2 cups elbow macaroni
2 cups of shredded cheese (I use cheddar swiss and Parmesan)
2 tablespoons butter
2 tablespoons flour
1 cup milk
breadcrumbs, if desired (optional)

Steps:

  • Cook pasta as per package directions.
  • Combine butter and flour in a medium saucepan and melt on low to medium heat.
  • Add half of the milk and cheese to saucepan and stir until melted.
  • Add the rest of the milk and cheese to saucepan and stir until melted.
  • Place pasta in baking dish and pour cheese sauce over pasta and then stir.
  • Salt and pepper to taste and top with bread crumbs if desired.
  • Bake uncovered for 30 mins at 350.

Dad's Oven Baked Macaroni and Cheese With a Kick image

I grew up on this recipe - it was a family favourite and I now make it for my husband and children and they all love it, too. We like things spicy, so I've added cayenne powder to my version.

2 -3 cups macaroni noodles, uncooked
1/4 cup hard butter or 1/4 cup margarine
1/4 cup flour
3 cups milk
2 cups grated cheddar cheese, divided
3/4 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon cayenne powder
1/2 teaspoon dry mustard
3/4 cup dry breadcrumbs or 3/4 cup crushed unsalted cracker

Steps:

  • Cook and drain macaroni; rinse with cold water.
  • Meanwhile, melt butter or margarine either in a pot on the stove or in a microwavable container in the microwave.
  • Stir in flour.
  • Add milk and cook, stirring frequently (5 - 6 minutes in the microwave, stirring every minute) until thickened.
  • Add seasonings and continue cooking on stove or in microwave for 1 - 2 minutes longer.
  • Add 1 1/2 cups cheese and stir until melted (may need to be cooked for 1 more minute to melt the cheese).
  • Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. My dad always layered the noodles and sauce, so that's an option, too.
  • Sprinkle the breadcrumbs on top, followed by the remaining 1/2 cup cheese.
  • Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

4 cups milk
8 tablespoons butter (1 stick)
1/2 cup all-purpose flour
2 teaspoons kosher salt
2 lbs elbow macaroni
8 ounces shredded monterey jack cheese
3 ounces feta cheese

Steps:

  • Start large pot of salted water on stove to boil.
  • Heat 4 cups of milk in microwave for 3-4 minutes just to warm.
  • In large dutch oven heat butter to melt and whisk in flour over medium-high heat. Whisk until mixture starts to brown and smell nutty. Whisk in milk and continue to whisk until mixture thickens and is smooth. Add salt.
  • Boil pasta until almost done according to package instructions.
  • While pasta is boiling stir in cheeses starting with the feta and finshing with the jack. Add in small amounts and continue stirring. The feta may not completely incorporate.
  • Add the cooked pasta to the sauce and stir to incorporate. If too thick or if going to serve much later add some of the reserved pasta water.

1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
3/4 teaspoon ground mustard
1/2 teaspoon pepper
Few dashes hot pepper sauce
3-1/2 cups whole milk
5 cups shredded cheddar cheese, divided

Steps:

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

This is a recipe my dad got from my step mom's sister sometime last year. He made it for Christmas '08, and it was some of the best homemade macaroni I have ever had.

8 ounces elbow macaroni, cooked
2 cups light cottage cheese
8 ounces light sour cream
3 eggs, slghtly beaten
4 cups Mexican blend cheese or 4 cups cheddar cheese
3/4 teaspoon salt
1/2 teaspoon pepper
paprika (to taste)

Steps:

  • Preheat oven to 350 degrees F.
  • Cook macaroni and drain.
  • Mix all ingredients except paprika and 2 cups Mexican blend or cheddar cheese in a 2-quart baking dish.
  • Top with remaining 2 cups cheese.
  • Sprinkle with paprika.
  • Bake for 45 minutes or until done.
  • Recipe can be halved and cooked in a 9x9 pan.
