SMOKED SALMON CUCUMBER BITES

- In a small bowl, mix together the sesame seeds, poppy seeds, onion flakes, garlic flakes, black pepper and 1/2 teaspoon sea salt; set aside.
- In a separate bowl, mix together the sour cream, minced dill, lemon zest and remaining 1 teaspoon sea salt; set aside.
- With a peeler, stripe the cucumber, running the peeler from one tip to the other, leaving a small strip of skin in between each peel. Using a mandoline or knife, slice the cucumber on the bias into 1/4-inch slices. Slice the salmon into 2-inch strips.
- Lay out the cucumber slices on a platter. Place about 1/2 teaspoon of the sour cream mixture on each cucumber. Ripple or fold the strips of smoked salmon and place on top of the sour cream mixture. Garnish with dill sprigs and sprinkle with the seasoning mix before serving.
CUCUMBER CUPS WITH CREAMY SALMON WHIP

- Process the cottage cheese and milk in a food processor until smooth. Add the scallions, salmon, cream cheese, lemon juice and a pinch of white pepper and process until smooth and creamy. Refrigerate at least 1 hour or overnight.
- Cut the cucumbers into 3/4-inch-thick rounds, discarding the ends. Using a small spoon, scoop the seeds and some of the flesh out of each round to form a small cup.
- Fill each cup with about 2 teaspoons of the salmon whip and sprinkle with the chives. Cover and refrigerate until ready to serve, up to 1 hour.

- Trim ends from cucumbers and cut crosswise into 24 (3/4-inch-thick) rounds. Scoop a 1/2-inch-deep depression from one side of each round with a small melon-baller, forming little cups. Drain cucumbers, cup sides down, on paper towels for 15 minutes.
- Beat cream cheese, chopped dill, lemon zest, lemon juice, and black pepper together in a bowl. Spoon 1/2 teaspoon cheese mixture into each cucumber cup. Top each cup with 1 salmon strip and 1 dill sprig.

SALMON AND CUCUMBER TARTARE WITH WASABI SAUCE
This makes a delightful hors d'oeuvre, appetizer or even a light supper. If you're serving it as an hors d'oeuvre you can spoon it onto cucumber rounds, small endive leaves or toasted pita triangles. The better the salmon, the better this will be (sashimi grade is the best).

- Make sure there are no small pin bones in the salmon. Remove with tweezers if there are, then mince the fish very fine. Combine with the cucumber in a medium bowl.
- Rinse the shallot with cold water and drain on a paper towel. Add to the salmon and cucumber. Add the capers, minced pickled ginger, Worcestershire sauce, salt and pepper, and lemon juice and toss together.
- In a small bowl or measuring cup, whisk together the wasabi or horseradish, vinegar, soy sauce, and olive oil. Toss with the fish and cucumber mixture. Cover and refrigerate until ready to serve.
- To serve, spoon onto cucumber rounds or pita triangles, or mold in plastic wrap-lined ramekins and unmold onto plates as a first course. Sprinkle with chives and garnish with pickled ginger.

- In a large resealable plastic bag, combine the first five ingredients; add salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally. - Bake the salmon. Preheat an oven to 325F. Pat the salmon fillet dry with a paper towel, then place on a rimmed baking sheet lined with parchment paper. Drizzle the salmon with 2 Tbsp olive oil, then season with 1 tsp onion salt and ¼ tsp black pepper. Bake for 20 minutes, or until an internal temperature of 135F is reached in the thickest side of the salmon. Set aside to cool.
- Make the yogurt dill sauce. Place ½ cup Greek yogurt into a small mixing bowl. Add 1 tsp lemon zest, 1 Tbsp fresh lemon juice, and 1 Tbsp finely chopped dill. Stir to combine, then taste and adjust seasoning as needed.
- Thinly slice cucumbers. Use a sharp knife to thinly slice the cucumber on a diagonal (this will create larger pieces) about ¼" thick. You don't want them too thin, or they won't be able to hold the weight of the yogurt sauce and salmon.
- Assemble the cucumber stacks. Use two forks to flake the salmon into bite-size pieces, then place a small portion on top of each cucumber slice. Next, dollop about ½ tsp yogurt sauce on top.
