HEALTHIER ITALIAN CUBE STEAK
this version is healthier because it doesn't have flour,bread crumbs,or cracker crumbs. Also, to cut back on fat the mozzerella cheese can be left out and use only the lower fat parmesan.This is my own creation.

Steps:
- Preheat oven to 350 degrees.
- Put oil in skillet, and add cube steaks. Cook until just brown.About 8 minutes.
- Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
- Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.

In a large skillet, saute the zucchini, tomatoes, onion and 1 teaspoon spice mixture in 1/2 teaspoon oil until zucchini is crisp-tender. Remove and keep warm. , Sprinkle the remaining spice mixture over cube steaks. In the same skillet, cook steaks in remaining oil over medium heat for 1-2 minutes on each side or until no longer pink. Sprinkle with Parmesan cheese. Serve with vegetables.

- In a shallow dish, combine flour, paprika and black pepper. Add steaks and turn to coat lightly. Coat a large skillet with cooking spray and heat over medium high heat. Cook steaks 3-5 minutes on each side. Transfer steaks to a platter and cover to keep warm. Reduce heat to medium and add broth, tomatoes and garlic powder to the skillet. Heat until the mixture just begins to boil, stirring occasionally. In a small bowl, stir together water and cornstarch until smooth. Slowly add to the tomato mixture, stirring until thickened. Return the steaks to the skillet and cook until heated through.
CUBE STEAK PARMESAN
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

- 1. Cut steaks into four equal serving-size pieces. Arrange in a single layer in an 8 x 8 x 2-inch microwavable dish. Brush each steak with 1 tablespoon of the tomato sauce. Sprinkle with Italian herbs, garlic salt and pepper. Top each with mushrooms, then green pepper, green onion and 1 tablespoon tomato sauce. Cover with waxed paper.2. Microwave at 100% power (700 watts) for 14 to 16 minutes or until meat is very tender and no longer pink, rotating dish one-fourth turn after 5 minutes and basting with sauce. Sprinkle with mozzarella cheese, then Parmesan cheese. Cover with waxed paper and let stand for 5 minutes.

A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!

- In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.
- Heat the olive oil in a large skillet over medium heat, and brown the cube steak.
- Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning.
- Cover, and simmer at least 1 hour, stirring once.
- Place the zucchini in the skillet, and coat with the tomato sauce.
- Continue to simmer uncovered 10 minutes, or until zucchini is tender.
