An old fashioned Cuban dish, with tender succulent meat and potatoes bursting with flavors. It is definitely a pleaser for any meat and potatoes fan.

Steps:
- In a blender, combine green pepper, onion, garlic, 1/4 teaspoon cumin and salt. Pulse, while pouring 1/8 cup olive oil through top of blender. Blend until smooth; set aside.
- Heat 1 tablespoon olive oil in pressure cooker on medium heat. Saute green pepper mixture for 1 minute, then stir in achiote powder and 1 teaspoon cumin. Cook for 1 minute, then stir in tomato sauce. Return to a simmer, then add beef; let simmer for 5 minutes. Stir in potatoes, then pour in wine and water. Drop in the bouillon cubes. Bring to a boil, and cook for 1 minute; add water, if necessary, to cover.
- Cover with lid of pressure cooker. Following manufacturer's directions, cook under 15 pound pressure for about 30 to 45 minutes.

CROQUETAS DE PATATA Y QUESO (POTATO AND CHEESE CROQUETTES)
From "Tapas" by Adrian Lissen. It's been a while since I've made these, but I recall that everyone loved these when we had a tapas party. Easiest if you make them the day before, then fry them right before serving.

- Cook potatoes in boiling salted water until tender. Drain.
- Put potatoes back in pan and heat over low flame until completely dry, stirring to prevent scorching.
- Put potatoes in a food processor with the egg yolks, butter, salt and pepper. Pulse a few times.
- Add the nutmeg, sherry, parmesan, mustard and parsley. Pulse until the consistency of very thick mashed potatoes. If the mixture is too wet or runny, put mixture in a large bowl and incorporate a bit of flour, working in with your hands.
- Adjust seasoning, then form small cylinders (about 3 x 1 inches).
- Roll croquettes in seasoned flour to cover, shaking off excess.
- Dip in beaten egg mixture, then roll them in breadcrumbs. Set aside and repeat until all potato mixture is used up.
- Deep fry at 375 degrees until golden brown, drain and keep warm until served.
- NOTE: these can be prepared in advance thru step #7 and refrigerated in an airtight container. Bring to room temp before frying.

- Cocina revolviendo los 3 primeros ingredientes en una sartén, rociada con aceite en aerosol, a fuego medio-alto durante 10 min. o hasta que la cebolla esté tierna pero crujiente.
- Mezcla la carne, el queso y el puré en un tazón grande. Agrega la mezcla de cebolla; mezcla todo bien. Deja enfriar completamente la mezcla. Forma 15 croquetas alargadas (3 pulgs.). Sumérgelas una por una en el huevo y pásalas por las migas de galletas, volteándolas para cubrirlas por ambos lados.
- Calienta el aceite en una cacerola grande a 375°F. Agrega las croquetas en tandas; cocínalas 3 min. por lado o hasta que estén doradas de ambos lados. Escúrrelas en toallas de papel. Sírvelas tibias.

HAM CROQUETTES (CROQUETAS DE PAPAS Y JAMON)

- Melt the butter in a 3-quart saucepan; add the onions and sauté on medium-low heat until translucent. Whisk in sherry and chives. Add ground ham. Let simmer for 5 minutes on low heat. Remove from heat, add mashed potatoes and blend completely. Taste and season with pepper and a little salt if necessary. The ham probably has enough salt already. Spoon the mixture into a baking dish and refrigerate until well chilled, at least 1 hour.
- TIP: The mixture needs to be firm enough to form into rolls. If the mixture is too soft or sticky, mix in some bread crumbs.
- Beat the eggs with water in a mixing bowl until frothy. Combine the bread crumbs and flour in a second bowl with salt and pepper. Shape the ham/potato mixture into logs about 3/4 inch thick and 3 inches long. Dip the logs in the egg wash and roll them in the seasoned bread crumbs. Dip a second time and roll again in bread crumbs until they are completely covered.
- IMPORTANT: Place the logs in a lightly greased baking dish, cover with plastic wrap, and refrigerate for 2 to 3 hours. (You may also freeze for later use, or use the freezer to quickly chill them.).
- In a large frying pan, add enough vegetable oil to cover half the croqueta at a time. Heat the oil to the frying stage -- about 360 to 375 degrees F. Sauté a few croquetas at a time in the hot oil for 3 to 4 minutes, turning occasionally, until golden brown. Remove from oil and drain on paper towels.

- En una cacerola colocamos las papas previamente lavadas, agregamos agua hasta taparlas completamente y ponemos una cucharada de sal. Hecho esto, dejamos hervir las patatas a fuego medio hasta que notemos que se encuentran cocidas y suaves. En este punto, apagamos y dejamos enfriar.
- En una sartén colocamos un poco de aceite y agregamos el ajo y la cebolla finamente picados, salpimentamos y dejamos saltear unos 5 minutos, o hasta que la cebolla tome un color transparente.
- Agregamos la carne molida a la sartén anterior, un poco de sal, pimienta y dejamos cocinar a fuego medio el relleno de las croquetas de papa moviendo constantemente para evitar que se queme la carne o la cebolla. Una vez que está completamente cocinada la carne, apagamos y reservamos.
