Cucumber, Celery, and Gin Sorbet image

The herbaceous freshness of cucumber, celery, and gin tastes like summer on a spoon.

Yield Makes about 1 1/2 pints

Number Of Ingredients 6

2/3 cup sugar
2/3 cup water
1/2 cup packed fresh celery leaves
2 large English cucumbers, peeled, seeded, and chopped (about 3 cups)
2 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons floral gin, such as Hendrick's

Steps:

  • Bring sugar and water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat and add celery leaves. Let steep 15 minutes. Pour through a fine sieve set over a bowl; discard solids. Refrigerate syrup until cold, about 15 minutes.
  • Puree cucumbers, celery syrup, and lemon juice in a blender until smooth. Transfer mixture to a bowl and stir in gin. Cover and refrigerate until cold, at least 1 hour and up to 2 hours.
  • Chill a loaf pan in freezer at least 10 minutes. Freeze and churn cucumber mixture in an ice cream maker according to manufacturer's directions, then transfer to pan. Cover with plastic wrap and freeze until hardened, at least 2 hours; sorbet can be frozen up to 2 weeks ahead.

CELERY SORBET

Though it's a totally unremarkable vegetable, celery produces shockingly delicious frozen treats. Whether you're going for a sweet or savory experience, just try this recipe and you'll see I'm not crazy! The first time I ever had something like this, it was piled over crispy rye breadcrumbs and used to garnish salmon gravlax. The combination of tastes, textures, and temperatures truly was incredible. This would also great with buffalo wings and blue cheese sauce.

Number Of Ingredients 5

1 cup white sugar
1 cup cold water
1 pound trimmed celery
⅛ teaspoon salt, or to taste
1 lime, juiced

Steps:

  • Combine sugar and water in a saucepan over medium heat until just starting to simmer. Remove from heat. Cool simple syrup down to room temperature while preparing the other ingredients.
  • Slice celery into small pieces; transfer to a blender. Add salt, lime juice, and the cooled simple syrup. Blend until smooth. Pour mixture into a strainer set over the saucepan you used for the syrup. Press mixture through the strainer using a spoon until all the juice has been extracted. Cover and chill juice until thoroughly chilled, at least 1 hour.
  • Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Cover sorbet with plastic wrap, place a plate over the bowl, and freeze until set, about 4 hours.

CUCUMBER MINT SORBET

Number Of Ingredients 6

2 large cucumbers
3 tablespoons chopped fresh mint leaves
1 tablespoon fine salt
1/2 cup organic sugar
1/2 cup water
1 lime, juiced

Steps:

  • Using a vegetable peeler, peel the cucumbers and remove the seeds with a teaspoon. Roughly chop the cucumbers and add them to a blender with all of the remaining ingredients. Puree until well blended and smooth. Add the mixture into an ice cream machine and run for 15 minutes. Pour the sorbet into a silver bowl, and freeze, stirring every 30 minutes until frozen, about 2 hours. Serve immediately or transfer to a container and store in the freezer.

GIN & TONIC SORBET

This classic drink makes a refreshing and cheeky summer party dessert

400g caster sugar
400ml tonic water
4 tbsp gin
zest and juice 1 lime , plus extra slices to freeze
zest 1 lemon , juice of half, plus extra slices to freeze
1 egg white

Steps:

  • Put the sugar in a pan with 400ml water and warm over a low heat until dissolved. Increase the heat and boil for 1 min. Remove from the heat and allow to cool slightly.
  • Pour the tonic water into a bowl, add the sugar syrup, then chill in the fridge until cold.
  • Once the tonic mix is cold, add the gin, lime and lemon zests and juice, and pour into a container, then freeze until just frozen - this will take about 2 hrs.
  • Remove the just-frozen sorbet from the freezer and break up with a fork. Froth the egg white with a fork, then add both to a food processor and pulse to blitz together - do it quickly so it doesn't actually start to melt. Pour the mix back into your container and freeze until solid. Freeze extra slices of lemons and limes on a tray until solid. Serve the sorbet scooped into glasses or small bowls topped with lemon and lime slices
