CUBAN PORK CHOPS
Cuban Pork Chops are a healthy and super easy weeknight dinner idea! Thin pork chops and sliced fresh onions are marinated in a garlic paste and sour citrus mixture, then pan fried until tender.

Steps:
- Season the chops with salt and pepper. Set aside.
- In a mortar, crush the 4 cloves of garlic, 1/4 teaspoon oregano, and 1/4 teaspoon cumin together into a paste. Rub the chops with the garlic paste, place in a medium sized shallow bowl or baking dish, and pour half of the sour orange mixture on top. Cover with sliced onions and pour rest of sour orange mixture on top. Cover and refrigerate 2 to 3 hours.
- Remove chops from the marinade, pat dry, and reserve marinade.
- In a large pan, heat the oil over medium-high heat until hot and brown the chops quickly on both sides.
- Add the sherry and reserved marinade, including the onions, to the pan with the pork and bring to a boil. Cover, reduce heat to low, and cook until pork is tender, about 20 minutes.

- Mix mustard, lime juice and adobo seasoning. Lightly pound pork chops with a meat mallet to 1/2-in. thickness; spread both sides with mustard mixture. Refrigerate, covered, 3-4 hours., Grill pork, covered, over medium heat 3 minutes. Turn pork and top with ham; grill 2 minutes longer. Top with cheese and cilantro; grill, covered, 30-60 seconds longer or until cheese is melted and a thermometer inserted in chops reads 145°. Let stand 5 minutes before serving. If desired, serve with mayonnaise, mustard and pickles.

Steps:
- Brown lightly salted pork chops in oil at medium heat for 2 or 3 minutes.
- Turn chops, adding garlic, lime juice and water to the skillet.
- Cook uncovered turning once or twice till done and syrupy juices remain (6-8 min).
- Spoon sauce over chops, sprinkle with cumin and fresh pepper.
- Serve with rice, and vegetable of your choice.

GRILLED CUBAN-STYLE PORK CHOPS
Steps:
- Gather the ingredients.
- Place pork chops in a resealable plastic bag.
- Combine orange juice, garlic, lime juice, olive oil, cilantro, salt, and pepper and pour over meat. Seal bag and allow meat to marinate for 4 to 8 hours in refrigerator.
- Preheat grill to medium heat. Remove pork chops from bag and discard marinade.
- Place chops on grill and cook for 10 to 12 minutes per side. When internal temperature of pork reaches 160 F, remove from heat and serve.

CUBAN PORK CHOPS WITH PLANTAIN HASH

- Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the plantains, bell pepper, red onion, 1 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the vegetables are tender, about 15 minutes. Stir in half of the garlic and cook until golden, about 1 minute; season with salt and pepper.
- Meanwhile, combine the remaining garlic, lime zest, oregano and cumin in a small bowl. Rub on both sides of the pork chops and season with salt and pepper.
- Heat the remaining 1 tablespoon olive oil in a separate large nonstick skillet over medium-high heat. Add the pork and cook until browned and just cooked through, 3 to 4 minutes per side.
- Divide the pork and plantain hash among plates. Serve with lime wedges and hot sauce.

CUBAN PORK CHOPS WITH MOJO
Steps:
- In a gallon-sized resealable plastic bag, combine 1 cup orange juice, 1/2 cup lime juice, and vinegar. Add pork and let it sit and marinate for about 1 hour in refrigerator.
- In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
- Heat oil in a large saute pan over high heat. Place the pork chops in the pan and sear on 1 side until brown. Flip over and turn the heat down to medium-low. Add onion and saute for 2 minutes. Then add the garlic and continue to cook until garlic begins to brown. Pour in the remaining 1/4 cup orange juice, 1/4 cup lime juice, and white wine. Simmer until the liquid is slightly reduced and begins to thicken. The chops should be cooked through.
- Remove the chops from pan and put on a warm plate. Continue to reduce juices in pan by half. Pour over the chops and serve immediately.
- Garnish with watercress, tomatoes and avocado.
CARIBBEAN PORK CHOPS WITH BANANA AND COCONUT MILK

- Cut banana in half crosswise, then legthwise.
- In a skillet, saute the banana in oil 30-45 seconds, shaking the skillet. Remove the banana.
- Add more oil to the skillet if necessary and brown the chops on each side, about 2-3 minutes.
- Stir in the garlic and ginger, saute lightly. Stir in coconut milk, water, chutney and cayenne.
- Spoon mixture over the chops. Cover and simmer 8-10 minutes. Stir in lime juice and remove from heat.
- Generously spoon the sauce over the chops and banana and serve with white rice or shredded lettuce.

CUBAN SHREDDED PORK
This is a popular Cuban pork dish known as Lechon Asado. My version is a shortcut. The pork is simmered in a broth until tender, then shredded. It's traditionally served with black beans and rice.

- In a large saucepan, combine water, juice of one lime, thyme sprig, peppercorns, garlic powder, onion powder and salt. Bring mixture to a boil. Add pork chops, reduce heat to medium-low and simmer for 1 to 1 1/2 hours, until meat is very tender. Add more water as necessary to keep chops covered.
- Turn off heat and let the chops rest in the broth for 30 minutes. Remove chops from broth and shred, removing excess fat; set aside.
- In a large frying pan, heat olive oil over medium-high heat. Add the shredded pork and fry until it is almost crisp, about 5 minutes. Add the onion and garlic and continue to cook until the onion is just tender yet slightly crisp, about 10 minutes more. Add the juice of one lime, mix though and toss with cilantro. Serve and enjoy.

- Cut sixteen 1-in. slits in pork; insert garlic slices. In a large bowl, combine the onions, orange juice, lime juice and seasonings. Pour 1-1/2 cups marinade into another large bowl; add pork and turn to coat with marinade. Cover and refrigerate for at least 8 hours or overnight, turning pork occasionally. - Flatten the pork tenderloin slices slightly, and set aside. In a bowl, mix together the lime zest, olive oil, cumin, salt, crushed red pepper, and garlic. Reserve the lime juice. Rub the seasoning mixture onto both sides of the pork slices.

- Heat oven to 400°F. Spray cookie sheet with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
- In shallow dish, mix cereal, 1 tablespoon cilantro, 1 teaspoon garlic, the orange peel, onion powder, oregano, cumin and pepper. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
