An easy-to-make cauliflower rice recipe made Cuban-style made with riced cauliflower, spices, and black beans.

2 tablespoons olive oil
1/4 cup onion (finely chopped)
2 cloves garlic (minced)
1/4 cup green pepper (finely chopped)
12 ounces riced cauliflower
1 can low-sodium black beans
1/3 cup liquid from canned black beans
1/2 teaspoon cumin
1/2 teaspoon oregano
1 bay leaf
salt + pepper to taste

Steps:

  • In a pan, heat olive oil over medium-high heat. Sauté onion, garlic, and green peppers until translucent and fragrant, about 3 minutes.
  • Add riced cauliflower, black beans, 1/3 cup of liquid from the canned black beans, cumin, oregano, bay leaf, salt and pepper.
  • Stir to combine and cook for 5 minutes or so until the liquid has evaporated. Transfer to a plate and serve immediately with chicken breast, salmon, or by itself. Enjoy!

I originally got this from a Cuban friend, but made some changes to it. I have had it many times, the leftovers are very good wrapped in a tortilla, too. Very filling dish.

1 tablespoon olive oil
1 cup chopped onion
1 green bell pepper, chopped
2 cloves garlic, minced
1 teaspoon salt
4 tablespoons tomato paste
1 (15.25 ounce) can kidney beans, drained with liquid reserved
1 cup uncooked white rice

Steps:

  • Heat oil in a large saucepan over medium heat. Saute onion, bell pepper and garlic. When onion is translucent add salt and tomato paste. Reduce heat to low and cook 2 minutes. Stir in the beans and rice.
  • Pour the liquid from the beans into a large measuring cup and add enough water to reach a volume of 2 1/2 cups; pour into beans. Cover and cook on low for 45 to 50 minutes, or until liquid is absorbed and rice is cooked.

California-Style Cauliflower Rice and Beans image

1 head cauliflower, cut into florets
2 tablespoons olive oil
1 onion, finely diced
2 cloves garlic, minced
1 red, orange or yellow bell pepper, seeded and diced
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon kosher salt
One 15-ounce can black beans, drained and rinsed
1 cup salsa
1/4 cup chopped cilantro

Steps:

  • Working in batches, add the cauliflower to a food processor and pulse until the mixture resembles rice. Set aside.
  • Heat a large skillet over medium heat. Add the oil and cook the onion and garlic, stirring often, for 2 minutes. Add the bell pepper and cook, stirring often, for 1 minute. Add the cauliflower rice, cumin, paprika, salt and black beans and cook, stirring occasionally, until the cauliflower is tender, about 3 minutes. Stir in the salsa and cook for 1 more minute. Stir in the cilantro and serve.
