Steps:

  • Combine the dressing ingredients in a jar and shake well.
  • Combine the salad ingredients, except the Asian Fried Shallots.

2 boneless, skinless chicken breasts
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp pepper
6 cups shredded napa cabbage (roughly 1 medium head of napa cabbage)
1/2 cup grated carrots (roughly 1 large carrot)
1/2 cup shelled edamame
3 green onion (whites and light green), thinly sliced
4 oz ramen noodles, broken into pieces
1/4 cup chopped almonds
2 tbsp sesame seeds
optional: handful of fresh cilantro, chopped
3 tbsp olive oil
1 1/2 tbsp honey
2 tbsp rice wine vinegar
1 1/2 tsp freshly grated ginger
1 1/2 tbsp soy sauce
1 tsp sesame oil
pinch of salt and pepper

Steps:

  • Marinate chicken in combination of soy sauce, hoisin sauce, sesame oil and pepper in a large bowl for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Bake chicken (with any remaining marinade juices) in a shallow dish for 15-20 minutes or until chicken runs clear
  • Remove from oven and let sit for 5 minutes before cutting into strips.
  • Heat a skillet over medium-high heat and add almonds. Cook for about 2 minutes and then add ramen noodles to toast for another 2 minutes or starting to brown. Add sesame seeds and cook for 1 more minute or until everything is lightly browned.
  • Combine cabbage, carrot, edamame and green onions in a large salad bowl.
  • Add almonds, noodles and sesame seeds to salad.
  • Combine all dressing ingredients.
  • Top salad with chicken, cilantro (if using) and desired amount of dressing. Mix well.
  • Salad keeps in the fridge for 2-3 days. Will keep longer if you reserve dressing for before serving.
  • Enjoy room temperature or cold.

Steps:

  • Add all of the dressing ingredients to a mason jar with a tight fitting lid or a small bowl. Shake jar or whisk dressing vigorously. Remove 3 tablespoons dressing to a bowl with the chicken. Stir until evenly coated. Let chicken marinate while you prep the vegetables. Refrigerate the remaining dressing.
  • Add all salad ingredients to a large bowl except for wonton strips IF you are expecting leftovers. Whisk/shake salad dressing and drizzle desired amount of dressing over salad and toss until well combined. Add wontons strips to individual servings if expecting leftovers.

A light and delicious salad for hot summer days or nights. If desired, substitute a 1/4 cup of lightly toasted almond slivers for the fried rice sticks.

1/3 cup light soy sauce
1 tablespoon olive oil
1 tablespoon toasted sesame oil
2 teaspoons coarse ground garlic powder
2 boneless skinless chicken breast halves
2 ounces dry rice sticks (available in the Asian section at most grocery stores or Asian markets)
oil (for deep frying)
1 1/2 cups iceberg lettuce, shredded
1 1/2 cups napa cabbage, shredded
1/4 cup carrot, shredded
1/2 cup celery, sliced thick
6 scallions, sliced, white and light green parts only
6 ounces sesame ginger salad dressing, store bought
1/4 teaspoon sriracha sauce (to taste)

Steps:

  • Prepare the marinade in a bowl. Rinse the chicken breast halves, pat dry with paper towels and pierce them with a needle type tenderizing tool such as the Deni tenderizing tool. Add the chicken breast halves to the bowl of marinade, toss to coat, cover with plastic wrap and place in the refrigerator till the grill is ready.
  • Heat the oil in a deep fryer or a deep cast iron skillet to 400 degrees F. If using a skillet, add enough oil to at least 1 inch deep with oil. Gently separate the rice sticks as much as you can and drop into the hot oil. It should only take a second or two for the rice sticks to completely puff up. Remove from oil and immediately drain on paper towels and set aside.
  • In a small bowl, mix the sesame-ginger salad dressing and desired amount of Sriracha sauce, cover with plastic wrap and place in the refrigerator till needed.
  • Prepare an outdoor grill for grilling. Grill the chicken till the juices run clear and the meat is no longer pink (internal temperature of 165 degrees F). Remove the cooked meat from the grill and allow the meat to rest for 5 minutes. Shred the meat with a couple of forks, cover with plastic wrap and place in the refrigerator till the rest of the salad is prepared.
  • Rinse and shred the lettuce and cabbage then divide it between two serving bowls. Top each salad serving with equal amounts of shredded carrots, sliced celery, sliced scallions and shredded cooked chicken. Pour the salad dressing over each serving and top each serving with and equal amount of fried rice sticks.
