The potatoes in this recipe provide starch and don't add flavor. You won't even know there are potatoes in it. You will only taste a sweet confection. When adding the confectioners' sugar and peanut butter, be aware that the amounts are approximate. You may add more or less, depending on your tastes.

2 tablespoons mashed cooked potatoes
1 tablespoon butter
1 teaspoon milk
½ cup confectioners' sugar
1 cup peanut butter

Steps:

  • Mix together potatoes, butter or margarine, and milk. Add enough confectioners' sugar to make a stiff dough.
  • Roll out on a flat surface sprinkled with powdered sugar. Spread on a layer of peanut butter and roll up. Chill and slice.

4 cups confectioners' sugar
4 cups sweetened shredded coconut
3/4 cup cold mashed potatoes (without added milk and butter)
1-1/2 teaspoons vanilla extract
1/2 teaspoon salt
1 pound dark chocolate candy coating, coarsely chopped

Steps:

  • In a large bowl, combine the first 5 ingredients. Line a 9-in. square pan with foil; butter the foil. Spread coconut mixture into pan. Cover and chill overnight. Cut into 2x1-in. rectangles. Cover and freeze. , In a microwave, melt candy coating; stir until smooth. Dip bars in coating; allow excess to drip off. Place on waxed paper to set. Store in an airtight container.

CRUST:
1/2 cup (4 ounces) cold unsalted butter, cut into small cubes
1 1/2 cup all-purpose flour
2 teaspoons granulated sugar
1/2 teaspoon salt
1/3 cup cold buttermilk
FILLING:
2 cups mashed cooked sweet potatoes, from 2 medium sweet potatoes
3/4 cup brown sugar, packed
1 1/4 teaspoon ground coriander
1/2 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup (2 ounces) unsalted butter
1 1/4 cup (10 ounces) evaporated milk, divided
1/3 cup granulated sugar
3 large eggs
1 tablespoon pure vanilla extract

Steps:

  • To make the pie crust, in a medium bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and, using your fingers (or a potato masher), work the butter into the flour mixture. Quickly break the butter down into the flour mixture, some butter pieces will be the size of oat flakes, some will be the size of peas. Create a well in the mixture and pour in the cold buttermilk. Use a fork to bring to dough together. Try to moisten all of the flour bits. Add a bit more buttermilk if necessary, but you want to mixture to be shaggy and not outwardly wet. On a lightly floured work surface, dump out the dough mixture. It will be moist and shaggy. That's perfect. Gently knead into a disk. Wrap the disk in plastic wrap and refrigerate for 1 hour. Allowing the dough to rest in the refrigerator will help re-chill the butter and distribute the moisture. To roll out the pie crust, on a well floured surface, roll the crust 1/8 inch thick and about 12 inches in diameter. Transfer it to a pie pan. Trim the edge almost even with the edge of the pan Fold the edges under and crimp with your fingers or a fork. Cover it with plastic wrap and refrigerate it for a minimum of 30 minutes and a maximum of 3 hours. Preheat the oven to 375°F. Place a rack in the upper third of the oven. To make the filling, first peel the sweet potatoes. Dice the sweet potatoes into large, 3-inch chunks. Place potato pieces in a large pot and cover with cool water. Place over medium high heat and bring to a boil. Reduce heat to medium and simmer until the potatoes are tender throughout, about 20 minutes. Test the doneness of the potatoes using a thin knife. If the knife meets any resistance, simmer the potatoes a bit longer. Drain into a colander. In the same large pot place cooked potato pieces, the packed brown sugar, all of the spices, salt, butter, an and half of the evaporated milk. Cook on low flame, using a potato masher to mash the potatoes and they cook. Simmer for about 5 minutes. Make sure that the mixture is as smooth as possible. I used an immersion blender to completely smooth the mixture. Once mixture is smooth and fragrant, remove from fire and let cool in pot. In a medium bowl, whisk together the remaining evaporated milk, granulated sugar, eggs, and vanilla extract. Whisk well. Pour the egg mixture into the warm sweet potato mixture. Pour the prepared filling into the pie crust. Place on a baking sheet and bake for 10 minutes at 375°F. Reduce the heat to 325°F and cook until cooked through, about 45 to 50 minutes. To test the pie for doneness lightly shake the baking sheet. If the center of the pie has a wavy jiggle it needs more time in the oven. If the center of the pie has a lighter, more structured jiggle, it's done!

  • Place potato into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until very tender, about 30 minutes. Drain. Transfer potato to a large bowl and mash until smooth. Stir vanilla extract into mashed potato.
  • Stir confectioners' sugar gradually into mashed potato until consistency is like cookie dough; add more confectioners' sugar if candy is too runny.
  • Sprinkle a large piece of waxed paper with confectioners' sugar and roll potato candy out into a rectangle 1/4 inch thick. Spread peanut butter onto candy. Roll candy and peanut butter into a tight spiral; wrap candy log in waxed paper. Refrigerate until firm, about 1 hour. Cut into slices to serve.

Potato candy is a treasured memory of Christmas past. Grandma Shufelt, and then Aunt Claris made this rich treat only once each year. Was Dad ever surprised when I made it for him after my aunt passed. I'm the only family member who thought to ask for this 'secret' recipe.

3 medium potatoes
1 cup shredded coconut
1 cup chopped nuts (choice)
1 teaspoon vanilla
3 lbs powdered sugar
dipping chocolate (I use dark chocolate)

Steps:

  • Cook and mash potatoes.
  • While still warm, add the powdered sugar.
  • Mix well.
  • Add the coconut and nuts (I use peanuts).
  • Add vanilla.
  • Mix well.
  • Form into small shapes or balls and leave for a while to cool and set.
  • Melt dipping chocolate in a double boiler.
  • Using a toothpick, roll each ball into the melted chocolate.
  • Store in a cool place.

This is potatoe candy without the potatoes. This was my Dad's favorite during the Christmas holidays. Sweet and yummy!

Number Of Ingredients 6

1/2 cup butter (I use blue bonnet, not all butter will set up)
1 lb confectioners' sugar
1 teaspoon vanilla extract
2 tablespoons Karo syrup
2 tablespoons sweetened condensed milk
4 cups peanut butter (more or less depending on your taste)

Steps:

  • Mix all but peanut butter together.
  • (add more milk/ or sugar if you need. Should be like a doughy ball, but not real sticky).
  • On wax paper, sprinkle some of the sugar on it to help if from sticking, and roll out mixture. Make it as square as possible.( I roll mine out sort thin, but again this depends on your preference).
  • Smooth on peanut butter to desired thickness.
  • Start on oneside, and begin rolling it up. (It will look like a large log) Put sugar on your hands and keep putting on 'log' as you roll it up to help make it easier.
  • Take the 'log', and roll it up in wax paper, and then a kitchen hand towel (to help keep shape) and chill in the fridge (or freezer if you are in a hurry)The colder- the easier to slice.
  • Once cold, slice as desired thickness.
  • (put wax paper in between layers when stacking so the pieces don't stick together).
  • Keep refridgerated until time to serve.
