3 cups unbleached all-purpose flour
2 tsp baking powder
1 cup salted butter, (cold and cut into chunks)
1 cup sugar
1 egg
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350F.
  • Line three cookie sheets with parchment paper.
  • In a medium bowl, whisk together the flour and baking powder. Set this mixture aside.
  • In the large bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugar until combined and fluffy. Beat in the egg and extracts, mixing until combined.
  • Add the flour mixture in three parts, mixing on low speed. Scrape down the sides and bottoms of the bowl as needed. After the last addition, the dough will look very thick and crumbly.
  • Prepare a rolling surface and roll out a portion of the dough. Cut as many shapes from the dough as possible and place them on a prepared cookie sheet, about 2 inches apart.
  • Place the cookie sheet in the freezer for 10 minutes. Freezing the cookies will help keep them from spreading. Meanwhile, knead the scraps and remaining dough together and continue the rolling, cutting, and freezing process on a second cookie sheet.
  • After freezing, immediately bake the cookies on the center rack of your oven for 9 to 12 minutes (for 3.5 to 4-inch cookies), or until they appear done in the center. The baked cookies won't change much in color.
  • Remove the cookies from the oven and let them cool on the cookie sheets for 2 minutes. With a thin cookie spatula, transfer the cookies to a wire rack to cool completely.

These cookies are one of my many usual cutout cookie recipes for Christmas cookies. Prep time includes chill time for dough. From Land O Lakes.

1 cup butter, softened
1 cup sugar
1 egg
2 1/2 cups flour
1 teaspoon baking powder
2 tablespoons orange juice
1 tablespoon vanilla extract

Steps:

  • In a large mixing bowl, beat together butter and sugar. Add in egg and beat well. Beat in orange juice and vanilla.
  • Combine flour and baking powder and gradually beat inches.
  • Chill dough for about 1 hour.
  • After dough has chilled, preheat oven to 400.
  • Roll dough on to lightly floured surface to about 1/8-1/4" thick. Cut into desired shapes with cookie cutters. Sprinkle w/ colored sugars, if desired.
  • Bake at 400 for 6-9 minutes (depending on cookie size) or until edges just slightly golden.

My mother in law has been making these for Christmas for years and years. I make them for all holidays, using different cookie cutters for whatever occasion. They are the best when they are frosted, but sometimes I just sprinkle on colored sugar before baking. I call them "Play Dough" cookies because that's what the dough smells like to me! (Don't worry, they don't taste like Play Dough :) Chilling time is not included.

2/3 cup butter, softened
1/2 cup sugar
1 egg, beaten well
1/2 teaspoon vanilla
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
decorator icing, in various colors or confectioner's sugar icing, colored with food coloring (optional)

Steps:

  • Cream butter and sugar well.
  • Add egg and vanilla and beat well.
  • Combine baking powder and flour.
  • Add gradually to creamed mixture.
  • Chill until firm.
  • Preheat oven to 400 degrees.
  • Roll out dough to about 1/4" thickness and cut into desired shapes.
  • Bake for 6 to 8 minutes.
  • When cool, decorate with frosting or icing if desired.

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount

1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
food coloring (use your choice of colours)

Steps:

  • For cookies; in a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy.
  • In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended.
  • Cover bowl with plastic wrap and chill for 2 hours.
  • Set oven to 400°F.
  • Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only).
  • On a very lightly floured surface roll out the dough into about 1/4-inch thickness.
  • Cut into desired shapes using cookie cutters.
  • Place cookies 2-inches apart on cookie sheet.
  • Bake 4-6 minutes.
  • Remove cookies to wire racks to cool completely before icing.
  • For the frosting; in a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency).
  • Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup).
  • Divide into as many separate bowls as you wish for different colours.
  • Add in food colouring until desired intensity is achieved.
  • Paint the icing over the cookies using a brush, or dip edges of cookies into icing.
  • Allow to set on waxed paper.

I tested 8 different butter cookie recipes, looking for the "perfect" butter cookie. It had to be buttery, a little crumbly (like shortbread), and not too sweet. This is the winner. I think these are the Worlds Best Butter Cookie, courtesy of Chef Alice Medrich.

8 ounces unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
2 cups all-purpose flour

Steps:

  • Beat the butter, sugar, salt and vanilla together until smooth and creamy.
  • Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
  • Add the flour and mix just until incorporated.
  • Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
  • Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
  • Before baking, preheat the oven to 325°F.
  • Line your baking sheets with parchment.
  • Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
  • Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
  • Note: you can do many things with these cookies.
  • You could roll the dough out and cut shapes.
  • You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
  • You could make them and then dip them half into chocolate.
  • You could just make them and eat them, which is my favorite.
  • Whatever you do, they will be delicious.

1 cup confectioners' sugar
1 cup (2 sticks) cold unsalted butter, cut in pieces

4 large egg yolks
1 teaspoon vanilla extract
Egg wash, (optional): 1 large egg white, beaten with 2 teaspoons water
Decorating sugar and sprinkles, (optional)

Steps:

  • Place flour, sugar, butter, and salt in the bowl of a food processor; process until mixture is the texture of coarse meal.
  • In a small bowl, lightly beat egg yolks and vanilla; with motor running, add to food processor. Process just until a dough forms.

I made these cookies with my mom when I was young. My daughter and I now make these every year for Christmas keeping the tradition going. This recipe comes out of a darling cookbook dated 1947 called Best Loved Foods of Christmas. The pictures and graphics are so adorable. Baking the cookies isn't always the fun part but the decorating is a blast! My daughter asks me every year about SUMMER time Mom, can we make Cutout cookies again this year LOL! I always say YES most certainly! The time it takes to make these is worth the time. If you share these with others you will get so many compliments! When I make these I break it up into a 2 day job. First day we bake the cookies and next day we decorate. These cookies also store well. I store them in a big air tight plastic container. Anyways have a blast making these. Your children or Grandchildren will grow up having fond memories of you and them baking these as I do with my Mother!

1 cup butter, softened
3/4 cup sugar
1 egg
2 tablespoons cream or 2 tablespoons milk
1/2 tsp.vanilla extract
3 cups flour, sifted
1 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl cream together the butter and sugar. Mix in the egg, milk and vanilla.
  • Now blend in the dry ingredients flour, baking powder and salt until dough is formed. If desired you can chill for an hour for easier handling. I've never done this and the dough always rolled out fine for me.
  • Divide the dough in thirds. On a lightly floured board roll out the dough to about 1/8th inch thickness. Using cookie cutters cut into shapes and place on a cookie sheet.
  • Bake in oven for about 5 to 8 minutes until lightly golden brown. Cool on a rack.
  • SPECIAL NOTE: You can use vanilla extract but I think vanilla paste makes these cookies taste even more special using vanilla paste.
  • I use vintage Christmas cookie cutters where i found on Ebay. I bought vintage cooper cookie cutters instead of the aluminum ones due to safety concerns regarding the use of aluminum. But you can use modern cookie cutters and you can make these anytime not just for Christmas.
