CRACKED CANOE DANISH FONDUE

A delicious Fondue!! I found this in a regional magazine - Saltscapes - Love It!!!! I hope you enjoy it as much as we did -

4 slices bacon, finely chopped
1 cup Spanish onion, minced
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup cracked canoe lager beer
1 cup havarti cheese, grated
1 cup gouda cheese, grated

Steps:

  • Place a medium saucepot over medium heat and add the chopped bacon.
  • Render the fat from the bacon, crisping it gently.
  • Add onions to sauté and the butter to melt and brown slightly.
  • Now add the flour and stir to combine and make a smooth roux.
  • Add the beer a little at a time, whisking to ensure that no lumps form.
  • Add the grated cheese until melted, transfer to a fondue pot and serve with crusty bread and sweet and sour gherkins - so delicious!

2/3 cup light corn syrup
1/2 cup heavy whipping cream
8 ounces German sweet chocolate, chopped
Shortbread cookies and/or assorted fruit

Steps:

  • In a microwave-safe bowl, combine corn syrup and cream. Cover and microwave on high for 2 to 2-1/2 minutes or until mixture just comes to a boil, stirring twice. Stir in chocolate until melted. Transfer to a fondue pot and keep warm. Serve with cookies and/or fruit.
