CRACKED CANOE DANISH FONDUE
A delicious Fondue!! I found this in a regional magazine - Saltscapes - Love It!!!! I hope you enjoy it as much as we did -

Steps:
- Place a medium saucepot over medium heat and add the chopped bacon.
- Render the fat from the bacon, crisping it gently.
- Add onions to sauté and the butter to melt and brown slightly.
- Now add the flour and stir to combine and make a smooth roux.
- Add the beer a little at a time, whisking to ensure that no lumps form.
- Add the grated cheese until melted, transfer to a fondue pot and serve with crusty bread and sweet and sour gherkins - so delicious!
