Tender, juicy, fall off the bone roasted chicken has never been easier!

1 whole chicken
1/4 cup melted butter
2 teaspoons seasoned salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon garlic powder

Steps:

  • Rinse your chicken and pat it dry with paper towels. Tie the legs together with kitchen twine.
  • Sprinkle a small amount of the seasoning inside the chicken.
  • Brush with the melted butter and then thoroughly coat the outside of the chicken with the remaining seasonings.
  • Place 5-6 small foil balls into the bottom of your slow cooker and then place the chicken on top of the balls so it's suspended above the bottom of the crockpot.
  • Cover and cook on high 4-5 hours or on low for 6-8 hours or until the chicken is cooked through to a minimum temperature of 165 degrees when tested.

1 medium yellow onion (chopped into 1-inch pieces)
4 medium carrots (chopped into 1-inch pieces)
2 medium Yukon gold or red potatoes (chopped into 1-inch pieces)
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon pepper
4 pound whole chicken
1 tablespoon olive oil
½ lemon (cut in half)
4-6 sprigs fresh rosemary or fresh thyme
2 tablespoons unsalted butter (optional, for gravy)
2 tablespoons all-purpose flour (optional, for gravy)

Steps:

  • Place the onion, carrots and potatoes in the bottom of the slow cooker. Arrange them in a single layer as much as possible.
  • In a small bowl, stir together the spice rub ingredients: paprika, garlic powder, onion powder, dried oregano, dried thyme, salt and pepper.
  • Place the chicken in a baking dish to catch any excess juices. If there is a bag of innards in the cavity of the chicken, remove it and discard. Drain out any liquid that may be in the cavity.
  • Pat the chicken dry with paper towels. Loosen the skin around the breasts. Rub the olive oil and then the spice rub over the chicken, rubbing some of the seasoning under the skin on the breasts if possible.
  • Place the lemon pieces and fresh rosemary or thyme sprigs in the cavity of the chicken. Optional: tie the legs together with kitchen twine.
  • Place the chicken on top of the vegetables in the slow cooker, breast side up. Cover and cook on high for 4-5 hours, until the chicken registers at least 165° F in the thickest part of the leg, not touching the bone. Avoid opening the slow cooker lid during the cook time, as this can cause too much heat to escape the slow cooker.
  • You can serve the chicken and vegetables as is, or use the following steps to brown the chicken and vegetables and make a gravy.

5 lb whole chicken ((insides removed))
1 tablespoon smoked paprika
2 tablespoons steak seasoning
salt (to taste)
pepper (to taste)
aluminum foil, or thickly-sliced onions or vegetables

Steps:

  • Pat chicken dry with paper towels.
  • In a small bowl, whisk together the paprika, steak seasoning, salt, pepper until combined. Rub the seasoning mix all over the outside and inside of the chicken.
  • Roll up a few small balls of aluminum foil place them on the bottom of your slow cooker bowl to serve as a "rack" for the chicken, so that it doesn't cook in the juices that will accumulate in the bottom of the slow cooker.
  • Place the chicken on top of the aluminum foil (or veggies). Cover and cook on low for 6-7 hours, or on high for 4-5 hours until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
  • Carefully remove the chicken from the slow cooker, it could be so tender it will fall apart.

1 whole chicken (about 3lbs.)
1 tablespoon paprika
1 teaspoon EACH: garlic powder, onion powder, salt, and pepper
½ teaspoon EACH: oregano and chili powder
1 tablespoon tapioca starch or cornstarch

Steps:

  • Make a ring out of aluminum foil and place this in the bottom of your crockpot and place the chicken on top.
  • Mix the paprika, garlic powder, onion powder, salt, pepper, oregano, and chili powder together in a small bowl then sprinkle them over the chicken. Put the lid on the crockpot and set it on high for 4 hours or low for 8 hours. (see notes)
  • Remove the chicken from the crockpot. Pour the liquid in the pot into a small frying pan and bring it to a boil. Whisk the tapioca starch with 1 tablespoon of cold water and add it to the pan. Whisk until the gravy thickens.

I'm going to be using this a *lot this fall and winter. Two and a half hours in the old crock pot followed by a 10-minute broil gives me perfectly roast chicken every time

1 chicken (about 3 lbs give or take)
1/2 cup red wine or 1/2 cup white wine
3 garlic cloves, peeled
1/2 small white onion
1 celery, cut in half
1 carrot, cut in half
1 dash herbes de provence, thyme or 1 dash herbs, combination of your choice

Steps:

  • Crumple three pieces of aluminum foil and place in the middle of your slow cooker.
  • Add wine, garlic, onion, celery and carrot.
  • Place chicken on top of aluminum foil. (You may have to push the chicken down a bit so it'll all fit in there!).
  • Sprinkle chicken with herbs, salt and pepper.
  • Set slow cooker to high and cook for 1/2 hour per pound.
  • When ready, stick a meat thermometer into leg to ensure it is done. Transfer chicken to a roasting pan and set oven to 500º Fahrenheit.
  • Roast for 8-10 minutes, or until skin is golden brown.
  • Serve with roast root vegetables, mashed potatoes, or anything else you'd like!
  • The best part of this recipe? After your done cooking everything, you'll have a considerable amount of jus left over from the chicken. Whisk it with some cornstarch for a truly delicious gravy, or save it in your fridge or freezer for at-the-ready soup stock when you need it in a pinch. (It's so much better than bouillon.).

3 1/2 lbs fryer chickens or 3 1/2 lbs whole roasting chickens
1/4 cup unsalted butter
1 medium onion, chopped
3 stalks celery, chopped
1 (4 ounce) can sliced mushrooms, drained
4 cups seasoned stuffing mix
2 tablespoons dried parsley flakes
1/2 teaspoon sage
1 dash fresh ground pepper
4 -8 fluid ounces chicken broth or 4 -8 fluid ounces water
1 teaspoon unsalted butter
paprika
additional dried parsley flakes

Steps:

  • Rinse the chicken well and pat dry; remove any excess fat.
  • In a skillet, melt ¼ cup butter; sauté the onion, celery, and mushrooms until tender.
  • Toss in the stuffing mix, 2 tablespoons parsley flakes, sage, pepper and broth.
  • Stir until the stuffing is thoroughly moistened.
  • Loosely stuff the chicken with the dressing.
  • If you like, truss the chicken to keep its shape.
  • Put the remaining dressing in a lightly oiled crock pot.
  • Place the chicken on top of the dressing.
  • Rub the chicken breast with 1 teaspoon butter; sprinkle with paprika and parsley flakes.
  • Cover and cook on low setting for 8 to 10 hours.

garlic
aluminum foil

Steps:

  • Spray chicken with olive oil spray.
  • Sprinkle with seasoned salt.
  • Insert onion and garlic inside cavity of chicken.
  • Spray inside of crock pot with Pam.
  • Roll wads of aluminum foil into balls and place in bottom of crock pot.
  • Put chicken back side down on top of aluminum balls.
  • DO NOT ADD WATER OR ANY LIQUID.
  • Cover and cook on low for about 10 hours.
  • Skin will actually turn brown as in a deli roasted chicken.
