SLOW COOKER PORK CHOP CACCIATORE

Classic recipe ingredients but with pork chops instead of chicken!

1 1/2 lbs. pork chops
2 Tbsp. cooking oil
15 oz. can Italian diced tomatoes
3 Tbsp. tomato paste
1 cup chicken broth
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried thyme
1 tsp. dried oregano
1 clove garlic, (minced)
1 small white onion, (diced)
2 cups sliced mushrooms

Steps:

  • Heat a large skillet over medium-high heat. Add the cooking oil. Add the pork chops to the pan and brown on both sides, no need to cook all the way through, the slow cooker will do that. Set aside while you make the sauce.
  • Add the diced tomatoes, tomato paste, chicken broth, garlic, salt, pepper, thyme and oregano to the slow cooker. Stir until the tomato paste dissolves into the diced tomato juice. Add the onion and mushrooms, stir again. Add the pork chops into the sauce.
  • Cover and cook on low for 6-7 hours without opening the lid during the cooking time.
  • Serve over pasta or rice and enjoy!

I made this last night. I wanted chicken cacciatore, but only had pork chops, so I used them instead and they came out wonderful.

2 Tbsp olive oil
1 onion, sliced
4 boneless pork chops
1 28 oz jar pasta sauce
1 28 oz can diced tomatoes w/ their juices
1 large green bell pepper, cut into strips
1 8 oz pkg mushrooms, sliced
2 tsp minced garlic
1 tsp dried italian seasoning
1/2 tsp dried basil
1/2 c chicken broth
4 slice mozzarella cheese

Steps:

  • 1. In lg skillet, over med-high heat, heat 1 tbsp oil, brown pork chops. Transfer chops to a 4-quart slow-cooker.
  • 2. In same skillet, heat oil and cook onions till tender. Stir in green bell pepper and mushrooms. Cook until veggies are soft. Stir in pasta sauce, diced tomatoes w/ juices, and broth. Season w/ italian seasonings and basil and garlic.
  • 3. Pour sauce over chops. Cover, cook on low for 7 hrs. To serve, place 1 chop on a plate, place a slice of mozzarella cheese over chop, cover w/ sauce.

1 onion, chopped
3 garlic cloves, crushed
2 celery ribs, chopped
1 green pepper, chopped
1 cup mushroom, chopped
1 carrot, chopped
1 cup olive, cut in half
3 lbs skinless chicken pieces
1 (28 ounce) can tomatoes, undrained
2 tablespoons tomato paste
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil
1/4 teaspoon Old Bay Seasoning
1/4 cup chicken broth
1/2 teaspoon liquid gravy browner
1/4 cup instant mashed potatoes
pasta

Steps:

  • Place all the ingredients in slow cooker except chicken and instant potatoes.
  • Stir together to combine.
  • Add chicken and push into in the juice.
  • Cook at High for 5 hours or at Low for longer.
  • When it is cooked remove some of the juice and mix with the instant potatoes.
  • Slowly blend this in the chicken cacciatore. Let cook for another 10 minutes.
  • Serve on your choice of pasta.
  • Sprinkle with freshly grated Parmesan cheese.
  • If you are making it with pork, brown it before adding to other ingredients.

4 medium bone in pork chops ( remove fat)
1 large onion coarsely chopped
2 cloves garlic sliced very thin
1/2 cup dry white wine
1 jalapeno pepper seeded and coarsely chopped
10-ounce white mushrooms, washed and sliced thin
2 cups canned crushed tomatoes
1 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon minced parsley

Steps:

  • 1. Lightly spray a 6-quart slow cooker with vegetable oil cooking spray. 2. Heat the olive oil in a large nonstick skillet over medium- high heat. Brown pork chops, onion, and garlic.Place the browned chops in the slow cooker. Add the wine to the skillet, bring to a simmer, and scrape off any brown particles. Pour over chicken in the slow cooker. 3 Add the jalapeno pepper,mushrooms, wine, tomatoes,salt and pepper to slow cooker. 4 Cover and cook on low for 8-9 hours or until pork chops are tender, sprinkle with the parsley before serving.
