Crunchy Cheesecake Tortilla image

Imagine a rich, creamy cheesecake enveloped in a crunchy fried tortilla. Now imagine how impressed your family will be when they find out that you made it.

Number Of Ingredients 7

2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
3/4 cup sugar, divided
1/2 tsp. vanilla
2 eggs
12 flour tortillas (6-1/2 inch)
2 tsp. ground cinnamon
3 cups oil

Steps:

  • Heat oven to 325ºF.
  • Line 8-inch square pan with foil, with ends of foil extending over sides. Spray with cooking spray. Beat Neufchatel, 1/2 cup sugar and vanilla with mixer until well blended. Add eggs; mix well. Pour into prepared pan.
  • Bake 30 to 35 min. or until center is almost set. Cool completely. Refrigerate 1 hour.
  • Use foil handles to remove cheesecake from pan before cutting into 12 rectangles. Place 1 rectangle on center of each tortilla. Moisten edge of tortilla with water; fold 2 sides of tortilla over cheesecake, then firmly roll up starting at bottom edge to completely enclose cheesecake. Press edge of roll-up to secure. Place in single layer in shallow pan. Freeze 3 hours.
  • Mix remaining sugar and cinnamon on plate; set aside. Heat oil in medium saucepan to 350ºF. Add tortilla roll-ups, in batches; cook 3 to 4 min. or until golden brown. Drain on paper towels. Roll in cinnamon sugar mixture. Serve warm.

Steps:

  • Spread tortilla with butter-flavored spread; sprinkle with cinnamon sugar. Roll into a tube shape, then place on a microwave safe plate. Microwave on High for 30 seconds to warm.

1-1/2 cups vanilla wafer crumbs (about 45 wafers)
1/3 cup butter, melted
4 packages (8 ounces each) cream cheese, softened
2 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
5 eggs, room temperature, lightly beaten
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
2 ounces unsweetened chocolate, melted and cooled
1 tablespoon creme de cacao
3/4 cup semisweet chocolate chunks
SOUR CREAM LAYER:
2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla extract
1 teaspoon orange liqueur (Grand Marnier)
TOPPINGS:
1/2 cup sweetened shredded coconut, toasted
1/2 cup macadamia nuts, chopped
1/4 cup semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. , In a small bowl, combine wafer crumbs and butter. Press onto the bottom and 1 in. up the sides of prepared pan; set aside., In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla and salt. Add eggs; beat on low speed just until combined., Remove half of the mixture to a small bowl. Fold in pineapple and coconut; pour into crust. Stir cooled chocolate and creme de cacao into plain cream cheese mixture; fold in chocolate chunks. Carefully spoon over pineapple layer, spreading evenly., Place springform pan in a large baking pan; add 1 in. of boiling water to larger pan. Bake at 325° until center is almost set, 50-60 minutes. Let stand for 5 minutes. For sour cream layer, combine all ingredients in a small bowl; spread over cheesecake. Bake 5 minutes longer., Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack for 10 minutes; loosen edges from pan with a knife. Cool 1 hour longer. Refrigerate overnight., Remove rim from pan. Sprinkle toasted coconut and macadamia nuts over cheesecake. In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over top.

1 (15 ounce) can pumpkin puree
2 (8 ounce) packages cream cheese, softened
¾ cup white sugar
¼ cup brown sugar
1 (3.4 ounce) package instant cheesecake-flavored pudding mix
2 teaspoons ground cinnamon, divided
¼ teaspoon ground nutmeg
12 (6 inch) flour tortillas
¼ cup unsalted butter, melted
1 (8 ounce) container whipped topping, thawed
⅓ cup caramel sauce
¼ cup cinnamon graham cracker crumbs

Steps:

  • Line a sieve with paper towels and place over a bowl. Place pumpkin puree on the paper towels and cover the bowl with plastic wrap. Place in the refrigerator and allow to drain for 2 hours, or overnight.
  • Beat cream cheese with an electric mixer until very smooth. Add 1/2 cup white sugar, brown sugar, pudding mix, 1 teaspoon cinnamon, and nutmeg and mix until well blended. Mix in drained pumpkin. Divide mixture among tortillas and roll them up.
  • Combine remaining 1/4 cup sugar and 1 teaspoon cinnamon in a small bowl and stir until well combined.
  • Brush each stuffed tortilla with melted butter and sprinkle with cinnamon-sugar mixture.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place as many enchiladas in the preheated air fryer as will fit in a single layer with at least 1/4 of an inch in between. Air-fry until golden brown and lightly crisp, 3 to 5 minutes. Remove to a serving tray and let cool. Repeat to air-fry remaining enchiladas.
  • Just before serving, top evenly with whipped topping, caramel sauce, and graham cracker crumbs.

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla
2/3 cup shredded cheese (such as Cheddar, Monterey Jack or Mexican cheese blend)

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.
  • Place the tortilla in the skillet and sprinkle the cheese evenly over the top. Once the cheese begins to melt, 30 seconds to 1 minute, use a spatula to fold the tortilla in half. Using the spatula, press down firmly on the top of the tortilla until some of the cheese runs out into the pan. Let the quesadilla cook until the cheese that's leaked out solidifies and turns brown, 2 to 3 minutes.
  • Flip the quesadilla over and let cook on the other side for another 1 to 2 minutes, until the cheese is crisp and golden. Slide quesadilla onto a plate and serve immediately.
