1 unpeeled red apple, chopped
¾ cup dried cranberries
½ cup thinly sliced celery
¼ cup chopped pecans
2 tablespoons thinly sliced green onions
¾ cup mayonnaise
2 teaspoons lime juice
½ teaspoon curry powder
12 slices bread
12 lettuce leaves

Steps:

  • Combine chicken, apple, cranberries, celery, pecans, and green onions in a bowl. Mix mayonnaise, lime juice, and curry powder in a small bowl. Fold mayonnaise mixture into chicken mixture; stir to coat. Cover and refrigerate until ready to serve.
  • Cut each bread slice with a 3-inch heart-shaped cookie cutter; top with a lettuce leaf and chicken salad.

8 slices reduced-calorie wheat bread
4 leaf lettuce leaves, optional

A very different dish, with an interesting combination of flavors. I found this recipe years ago when I had an abundance of avocados...sigh, those were the days. The extra toppings are your choice, I usually only use the peanuts and or bacon.

1/4 cup butter
1/2 cup chopped apple
1/4 cup chopped onion
1 garlic clove, crushed
1 tablespoon curry powder
1/4 cup flour
1 cup light cream
1 cup chicken broth
1 teaspoon salt
1/8 teaspoon pepper
2 cups chicken, cooked and diced
3 -4 avocados, halved and peeled
3 -4 cups cooked rice
raisins or peanuts

Steps:

  • Saute onion, apples, garlic and curry powder in butter until onion is crisp-tender.
  • Stir in flour.
  • Gradually add cream and broth.
  • Cook and stir until sauce boils 1 minutes.
  • Add salt, peper and chicken.
  • Cook overl ow heat 10 minutes.
  • Arrange avocado halves on rice in oven-proof serving dish.
  • Heat in 350º oven for 5 minutes, just to heat avocado. (This can be skipped if you want the avocado room temp).
  • Spoon chicken over avocado halves.
  • Top with any toppings of your choice.

1 tablespoon peppercorns
Salt
1 skinless, boneless chicken breast
1 1/2 tablespoons mayonnaise
1/2 teaspoon Dijon mustard
1 teaspoon curry powder
Freshly ground black pepper
4 slices whole-wheat or multigrain bread
1 tablespoon unsalted butter
1/2 avocado, cut into 1/4-inch-thick slices
1/4 cup alfalfa sprouts

Steps:

  • Fill a small saute pan with water. Add peppercorns and salt to taste; bring to a boil. Add chicken breast, reduce heat, and poach gently for 15 to 20 minutes, or until cooked through. Remove from heat, and let cool.
  • Coarsely chop chicken. Place in a bowl and combine with mayonnaise, mustard, curry powder, and salt and pepper to taste.
  • Spread chicken mixture on 2 slices of bread. Spread butter on remaining slices. Place avocado slices on chicken mixture, and top with sprouts. Cover with buttered bread. Trim crusts, and cut into quarters.
