DAD'S BREAKFAST PIZZA

Dad's Breakfast Pizza image

This recipe can be very versatile depending on your preferences. My whole family used to gather at 10 a.m. every Sunday morning at Mom and Dad's for breakfast. Dad made this up one Sunday, and it has been a favorite of ours ever since =)

Time 55m

Yield 12

Number Of Ingredients 9

cooking spray
1 pound bacon, chopped
2 (12 ounce) cans refrigerated biscuits (10 biscuits per can)
1 teaspoon butter
12 eggs
1 small onion, chopped
½ green bell pepper, chopped
2 cups shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x12-inch baking sheet with cooking spray.
  • Cook the bacon in a large skillet over medium heat, stirring often, until the bacon is browned and crisp, about 10 minutes. Remove bacon pieces with a slotted spoon, and drain on paper towels.
  • Open up the cans of biscuits, separate the biscuits, and arrange onto the prepared baking sheet so they touch. Press the biscuit dough down to seal them together into a crust that covers the baking sheet.
  • Bake in the preheated oven until the crust is slightly cooked and very lightly browned, about 5 minutes. Do not overbake. Remove from oven.
  • Melt the butter in a large nonstick skillet over medium heat until the foam disappears. Beat the eggs in a bowl, and pour the eggs into the hot skillet. Use a spatula to lift and gently stir the eggs just until set, but still moist, 3 to 4 minutes. Arrange the lightly scrambled eggs on the semi-baked biscuit crust. Top with the cooked bacon, onion, and green pepper; spread the Cheddar cheese all over the pizza. Season to taste with salt and black pepper.
  • Return to oven, and bake on the top rack until the cheese is melted and bubbling and has begun to brown, about 10 more minutes.

Categories     Breakfast

Number Of Ingredients 6

1 pizza crust , (recipe here: https://realfoodbydad.com/homemade-bbq-chicken-pizza-2/ )
2 3 oz. sausage links, casing removed, crumbled and browned
2 cups diced hash browns, cooked
1 cup cheddar cheese
1/2 cup chunky salsa, drained
4 eggs

Steps:

  • Preparation: Heat oven to 500 degrees F. Place pizza stone on lower middle rack. Lightly grease a sheet of parchment paper with olive oil. Transfer ball of dough to parchment. Stretch out dough by hand as much as possible, then lightly brush with olive oil, cover with another piece of parchment. Use a rolling pin and work from the middle of the dough outward to flatten dough to ¼ inch thickness. Peel off top parchment paper. Note: Dough can be made ahead of time and refrigerated for up to three days.
  • Assembly: Sprinkle down browned sausage, hash browns, cheddar cheese and salsa. Break eggs on top of pizza. Slide the pizza (with the parchment underneath) on to the hot pizza stone. Bake for 3-5 minutes until pizza crust starts to turn golden. Rotate the pizza once and remove parchment, continue to bake for another 3 minutes or until eggs are cooked but still runny. Remove from oven.

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 8

1 prepared thin pizza crust (about 10 ounces), such as Boboli
3 tablespoons extra-virgin olive oil
8 large eggs
1 (10-ounce) package frozen chopped spinach, cooked and squeezed dry, reserving 1 tablespoon of the liquid
1 cup chopped onion, about 1 medium onion
Kosher salt
Freshly ground black pepper
1/2 cup shredded Cheddar

Steps:

  • Preheat the oven to 450 degrees F.
  • Brush the pizza crust on both sides with 1 tablespoon olive oil. Place crust directly onto the middle rack of the oven and bake for 10 minutes.
  • While the crust is cooking, break the eggs into a bowl and add the reserved spinach liquid. Whisk them well and season them with salt and pepper. Add the remaining 2 tablespoons olive oil to a 10-inch skillet and heat over medium heat. Add the onions and cook until translucent, about 4 minutes. Add the dry spinach, breaking up the pieces, and heat through, about 2 minutes. Scrape the vegetable mixture into the eggs and beat it well to distribute the spinach evenly. Turn the heat down to low and pour the egg mixture back into the pan. Gently stir the eggs until they are just set and still moist, about 3 to 4 minutes.
  • Spread the egg mixture evenly onto the baked pizza crust and top with the cheese. Return to the oven until the cheese is melted and lightly browned, about 1 minute. Serve hot.

1 storebought pizza dough
2 tablespoons butter, melted
4 tablespoons Cinnamon-Sugar, divided, recipe follows
2 cups mascarpone cheese
1 tablespoon heavy cream
2 tablespoons lemon juice
1 teaspoon lemon zest (from 1 lemon)
2 cups mixed berries
1 vanilla bean
1/2 cup sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.

1 teaspoon salt
3 to 3-1/2 cups bread flour
2 tablespoons yellow cornmeal
1/2 pound ground beef

2 cans (8 ounces each) pizza sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 package (3 ounces) sliced pepperoni
1/2 pound deli ham, cubed
1/2 cup chopped pitted green olives

1-1/2 cups shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese

Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., Punch dough down; let rest for 5 minutes. Grease a 12-in. deep-dish cast-iron skillet or other ovenproof skillet; sprinkle with cornmeal. Press dough into pan; build up edges slightly., Preheat oven to 400°. In a large skillet, cook beef, sausage and onion over medium heat until meat is no longer pink and onion is tender, breaking up meat into crumbles, 8-10 minutes; drain. Spread pizza sauce over dough to within 1 in. of edges; sprinkle with meat mixture. Top with the mushrooms, pepperoni, ham, olives, mozzarella and shredded Parmesan., Bake until crust is golden brown and cheese is melted, 30-35 minutes.
