CUBAN BATIDO
Found this in one of those little grocery store magazines and it looks so yummy I want to save it here to try when those warm, lazy summer days arrive. The magazine states "A batido is a popular Latin American drink made with water, milk, fruit and ice. It is similar in testure to a smoothie and literally means "beaten" in Portuguese" Sound good to me. Update: After seeing Loof's wonderful picture I finally got around to making this myself and so glad I did. Love that tropical flavor.

- In a small skillet, cook and stir garlic in oil over medium-high heat until tender. Cool., Stir garlic into mayonnaise; spread over bread slices. Layer 4 slices of bread with turkey, ham, cheese, pickles and spinach; close sandwiches., Cook on a panini maker or indoor grill until browned and cheese is melted, 2-3 minutes.

SHREDDED SLOW COOKER CUBAN BEEF
I threw this recipe together using a slow cooker and flavors my Cuban stepfather always cooked with. It's easy and full flavored. Pairs great with rice or plantains.

Steps:
- Cut roast into 4 quarters and season liberally with salt and pepper. Place a large cast iron pan over high heat and coat with olive oil; heat until smoking. Place meat in the hot pan and turn to sear on all sides until a crust forms, 5 to 10 minutes. Transfer seared meat to a slow cooker.
- Add bitter orange marinade, garlic marinade, onion, garlic, and cumin to the slow cooker. Make sure meat is mostly covered in marinade.
- Cook on Low for 6 hours; shred meat in the slow cooker using tongs or a fork. Continue cooking on Low for another 1 to 1 1/2 hours. Add additional salt or cumin if desired.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly butter a 9x13 inch casserole dish.
- Cover the bottom of the prepared casserole dish with half of the banana slices. Sprinkle the bananas with half the brown sugar, butter pieces, pecans, and raisins. Form another layer with the remaining banana slices and repeat layering with remaining brown sugar, butter, pecans, and raisins.
- Bake in preheated oven for 30 minutes; remove from oven and cool for 5 minutes. Sprinkle brandy over top of dish to serve.

CUBAN GOULASH
I first had this served over egg noodles, but served with rice is just as nice. This recipe was introduced to me by a Cuban friend when I was seven years old. To this day, (twenty years later), it remains one of my favourites. Don't be frightened by this seemingly strange combination of ingredients; this is brilliant! The nice thing about this recipe is that it doesn't require any measurements. You use an equal amount of each ingredient, so it's infinitely scalable!

- Heat the oil in a large skillet over medium heat, and brown the pork on all sides. Mix in the onions, and cook and stir until tender.

GRILLED CUBAN BUNINI SANDWICH

- Combine salt, garlic powder, onion powder, cumin, oregano, crushed red pepper, peppercorns, bay leaf, and lime/orange zest and juices in a bowl.
- Place sliced onions and garlic cloves in the bottom of slow cooker. Top with pork shoulder and pour juice and spice mixture over the meat. Set slow cooker on low for 6 to 8 hours. When done, remove pork from cooker and let cool slightly. Then shred cooked pork into thick chunks using 2 forks. Pour remaining juices over pork to keep warm.
- Preheat a panini press according to manufacturer's instructions.
- Spread Dijon mustard on both sides of each hamburger bun. Then layer from bottom to top with pickles, red onions, 1/2 cup pulled pork per sandwich, sliced ham and Swiss cheese.
- Brush outsides of buns with olive oil and place in panini press until cheese is melted.
