Steps:

  • Combine all ingredients in a large bowl, sifting the cocoa powder. Whisk to combine.
  • Store in a quart size glass jar, such as a Mason jar.
  • Boil 8 oz of hot water. Carefully add 3-4 Tbsp of keto hot chocolate mix powder to the water and mix to combine.

1 Cup Hersey's Special Dark Cocoa Powder - $2.68, prices may vary by store
2 Cups Non Dairy Creamer, at least 11 oz. - Walmart has a brand that is $1
1 Cup Sugar
A tiny dash of salt, about 1/4 tsp.
This recipe made a 1 quart jar of mix and we still have plenty ingredients left over to make more.

Steps:

  • In a large bowl combine all the ingredients and mix well. If you have a sifter use it, if not that is ok. I suggest having a cup of hot water on hand so you can test it out before you store it. This way you can see if you want to alter the recipe (more sugar etc) Remember that this is Special Dark cocoa so it will be stronger, more bitter. You can of course use regular cocoa, just up the amount to 2 Cups. Funnel into a Mason jar or air tight storage container.
  • To Serve : Add 2 tablespoons to one standard size ( standard size is classified as 10 oz. ) mug of hot boiling water.
  • Leave room in the mug to add more mix till it's just as you like it.

1 cup Dutch-process cocoa powder
2 teaspoons cornstarch
1 teaspoon fine salt (see note)
Pinch ground cayenne pepper, optional, plus more to taste
Hot water, for serving

Steps:

  • Heat oven to 300ºF. Line a half sheet pan with parchment paper.
  • Spread milk powder in a thin, even layer the prepared sheet pan and bake until golden brown and crumbly, about 20 minutes. Remove from oven and cool. Odds are good the milk powder will be stuck together in lumps and if that's the case, simply pulse it in a food processor a few times. (Toasting the milk powder is technically optional but personally, I think the flavor is worth it.)
  • Transfer the toasted and cooled milk powder to an airtight plastic container and add the sugar, cocoa powder, cornstarch, fine salt, and cayenne, if using. Cover and shake to thoroughly combine. Tightly sealed, the powder will keep nearly indefinitely in the pantry.
  • For one serving, heat 3/4 cup (6 fluid ounces or 175 ml) of water to a boil, then remove from the heat. Spoon 1/4 cup of the cocoa mix into a heavy mug and whisk in 1/4 cup (2 ounces or 60 ml) of the water to create a paste. Slowly whisk in the remaining hot water. Let sit about 30 seconds because otherwise you'll scald your face while attempting to chug the deliciousness.

22 ounces semisweet chocolate, such as Baker's Chocolate, finely chopped
1/2 cup baking cocoa
1/2 cup nonfat dry milk powder
1/4 cup confectioners' sugar
6 tablespoons vanilla marshmallow bits (not miniature marshmallows)
Optional: sprinkles, colored sanding sugar, melted candy melts

Steps:

  • Place chocolate in a microwave-safe bowl. Microwave, uncovered, on high for 1 minute; stir. Microwave, stirring every 30 seconds, until chocolate is melted and smooth, 1-2 minutes longer. Chocolate should not exceed 90°. , Add 1 tablespoon melted chocolate into a silicone sphere-shaped mold (2-1/2-in. diameter). Brush melted chocolate evenly inside molds, all the way to edges, rewarming melted chocolate as needed. Refrigerate molds until chocolate is set, 3-5 minutes. Brush a thin second layer of chocolate in molds. Refrigerate until set, 8-10 minutes. Place remaining melted chocolate into a piping bag fitted with a small round decorating tip; set aside., Remove chocolate spheres from molds. In a medium bowl, whisk together baking cocoa, milk powder and confectioners' sugar. Place 3 tablespoons cocoa mixture into half the chocolate spheres. Top with 1 tablespoon marshmallow bits. , Pipe a small amount of melted chocolate on edges of remaining spheres; carefully adhere to filled halves, pressing lightly to seal, using additional melted chocolate if necessary. If desired, decorate with optional ingredients. Refrigerate until set. Store in a tightly sealed container., To prepare hot chocolate: Place hot chocolate bomb in a mug; add 1 cup warm milk and stir to dissolve.
