Dairy Free Cheesy Chicken, Broccoli, and Rice bake is not only perfect for dairy free peeps, but also Trim Healthy Mamas wanting cheesy comfort food in an E setting. The "cheese" sauce in this recipe is a Fuel Pull, making it a perfect companion to healthy carbs like brown rice. Be sure to plan ahead for optimum nutrition and have bone broth and soaked, brown rice available.

1 cup brown rice
2 cups water
1 tablespoon raw ACV or lemon juice

2 cups diced, cooked chicken breast
2 cups broccoli florets, fresh or frozen
1/2 teaspoon mineral salt, or to taste
1/2 teaspoon ground black pepper
1/4 teaspoon paprika

Steps:

  • 8 to 12 hours before preparing this recipe, combine 1 cup rice, 2 cups water, and 1 tablespoon raw ACV or lemon juice in a glass bowl or mason jar.
  • Cover and set in a the warmest spot in your kitchen for at least 8 hours.
  • After 8 to 12 hours, drain the water from the rice. Rinse for less sour flavor.
  • Cook the rice using your preferred method.
  • For stove top, combine rice with 2 cups of water and bring to a boil, cook until rice is tender. Add water if needed.
  • Reserve 2 cups for this recipe. (Remember to OMIT the peppers and carrots)
  • Preheat oven to 350 degrees.
  • Lightly grease or spray with nonsitck spray a 6 to 8 cup casserole or baking dish.
  • In a medium mixing bowl, combine cooked, soaked rice, chicken, broccoli, 2 cups "cheesy" sauce, salt, and pepper and mix well.
  • Pour into prepared baking dish.
  • Sprinkle with paprika.
  • Bake in preheated oven for 30 to 60 minutes* or until lightly browned on top and bubbly throughout.

This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

2 cups water
2 cups uncooked instant rice
2 (10 ounce) cans chunk chicken, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup butter
1 cup milk
1 (16 ounce) package frozen chopped broccoli
1 small white onion, chopped
1 pound processed cheese food

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
  • In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
  • Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

  • Preheat the oven to 350ºF. Grease an 8x8 or 9x9 inch baking dish with nonstick or olive oil spray. Set aside.
  • Add the olive oil to a large skillet set over medium heat. When hot, add in the onion and carrots and cook for about 3 to 4 minutes, until softened. Stir in the garlic and cook for 30 seconds, until fragrant.
  • Add in the broccoli and continue to cook for about 3 to 4 minutes, until crisp tender. Remove from the heat and add to a large bowl.
  • To the bowl, add the rice, chicken, sour cream, mustard, parsley, thyme, salt and pepper. Mix until well combined, then taste and season with additional salt / pepper as needed (I usually add a bit more salt but this will depend on your sour cream).

  • Bring chicken broth to a boil in a large pot then add rice. Cover then turn heat down to medium-low. When rice has 5 minutes left to cook add broccoli and green onions on top to steam.
  • Meanwhile, heat extra virgin olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and garlic powder, and then saute until no longer pink. Remove to a plate and set aside then very carefully wipe out skillet with a dry paper towel.
  • Turn heat down to medium then whisk together flour and 1/2 cup milk in a small bowl. Pour mixture into skillet then add remaining 1-1/2 cups milk. Cook mixture, stirring constantly, until thickened, 7-10 minutes. Remove skillet from heat then add 3/4 of the shredded cheese, sour cream, salt, pepper, and garlic powder, and stir until smooth.
  • Preheat broiler. Combine cooked rice and broccoli mixture with the cheese sauce and cooked chicken then scoop mixture into a nonstick sprayed 9x13 baking dish and top with remaining cheese. Broil until cheese is melted then let casserole rest for 5 minutes before serving.
