The milky way: Classic tres leches (three milk) cake is made with condensed milk, evaporated milk and whole milk. These cupcakes up the ante with nutty coconut milk.

- Preheat the oven to 325 degrees F. Line two standard muffin pans with 20 cupcake liners.
- For the cupcakes: Put 1/2 cup of the granulated sugar, the egg whites and whole egg in the bowl of a stand mixer fitted with a paddle attachment and beat on medium-high speed for about 2 minutes. Pour into another bowl and set aside. Clean the mixing bowl. Put the remaining 1 cup sugar and the butter in the clean mixing bowl and beat on medium-high for about 30 seconds. Add the flour, milk, sour cream, baking powder and vanilla. Beat on medium until combined and fairly smooth. Return the egg mixture to the mixing bowl and stir just until incorporated. Using a 1/4-cup ice cream scoop, fill each cupcake liner with batter.
- Bake the cupcakes until a cake tester inserted in the center comes out clean and the tops are light golden brown, 17 to 20 minutes. Transfer the pans to cooling racks and cool for about 10 minutes, and then transfer the cupcakes to the racks and allow to cool completely before filling and frosting.
- For the quatro leches mixture: Whisk the coconut milk, sweetened condensed milk, evaporated milk and heavy cream in a mixing bowl to combine. Transfer to a squeeze bottle and refrigerate.
- When the cupcakes are cool, make the frosting: Combine the cream, powdered sugar and vanilla in a chilled mixing bowl. Whip until medium-stiff peaks form. Be careful not to over whip. Chill briefly if not using right away.
- To assemble: Use a chopstick or fat skewer to poke 4 or 5 holes halfway through each cupcake. Squeeze some of the quatro leches mixture into each hole; you can let it sink in a bit and then squeeze in some more to fill. Frost generously with the whipped cream frosting.

- After the cake has been prepared according to package directions, poke holes all in the top of it.
- In a medium bowl, stir together the condensed milk, evaporated milk, and heavy cream. Pour over the warm cake.
- Allow cake to cool slightly and milk mixture to be absorbed.
- Spread caramel over cooled cake. Cover with a lid or plastic wrap and refrigerate overnight.
- Ice the cake with the whipped cream topping and serve immediately or cover and return to the refrigerator until ready to serve.

- Preheat oven to 350 degrees F (175 degrees C). Butter and flour bottom of a 9-inch springform pan.
- Beat the egg yolks with 3/4 cup sugar until light in color and doubled in volume. Stir in milk, vanilla, flour and baking powder.
- In a small bowl, beat egg whites until soft peaks form. Gradually add remaining 1/4 cup sugar. Beat until firm but not dry. Fold 1/3 of the egg whites into the yolk mixture to lighten it; fold in remaining egg whites. Pour batter into prepared pan.
- Bake in preheated oven for 45 to 50 minutes or until cake tester inserted into the middle comes out clean. Allow to cool 10 minutes.
- Loosen edge of cake with knife before removing side of pan. Cool cake completely on a wire rack.
- Place cooled cake on a deep serving plate. Use a two-pronged meat fork or a cake tester to pierce the surface of cake.
- Mix together condensed milk, evaporated milk and 1/4 cup of the whipping cream. Set aside 1 cup of the measured milk mixture and refrigerate for another use. Pour remaining milk mixture over cake slowly until absorbed. Whip the remaining whipping cream until it thickens and reaches spreading consistency. Frost cake with whipped cream and garnish with cherries. Store cake in the refrigerator.

