BARNEY'S MONDAY NIGHT RICE

Throw together a tasty supper in less than thirty minutes with the Sunday roast leftovers

2 tbsp vegetable oil
1 egg , beaten with about 2 tbsp water
1 onion , chopped
2 garlic cloves , crushed
1 heaped tbsp curry powder
2 tbsp tomato ketchup
a large handful of frozen peas (about 85g/3oz)
250g leftover cold cooked rice (any type) or a 250g pouch of ready cooked rice
175g cooked chicken or pork , shredded into strips
a good splash of soy sauce

Steps:

  • Heat half the oil in a large non-stick frying pan over a highish heat. Pour in the beaten egg, swoosh it around the pan and leave it to set for a minute. Flip it over like a pancake and let it cook for a minute more on the otherside, then tip it out flat on to a plate.
  • Heat the remaining oil in the same pan. Tip in the onion and sizzle for 3-4 minutes until it's starting to brown, then stir in the garlic, curry powder and ketchup. Add the peas and cook for a minute or two until they start to defrost. Tip in the rice, cooked meat and a glass of water (100ml/31⁄2fl oz) and cook over a medium heat for 5-6 minutes, stirring as you go, until everything's piping hot and the rice has taken on the colour of the curry powder.
  • While your rice is frying, shred the omelette into long strips. Toss the omelette and soy sauce through the rice and cook for a moment more. Scoop the rice on to plates straight from the pan and serve with extra soy sauce for sprinkling over.

I found this recipe and it sounded so good, but it served 100! I tweaked to serve 4 and use ingredients we like, and the results were great! I've got permission to make again, and I know I will. I love to use bone-in chicken thighs, but boneless breasts or thighs would work very well also.

¼ cup butter
1 onion, chopped
3 stalks celery, chopped
1 (4 ounce) can sliced mushrooms, drained
1 (6 ounce) package long grain and wild rice mix
1 ½ cups water
1 (10.75 ounce) can condensed golden mushroom soup
1 cup sour cream
1 tablespoon curry powder
4 bone-in chicken thighs, skin removed
salt and ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Melt butter in a large saucepan over medium heat, and cook the onion and celery until the onion is slightly tender, about 3 minutes; stir in mushrooms, and cook 1 more minute, stirring often. Mix in the package of rice mix and water; bring to a boil, cover, and simmer until the rice is tender, about 15 minutes.
  • Mix the golden mushroom soup, sour cream, and curry powder together in a bowl. Stir about 1 1/2 cup of the soup mixture into the rice, reserving 1/2 cup of soup mixture for later. Spread the rice mixture into the bottom of the prepared baking dish. Sprinkle the chicken thighs with salt and black pepper, and arrange over the rice. Cover the chicken thighs with the reserved 1/2 cup of soup mixture. Sprinkle the casserole with Parmesan cheese.
  • Bake in the preheated oven until the chicken thighs are no longer pink at the bone and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the thickest part of a thigh, not touching bone, should read 165 degrees F (74 degrees C).

1 large onion, diced
1 (6 ounce) skinless, boneless chicken breast half - cut into cubes

1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed

4 sprigs cilantro for garnish

Steps:

  • Heat the olive oil in a skillet over medium-high heat. Cook and stir the onion and chicken until the onion is dark brown, and the chicken is golden, about 5 minutes. Reduce the heat to medium, and stir in the garlic, curry powder, cinnamon, and clove. Cook and stir until the spices are fragrant and the garlic has softened slightly, 1 to 2 minutes. Add the garbanzo beans, ketchup, tomato paste, lemon juice, salt, black pepper, and water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and cook 10 minutes. Uncover, and increase heat to medium-high, and allow the sauce to reduce to your desired consistency. Stir in additional water if too thick. Garnish with cilantro to serve.

With sweet and savory chicken and tomato fried rice on the inside, and the possibility to decorate the top with hearts, stars, and faces, this is one of those dishes that's loved by kids and grownups alike in Japan.

150 grams chicken breast (~1/2 breast, cut into 1/2-inch dice)
1 teaspoon soy sauce
1 tablespoon vegetable oil
100 grams onion (~1/2 small onion, finely minced)
300 grams cooked white rice (2 loosely packed cups)
2 tablespoons ketchup
1 tablespoon oyster sauce
black pepper (to taste)
3 eggs
1 tablespoon cream
1 pinch salt
1 tablespoon butter

Steps:

  • Marinate the chicken in the soy sauce while you prepare all the other ingredients.
  • Break the eggs into a bowl along with the cream and salt. Whisk together until the mixture is uniform in color.
  • Add the vegetable oil and onions to a frying pan over medium-high heat and saute the onions until they're tender and just starting to brown.
  • Add the chicken and stir-fry until you don't see any raw sides anymore.
  • Add the rice, and break it up with a spatula so that it heats through evenly.
  • Once the rice has been warmed through, add the ketchup and oyster sauce, and stir-fry until the rice is an even color and the ketchup is just starting to caramelize. Season with black pepper to taste.
  • Plate the rice. You can use a bowl as a mold to give it a round or oval shape.
  • Heat a small 8-inch non-stick frying pan over medium heat until moderately hot. Add the butter and swirl to melt and coat the pan evenly.
  • Add the eggs, and cook until the bottom layer of eggs are set (the bottom will start turning opaque).
  • Gently stir the eggs, while shaking the pan to resettle the uncooked egg.
  • Turn up the heat to high for a few seconds to make the egg easier to slide out of the pan (the egg should slide around the pan easily when shaken).
  • Position the pan over the plated rice and gently slide the egg out of the pan onto the rice.
  • Garnish with ketchup and parsley to taste.

2 tablespoons dried onion flakes
2 teaspoons flavor enhancer (such as Maggi® Würze)
1 teaspoon prepared mustard
2 packets beef bouillon
6 cups water
3 cups white rice
6 (5 ounce) skinless, boneless chicken breast halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish with cooking spray.
  • Mix curry ketchup, 3 tablespoons water, onion flakes, flavor enhancer, mustard, and bouillon in a small bowl.
  • Combine 6 cups water and rice in the prepared casserole dish. Spread chicken over the rice, then spread ketchup sauce evenly over all pieces of chicken.
  • Cook in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 1 1/2 hours minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

3/4 cup ketchup
1 tablespoon curry powder
1 tablespoon vegetable oil
6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
Cooked white rice, for serving
3 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with aluminum foil.
  • Whisk together the ketchup, curry powder and vegetable oil in a large bowl. Add the chicken thighs and toss until they are completely coated in the ketchup mixture.
  • Transfer the chicken to the prepared baking sheet and spoon over the remaining marinade to make sure that a thick even layer of the ketchup mixture remains on the skin. Season the chicken with salt and pepper. Roast until the chicken registers 165 degrees F on an instant-read thermometer and the ketchup mixture begins to caramelize, 30 to 40 minutes.
  • Serve the chicken over cooked white rice and garnish with the cilantro.

200 g chicken meat

1/4 cup frozen peas (thawed)

Steps:

  • Cut the chicken meat into bite size pieces and set aside.
  • Dice the onion and carrots and set aside.
  • Heat the olive oil in a large frying pan and cook the chicken meat.
  • When the chicken meat changes colour and has cooked, add the onion and carrot to the frying pan and cook.
  • Add the cooked rice and ketchup to the frying pan. Stir and turn the rice over constantly with a wooden spatula until the rice is evenly coated with ketchup and is well separated.
  • Add the green peas to the frying pan and stir.
  • Add salt and pepper to taste and serve in a bowl or a plate.
