1 cup unsalted butter (melted)
2 tablespoons vegetable oil
1 1/4 cups granulated sugar
1 cup light brown sugar (packed)
4 large eggs (room temperature)
½ teaspoon salt
½ tablespoon vanilla extract
1 cup all-purpose flour
1 cup unsweetened cocoa powder
8 ounces chocolate chips

Steps:

  • Preheat oven to 350°F and grease an 8x12-inch baking pan, then line it with parchment paper and set aside.
  • Combine oil, melted butter, and sugars in a medium-sized bowl, then beat in the vanilla and eggs for 1 or 2 minutes until the batter lightens in color.
  • Sift in cocoa powder, flour, and salt, then fold in the dry ingredients into the wet ingredients until just combined. Be careful not to overbeat.
  • Add ¾ of the chocolate chips into your batter, and then pour the batter into the baking pan and smooth the top. Spread the remaining chocolate chips over the top and bake for 25 to 30 minutes. An inserted toothpick should come out a little dirty.
  • Let cool in the pan for 15 to 20 minutes, and after that, remove from the pan and allow them to cool to room temperature before slicing. Enjoy!

120g of good quality Dark Chocolate (
200g of Butter
3 Medium Eggs
400g of Caster Sugar
165g Plain Flour
20g Cocoa Powder
1tsp of Baking Powder
3tsp Vanilla Extract (or Vanilla Paste)
60g bar of White Chocolate (chopped)

Steps:

  • Preheat oven to 180C/fan 160C/gasmark 6.
  • Melt the chocolate and butter together over hot water (can be melted in the microwave if you're in a hurry).
  • Beat together the eggs, sugar and vanilla extract/paste, add to the melted chocolate and butter, mix.
  • Sift together the flour, cocoa and baking powder, then fold into the rest of the mix.
  • Add the chopped white chocolate pieces and pour into a lined and greased baking tray.
  • Cook for 22 minutes (the knife should come out clean when cooked), allow to cool, cut into 12 and serve.

½ cup heavy whipping cream

Steps:

  • Preheat oven to 325 degrees F. Line 13x9-inch baking pan with foil; lightly grease.
  • Heat morsels, sugar, butter and water in medium saucepan over low heat, stirring constantly, until chocolate and butter are melted. Remove from heat. Stir in eggs, one at a time, until blended. Stir in vanilla extract. Add flour and salt; stir well. Pour into prepared baking pan.
  • Bake for 30 to 35 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Holding sides of foil, lift brownie from pan to cutting board. Carefully remove foil and return brownie to board. Cut away 1/4-inch from each side. Cut out 15 cakes with cookie cutter, twisting gently to remove. For easier cutting, cutter can be wiped clean and/or greased lightly between cuttings. Scraps can be saved for another use, such as an ice cream topping, milkshakes or a snack. Serve cakes with Dark Chocolate Ganache.
  • For Dark Chocolate Ganache: Heat cream in 2-cup microwave-safe glass measure or small bowl on high (100%) power for 30 to 40 seconds. Slowly add morsels. Cover with plastic wrap and let stand for 5 minutes. Stir well. Refrigerate any remaining ganache.

I am a huge fan of dark chocolate. There are so many choices these days when going to select chocolate. I use the chocolate with the highest percentage of cacao I can find. We also like to add a 1/2 cup of walnuts to the batter. Drizzle some melted chocolate on top of the brownies for a special presentation. Choose what you like the best!

10 ounces dark chocolate, broken up and divided, 6 oz and 4oz
1 cup sugar
1/3 cup butter, cut into pieces
2 tablespoons water
2 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 F and grease an 8x8 baking pan.
  • Heat 6 oz of chocolate, butter, sugar, and water over low heat until melted and combined. Stir constantly. I do this with a small glass bowl placed over a small sauce pan which contains water to steam the bowl from underneath. Some like to do this step in the microwave. Stir every 30 seconds if you choose the microwave method and watch carefully toward the end so the chocolate doesn't burn.
  • Pour this mixture into a larger bowl and cool slightly. You don't want scrambled eggs in your brownies!
  • When chocolate mixture has cooled enough add in the eggs one at a time mixing thoroughly.
  • Stir in vanilla, flour, and salt. Mix well.
  • Add remaining 4 oz of chocolate and nuts if desired.
  • Pour batter into prepared baking pan and cook for 30 to 35 minutes. Cool before cutting.
