This is a very easy and delicious chicken recipe that goes well served with rice.

1 whole chicken, cut into 8 pieces and skin removed
salt and ground black pepper to taste
1 tablespoon paprika, or to taste
1 tablespoon butter
1 apple, cored and chopped
1 onion, chopped
1 tablespoon curry powder, or more to taste
1 (10.75 ounce) can cream of mushroom soup
1 cup half-and-half cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange the chicken pieces in a single layer in a 9x13-inch baking dish. Season the chicken liberally with salt, pepper, and the paprika; set aside.
  • Melt the butter in a skillet over medium heat. Add the apple and onion to the melted butter, season with the curry powder, and cook and stir until the apple and onion are tender, 7 to 10 minutes. Stir the mushroom soup and half-and-half into the mixture until completely combined; spoon over the chicken pieces.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 75 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).

1 pound raw, unblanched almonds
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F. Whisk egg white with spices. Add almonds and stir to coat. Put butter on a large cookie sheet and melt in the oven.
  • Spread coated almonds on cookie sheet and return to oven for 20 minutes or until lightly toasted, turning almonds now and then to prevent sticking and to even out toasting. Allow to cool thoroughly before storing.

3 tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts (about 1 1/2 pounds total)
Salt and freshly ground black pepper
1/2 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon curry powder
1/2 lemon, juiced
1/4 cup chopped, blanched almonds, toasted
1/4 cup raisins
A handful fresh basil leaves, torn
8 slices good-quality, dense white bread such as Tuscan

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
  • Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.
  • Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.

Curried Almonds image

1 tablespoon Sauvignon Blanc
1 teaspoon Madras curry powder
1 cup grapeseed oil
1 cup whole almonds
1 teaspoons extra-virgin olive oil
Zest of 1 lemon
Salt and freshly ground black pepper

Steps:

  • Bring the Sauvignon Blanc to a boil in a small saucepan to cook off the alcohol. Add the curry powder, and continue cooking for 10 to 15 seconds. Set aside, and let cool.
  • Heat the grapeseed oil in a heavy-bottomed pot until it registers 325 degrees F on a candy thermometer; add the almonds, and fry for 3 minutes. Carefully transfer the almonds to the saucepan with the curry mixture, and toss to coat. Add the extra-virgin olive oil, and season with salt, pepper and the zest.

Toasty almonds tossed with Madras curry powder are perfect for snacking or topping salads.

Vegetable oil, for the baking sheet
3 tablespoons sugar
1 tablespoon Madras curry powder
1 large egg white
2 cups salted roasted almonds

Steps:

  • Preheat the oven to 250 degrees F. Lightly oil a rimmed baking sheet.
  • Whisk together the sugar, curry powder and egg white in a medium bowl until thoroughly blended and slightly foamy. Add the almonds and toss to coat evenly. Spread on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes. Nuts will be fragrant and slightly darker but still a bit moist. They will continue to crisp as they cool.
  • Cool completely on the pan. Nuts will keep in an airtight container for up to 5 days.

1 head romaine lettuce (or any crisp lettuce)
2 cups cooked chicken, diced
1 cup red cabbage, shredded
3/4 cup sliced almonds, toasted
2 tart green apples, cored, seeded and cut into 1/2-inch cubes (can leave unpeeled if you wish)
1/2 cup red onion, diced
1/3 cup white wine vinegar
2 tablespoons fresh chives, minced (NOT dried)
1 tablespoon curry powder (or less, depending on its "heat")
2 teaspoons light brown sugar, packed
1 teaspoon soy sauce
1 garlic clove, finely minced
1/2 cup extra virgin olive oil

Steps:

  • Prepare the vinaigrette first. Combine all the ingredients in a small bowl except for the olive oil. Whisk in olive oil until well incorporated. Adjust seasoning. Best prepared 1 hour in advance if possible.
  • Toast the almonds and set aside to cool.
  • In large salad bowl combine the salad ingredients. Add about 2 tablespoons of the vinaigrette and toss gently.
  • Serve the remaining vinaigrette on the side.

This is a recipe of my aunts. It is one she makes during the holidays and we ask for it every time we have a get together! It sounds a little unusual but its a must try and will quickly become a family favorite. Also good for baby showers and other parties.

2 (8 ounce) packages cream cheese, softened
1 tablespoon bottled steak sauce
1/2 teaspoon curry powder
1 1/2 cups minced cooked chicken
1/2 cup minced celery
1/4 cup chopped parsley
1/4 cup chopped toasted almond
Ritz cracker

Steps:

  • Beat together first 3 ingredients. Blend in next 2 ingredients and 2 Tbsp parsley.
  • Refrigerate remaining parsley. Shape mixture into 9' log. Wrap in plastic wrap and

1 1/2 cups low sodium chicken broth
1/2 teaspoon kosher salt (optional)
1/2 cup golden raisins or 1/2 currants
2 cups whole wheat couscous
1 cup slivered almonds, toasted (see note)
1 lb shredded cooked chicken (3 cups)
1/2 cup sliced green onion
1/4 cup chopped fresh cilantro

Steps:

  • Heat curry sauce, chicken broth, salt and raisins in a medium saucepan. When mixture comes to a boil, stir in couscous. Cover pan and remove from heat. Let stand 5 minutes.
  • Fluff couscous with a fork. Stir in almonds, chicken and green onions. Sprinkle with cilantro and serve hot.
  • Note: To toast nuts, spread on baking sheet and bake in 350-degree oven for 5 to 8 minutes or until they start to brown.

1/3 cup chopped sweet red pepper
3 tablespoons butter, divided
1-1/2 cups uncooked long grain rice
1 teaspoon minced fresh gingerroot
3 cups hot water
1/4 cup golden raisins
2 tablespoons lime juice
2 tablespoons soy sauce
2 teaspoons chicken bouillon granules
1 to 2 teaspoons curry powder
1 teaspoon grated lime zest
1 can (8 ounces) pineapple chunks, drained and cut into thirds

  • In a large saucepan, saute onions and red pepper in 1 tablespoon butter until tender; set aside. , In the same saucepan, saute rice and ginger in remaining butter until golden brown, 4-5 minutes.
