DAIRY-FREE COCONUT FRENCH TOAST
This is a dairy-free, rich and hearty version of French toast that is vegan. It uses coconut milk instead of eggs and milk. This recipe may be found on my blog, Olives for Dinner. If you like sweet French toast, cover in Earth Balance®, powdered sugar, and pure maple syrup. If you like a more savory French toast, cover in Earth Balance®, a touch of powdered sugar, and some nutritional yeast.

Steps:
- Empty coconut milk into a medium bowl. Whisk until well emulsified. Add soy milk, garbanzo bean flour, and cornstarch and stir until the ingredients have blended together. Empty the mixture into a glass baking dish large enough for all of the bread pieces to fit.
- Dunk the bread in the mixture, making sure all pieces are well covered with the mixture. Cover with plastic wrap and place into the refrigerator, 8 hours to overnight.
- Heat 2 tablespoons olive oil in a large, flat saute pan or griddle over medium heat for 2 to 3 minutes. Add slices of French toast, working in batches if needed, and cook until golden brown, about 10 minutes. Flip and cook the other side for 10 minutes more. Increase heat to medium-high and flip again; cook until nicely browned, about 5 minutes more per side.

DAIRY-FREE APPLE FRENCH TOAST
These are not your average Eggo® French toast. This is spiced apple French toast, dairy free. Very easy and quick to prepare. Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
- Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.
- Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.
- Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side. Transfer bread to the prepared baking sheet.
- Bake in the preheated oven until golden brown, about 4 minutes.
- Place 2 slices of bread onto each serving plate and divide topping among servings.

YUMMY FRENCH TOAST CASSEROLE - EGG-FREE, DAIRY-FREE
For the food-allergic people in your life, egg-free, dairy-free French toast casserole! Crispy on the outside, chewy on the inside, it's nice as a brunch item. This is our version of a recipe from a Food Allergy and Anaphylaxis newsletter ( http://www.foodallergy.org/ ). The original recipe called for unflavored rice milk, 1/4 tsp vanilla extract, and milk-free, soy-free margarine, so it can be converted to a soy-free dish as well, though we haven't tried it. I think the critical thing is using bread with a nice, crisp texture; it wouldn't be as good with bread that was soft and squishy!

Steps:
- Pre-heat oven to 400°F.
- Spray a 9x13" baking dish with cooking spray (note: do _NOT_ use butter-flavor cooking spray! This contains dairy ingredients).
- Combine melted margarine, vanilla soy milk, corn syrup, 1/2 tsp cinnamon, salt, and molasses in a large bowl.
- Fold bread into mixture so that it absorbs liquid evenly. Place in prepared baking dish, and cover with aluminum foil.
- Bake 15 minutes.
- Remove foil, and bake 15 minutes more.
- Sprinkle 1/2 tsp cinnamon over the top.
- Top as desired - allergen-safe syrup, fruit, or powdered sugar.

FRENCH TOAST [GLUTEN-FREE, LACTOSE & CASEIN FREE]
A delicious french toast recipe designed for use with gluten-free breads. It is lactose and casein free if you use ghee, or completely dairy-free if you use a dairy-free margarine (such as "Becel Vegan"). Serve with maple syrup and fresh fruit. I made this with Food For Life's Brown Rice Bread but you can use it with any store-bought or homemade GF bread. Bon appetit!

Steps:
- Whisk together all ingredients except ghee/butter/margarine and bread in a pie pan or small baking dish until thoroughly blended.
- Heat ghee, butter or margarine in non-stick pan or griddle over medium-high heat.
- If you're using a dense bread, such as those from Food for Life, Soak for 3-5 minutes on each side.
- If you're using a homemade bread or a softer or more crumbly bread, soak for only 1-2 minutes on each side.
- Using a fork or tongs, remove each slice of bread from the liquid and allow excess liquid to drip off.
- Place in hot ghee/butter/margarine and cook on each side until browned.
- Serve immediately with maple syrup, jam and/or fresh fruit.

- Slice bread into 4 slices. In a deep plate add rice milk and mix in the vanilla extract. In a separate deep plate beat the egg.
- Soak bread slices first in rice milk and then in the beaten egg, turning them over to soak both sides.