- Set oven rack in the middle of the oven and preheat to 350°Butter and flour two 9x13" baking pans.
- In a large bowl, whisk the egg yolks until creamy, thickened and intensely yellow. Incorporate the oil, 1/4 cup of the milk, and vanilla and continue beating until well mixed. In another bowl, combine the flour, baking powder, baking soda, and salt.
- In another large bowl, with a hand mixer or a whisk, beat the egg whites until they hold soft peaks, add the sugar and continue beating until they hold stiff peaks. Taking turns, with a rubber spatula, gently fold the flour mixture and the beaten egg whites into the yolk mixture until well incorporated. Scrape the mixture onto the two prepared pans.
- Bake for 22 to 24 minutes until a toothpick comes out moist but not wet. Remove the cakes from the oven and let cool.
- Meanwhile, make the milk mixture in a bowl by combining the sweetened condensed milk, evaporated milk, and the remaining 1 cup whole milk. Mix well with a whisk.
- Once cakes cool to room temperature, poke holes in both cakes with a toothpick or fork. Pour half the milk mixture onto one of the cakes. Let the milks seep in for at least 10 minutes.
- Drizzle the cajeta or dulce de leche all over the wet cake and place on all the sliced plums and apricots. Top with the second cake. Pour the rest of the milk mixture on top and let it soak up the sauce. Cover with plastic wrap and place in the fridge until ready to eat.
- When ready to eat, whip the heavy cream with the confectioners' sugar until stiff peaks form. Spread the whipped cream over the cake and serve.
CUATRO LECHES CAKE

- Cake:Preheat oven to 325 degrees. Lightly butter a 13-by-9-inch baking dish. In a medium bowl, whisk together flour, milk powder, 1/2 cup sugar, baking powder, and salt. - Topping:Whisk cream and sugar to medium peaks. Spread whipped cream over cake and serve with fruit, if desired.
TRES LECHES HAZELNUT CAKE (CUATRO LECHES )
Tes Leches translates to 3 milks which make this so very moist! I add hazelnut creamer to the 3 milks so I thought I should name it Cuatro Leches. You will not be disappointed. This looks hard but is a very easy cake and well worth it.

- Preheat oven to 350°F Grease and flour a 10 inch spring for pan, set aside.
- Tres Leches sauce --.
- In a large pot bring all 4 milks (first four ingredients)to a boil stirring frequently. Remove from heat stir in extract and chill in a large bowl covered.
- Cake --.
- Beat the box cake, butter, eggs and water on low speed to mix in then at medium for 2 minutes.
- Take note of picture batter will be thick. Spread batter in prepared pan.
- Bake for 50 minutes.
- Shut oven off and open door to cool cake 30 minutes.
- Remove side of pan place on a wire rack remove to cool completely.
- Line a large container (I used a plastic cake carrier inverted) with plastic wrap going over the sides.
- Cut cake in half with a serrated knife to make 2 layers.
- Place top half cut side up in container. Top with strawberries top with bottom of cake cut side down.
- Using a wooden skewer poke plenty of holes in cake not going through the plastic wrap on the bottom.
- Pour slowly 4 cups of sauce over cake. Wrap over hanging plastic wrap.
- Refrigerate cake and remaining sauce over night.
- One hour before serving pour 1-1/2 cups more sauce then return to chill.
- Topping --.
- Whip cream sugar and extract till stiff peaks form.
- Assembly --.
- Remove cake from refrigerator uncover and carefully invert onto a serving platter with a raised edge so cream won `t run off the platter.
- Remove wrap and spread whipped cream.
- Serve with the chilled reserved cream.

- In a medium mixing bowl, whisk together the cake flour, baking powder and salt. Set aside.
- Using either a stand mixer, electric mixer, or a wooden spoon, cream the butter and 3/4 cup of the sugar. Beat in the egg yolks until mixture is uniform in texture and pale yellow.

- Meanwhile, while the cake is baking, prepare the leche glaze. Combine all the ingredients in a saucepan and heat over medium until bubbling, stirring constantly.
- When the cake is cooled completely, slice it horizontally into 2 even layers. Place each layer on a large plate and spoon the leche sauce evenly over the cake layers, 1/4 cup at a time, waiting about 5 minutes between pours to allow the cake to absorb the glaze.
- When layers are chilled, prepare the topping. In a small mixing bowl, beat the cream, sugar, and vanilla extract until stiff peaks form.
