Steps:
- Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
- Put the onion in the processor and chop. Add the rest of the ingredients. Process, scrape down the sides, and process again until smooth.
- I like it best on soft, white bread. But it's also great on crackers.

CUCUMBER CREAM CHEESE SPREAD (+VIDEO)
Steps:
- Trim away roots from base of green onion, place in food processor. Add cucumber to food processor bowl.
- Cover and process until coarsely chopped (DON'T OVERPROCESS!)
- Add cream cheese, Worcestershire sauce and salt.
- Cover and process until smooth. Transfer to a bowl.
- Cover and refrigerate overnight for flavors to blend. Please don't skip this step and try to eat it right away - trust me, it makes a big difference in flavor when you let it hang out overnight.

- I wash and score the cucumber with a fork along the entire lenth of the cucumber, all the way around, to make a design Slice thinly and set aside.
- Combine cream cheese, Good Seasonings Italian mix and Tabasco sauce.
- Spread cream cheese mixture, generously on each slice of cocktail bread, place slice of cucumber and sprinkle the top with dill.

These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.
