DARK CHOCOLATE PROTEIN BALLS (NO BAKE, LOW CARB)



Dark Chocolate Protein Balls (No Bake, Low Carb) image

Healthy dark chocolate protein balls made with pea protein and dipped in dark chocolate. Paleo, vegan and nut free.

Number Of Ingredients 9

1/4 cup Nuzest vanilla pea protein (28g)*
1/4 cup dutched cocoa power (22g)
1/8 tsp salt
1/2 cup sunflower seed butter
1 tsp vanilla extract
3 Tbsp water (more or less as needed)**
3-4 oz dark chocolate
1 tsp coconut oil
flaked sea salt

Steps:

  • In a small mixing bowl, combine all dry filling ingredients. This includes the protein powder, cocoa powder and salt.
  • Mix in the sunflower seed butter and vanilla extract. Add water as needed. Mix first with a spatula, then use your hands to knead the dough. It will have a playdough-like texture.
  • Roll the dough into balls about 1 tablespoon in size. Place the balls on a small baking sheet or large plate.
  • Freeze the balls for 30 minutes.
  • In a small sauce pan, melt the dark chocolate and coconut oil over low heat, stirring frequently.
  • Dip the balls into the dark chocolate and place on a sheet of parchment paper.
  • Drizzle any remaining chocolate over the balls and top with flaked sea salt.
  • Store in fridge or freezer.

Healthy, homemade dark chocolate protein bars! These no bake Paleo and Vegan protein bars are low in sugar, great for snacking and tasty enough for dessert.

28g cacao butter, melted*
1/2 cup sunflower seed butter
1/4 cup water (room temperature)
1 Tbsp maple syrup
1/2 tsp vanilla extract
1/2 cup Nuzest chocolate pea protein** (45g)
1/4 cup cacao powder (20g)
1/8 tsp salt
1/4 cup dark chocolate chips
1 tsp coconut oil

Steps:

  • Line an 8" x 4" baking pan with parchment paper (aluminum foil works too). Set aside.
  • Combine the melted cacao butter***, sunflower seed butter, water, maple syrup and vanilla. Whisk until smooth.
  • Add in the chocolate protein powder, cacao powder and salt. Mix with a spatula until well combined.
  • Firmly press the dough into the lined baking pan.
  • Freeze for 20 minutes, or until set.
  • Remove the bars from the freezer and cut into 8 protein bars****
  • For the chocolate drizzle, melt the chocolate chips and coconut oil in a small sauce pan, over low heat. Drizzle the melted chocolate over the protein bars.
  • Place back in the freezer a few minutes for chocolate to fully set.

  • Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides like handles.
  • To the bowl of a food processor fitted with a steel blade, add the peanut butter, dates, and rolled oats. Pulse several times, until the mixture breaks down and the ingredients begin to incorporate with one another. Scrape down the bowl then add the chia seeds, protein powder, and 2 tablespoons milk. Pulse until all ingredients are well combined. Depending upon your food processor, this may take a few minutes.
  • Check the consistency of your dough. When you pick up a small handful of it and squeeze, it should hold together and resemble cookie dough. If it is too dry, continue pulsing in milk, 1 tablespoon at a time, until you reach the right consistency. Transfer the mixture to a mixing bowl. Add the chocolate chips and with a spatula (or your fingers), stir to combine the chips and moisten any bits of dough that the food processor didn't incorporate evenly.
  • Transfer mixture into the prepared pan and press it into an even, flat layer. Transfer the pan to the freezer for 15 minutes or the refrigerator for 1 hour, until the bars firm up.

  • Line an 8x8-inch baking pan with parchment paper (or plastic wrap) and set aside (adjust number/size of pan if altering batch size).
  • Pop* your amaranth by heating a large pot over medium-high heat. You'll know it's ready to start adding amaranth when a drop of water disperses quickly and balls up.
  • Add about 2-3 Tbsp amaranth at a time and immediately cover. Shake the pot back and forth over the heat (wearing oven mitts is helpful) to move the grain around. It should start popping within 1-3 seconds, and be done popping at the 10-second mark. Be sure to pull them off at around 10 seconds or they'll start to burn.
  • Not every single grain will pop (that's OK!). Very quickly empty into a mixing bowl. This may take a couple tries to dial in your heat and not burn them - it took me 4 tries! But then you'll hit your stride.
