom soup
½ (16 ounce) can cranberry sauce
4 skinless, boneless chicken breast halves - cubed

Steps:

  • Toss together 2 1/2 cups dry bread cubes and 2 tablespoons instant stuffing mix; set aside. Combine the remaining bread cubes, instant stuffing mix, mushrooms, onion, celery, olive oil, poultry seasoning, salt, sage, pepper, gravy, condensed soup, and cranberry sauce in a large bowl.
  • Place the reserved bread crumbs and stuffing mix into the bottom of the slow cooker. Add the chicken and top with the vegetable, bread, and gravy mixture. Cover, and cook on Low for 4 to 6 hours.

This is a tasty, easy substitute for a Thanksgiving-like meal without all the fuss. I prepared my own cream of chicken soup and stuffing from scratch rather than using the store-bought versions shown in the recipe. Turkey thighs work well here, too. The wonderful aroma of Thanksgiving will fill the house!

16 ounces chicken breasts or 16 ounces turkey thighs
1 (10 ounce) package frozen vegetables
1 (10 3/4 ounce) can cream of chicken soup (or homemade equivalent)
16 ounces seasoned stuffing mix, prepared
salt and pepper

Steps:

  • 1. Pour in the bag of frozen vegetables into the bottom of the crockpot.
  • 2. Place your chicken breasts or turkey thighs on top of the vegetables.
  • 3. Pour the cream of chicken soup over the chicken or turkey layer.
  • 4. Prepare the stuffing according to package directions (or make your own using dried bread cubes, sauteed onion and celery, poultry season, salt, pepper, and chicken broth).
  • 5. Spoon prepared stuffing on top of everything in the crockpot, being careful not to overfill the pot.
  • 6. Cook on low for 6-8 hours or high for 3-4 hours.
  • Make sure your crockpot is large enough to hold everything including a generous amount of stuffing. The stuffing will shrink somewhat during cooking.

3 -3 1/2 lbs boneless turkey breast
2 teaspoons poultry seasoning
3 (14 ounce) cans reduced-fat chicken broth
2 tablespoons butter

Steps:

  • Remove turkey from wrapper and set gravy packet in refrigerator for the time being.
  • Leave netting on turkey breast and keep the turkey in one piece; rub turkey down on both sides with poultry seasoning and set in crock pot.
  • Add 2 cans of chicken broth to the crock pot, set to low, and cook for 8-10 hours.
  • At about the 5-6 hour mark, turn the turkey over, and add one more can of broth to the crock pot.
  • At the end of the cooking time, remove turkey from the pot and place in a shallow baking pan, remove the netting, rub the top with butter, and set under a broiler in the oven to crisp up a bit.
  • Allow the turkey to sit 15 minutes before cutting.
  • If you wish, use a portion of the pan juices to pour over some of your dressing/stuffing if you made some to give it extra flavor.
  • Use the remaining pan juices mixed with the gravy packet in a saucepan on the stove, heated with some cornstarch or flour to make a gravy for the meat.

2 cups baby carrots
1 2/3 cups sliced celery
1 tablespoon olive oil
1 1/2 cups sliced onions
2 garlic cloves, minced
1 teaspoon olive oil
1 teaspoon paprika
1 teaspoon pepper
2 1/2 lbs turkey breast
1 cup chicken broth
2 teaspoons italian sodium-free seasoning
3/4 cup evaporated milk
2 tablespoons all-purpose flour

Steps:

  • Layer carrots and celery, in order given, in 3 1/2 to 4 quart crock pot.
  • Heat 1 tablespoon of olive oil in large frying pan on medium. Add onion. Cook for about 10 minutes, stirring often, until onion is softened and starting to brown. Add to crock pot.
  • Combine minced garlic, 1 tsp olive oil, paprika and pepper in small dish.
  • Rub spice mixture on turkey breast roast. Place over onions in crock pot.
  • Pour broth around roast. Sprinkle with Italian sodium-free seasoning. Cook, covered, on low for 7 to 8 hours or on high for 3 1/2 to 4 hours. Transfer meat to cutting board. Cover with foil. Let stand for 10 minutes.
  • Stir evaporated milk into flour in small bowl until smooth. Add to crock pot. Stir. Cook, coered on high for about 15 minutes until boiling and slightly thickened. Cut roast into thin slices. Arrange on serving platter. Spoon vegetables and sauce over top.

An old friend of mine made something similar to this for me years ago, and I have always wanted to duplicate the recipe. After some digging thru the Internet I found a recipe to use as a starting point and modified it from there. Keep in mind you can always use substitutes on the soup such as Cream of Potato or Cream of Chicken. Also you can use another 1/2 can of soup and 1/2 package of stuffing, if you desire.

4 chicken breast halves or 1 (40 ounce) turkey breast
1 (6 ounce) package stove top chicken flavor stuffing mix
1 (10 3/4 ounce) can cream of mushroom soup
3 tablespoons butter or 3 tablespoons margarine
1 cup low sodium chicken broth
1/2 cup water

Steps:

  • Turn on crock pot to high, add butter to crock pot, melt thoroughly.
  • Place chicken or turkey in crock pot.
  • Pour broth over chicken/turkey.
  • Mix together stuffing, soup and water. Place on top of chicken/turkey.
  • Cook on low for 3-4 hours for chicken, 5-6 hours for turkey.
  • Stir/fluff occasionally if you are available (not mandatory). Slightly shred the chicken or turkey once it is done.
  • Serve with vegetable of your choice.

This is a great recipe that I use when I need a lot of moist flavorful cooked chicken/turkey. It's great for salads, enchiladas etc. The breast is even moist enough to slice up and serve for dinner or put on sandwiches.

6 -6 1/2 lbs turkey breast
2 teaspoons vegetable oil
salt and pepper
1 medium onion
4 garlic cloves

Steps:

  • Rinse the turkey and pat it dry with paper towels.
  • Rub turkey all over with the oil.
  • Carefully pull back skin over breast and rub with seasonings.
  • Place breast, meaty side up into a 5 quart slow cooker.
  • Peel the onion, cut it into quarters and place around the edges of the pot.
  • Peel the garlic cloves and place around the sides of the cooker (maybe rub some minced under the skin).
  • Cook for 9 hours if frozen or 7 ½ hours if not frozen on low or to 170 degree internal temperature.
  • Let bird rest 10 minutes before carving.
  • Discard vegetables.
