1 large tomatoes, roasted,peeled and chopped
1 small onion, chopped fine
1 clove garlic, minced
1 teaspoon vegetable oil
1 1/2 lbs cooked beef or 1 1/2 lbs cooked pork, shredded
1/2 teaspoon salt
12 corn tortillas, slightly warmed for easy rolling
1 cup vegetable oil
2 teaspoons milk
1/2 cup sour cream, thined with the milk
1 1/2 cups guacamole
shredded queso fresco or shredded farmer cheese
1/2-1 cup salsa
cilantro

Steps:

  • Puree the tomato, onion and garlic in a food processor.
  • Heat the oil in a medium skillet over medium high heat.
  • Cook tomato filling until thick and reduced-around 5 minutes.
  • Add the meat of choice and mix well.
  • Remove from heat and season with salt.
  • Heat the tortillas and place an equal amount of filling on each.
  • Roll and secure with toothpicks OR assemble all and chill seam side down.
  • Heat the oil over medium high heat and when hot begin frying tacos 4 at a time until golden on all sides.
  • If you are not using the toothpicks-I dont-place seam side down in the hot oil first.
  • Remove and drain-repeat and keep warm in the oven until done.
  • When done place 3 on each plate and top with Guacamole, cream and salsa.
  • Garnish with Cilantro and cheese.
  • Serve with refried beans and Cactus Salad!

1 pound ground beef
1 clove garlic, minced
salt and pepper to taste
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (16 ounce) package uncooked wide egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
2 ½ cups fat free milk
1 cup shredded American cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a large casserole dish.
  • In a skillet over medium heat, cook the ground beef until evenly brown. Drain grease. Mix in garlic, and season with salt and pepper. Stir in spinach, and cook until heated through. Stir in the uncooked egg noodles, and transfer to the prepared casserole dish. Mix in cream of mushroom soup and milk, and sprinkle with cheese.
  • Bake 45 minutes in the preheated oven, until bubbly.

Dad's Fried Tacos image

Love the deep fried crispy meat burritos from fast food, so I developed this recipe for making them even better at home.

Number Of Ingredients 12

1 lb ground beef
1/2 sweet onion, chopped
1 1/4 ounces taco seasoning
12 ounces large soft flour tortillas
6 tablespoons vegetable oil
1 large tomatoes, chopped
8 ounces green chili peppers
1 lb grated cheddar cheese
12 ounces sour cream
12 ounces refried beans
8 ounces taco sauce
8 ounces of spicy salsa

Steps:

  • Add ground beef and onion to frying pan, cook until browned, add taco seasoning follow directions of seasoning, drain, set aside to cool. Once cooled add tomato, chiles, half of the sour cream and salsa to taste.
  • Soften flour tortillas in microwave 2 at a time, lay on flat surface, on one half of the tortilla spread beans, a layer of meat mixture then sprinkle with cheddar cheese and taco sauce. Roll from loaded side towards empty side, about half way tuck ends in and continue to roll, (this forms a closed end to keep ingredients from spilling during frying).
  • Heat oil over medium high heat, add tacos lip side down, cook for 1-2 minutes, then turn 1/4 turn, continue until all sides are cooked. remove and drain, serve immediately, with sour cream and salsa.
