1 (12.3-ounce) package silken tofu, drained
3 ounces high quality bittersweet chocolate, finely chopped
1/4 cup unsweetened cocoa powder, preferably Dutch-processed
1/4 cup water
1 tablespoon brandy
1/2 cup plus 1/2 teaspoon superfine sugar
1/4 cup heavy cream
1 1/4 teaspoons shaved chocolate

Steps:

  • In a blender or food processor, puree the tofu until it is smooth.
  • Put the chopped chocolate, cocoa powder, 1/4 cup water and brandy in a saucepan or heat-proof bowl fitted over a pot containing 1-inch barely simmering water. Stir frequently, until melted and smooth. Remove from heat. Mix in 1/2 cup of sugar, a little at a time, until smooth.
  • Add the chocolate mixture to the tofu and puree until smooth and well blended. Spoon the mousse into serving dishes, cover and refrigerate for at least 1 hour.
  • Whip the cream with a beater. When the cream is almost completely whipped, add the remaining 1/2 teaspoon of sugar and finish whipping. Top each serving with a dollop of whipped cream and a sprinkle of chocolate shavings and serve.

5 1/4 ounces bittersweet chocolate, coarsely chopped
14 ounces cold heavy cream
3 large egg whites
1-ounce sugar
Sweetened whipped cream, for garnish, optional
Shaved bittersweet chocolate, for garnish, optional

Steps:

  • Place chocolate in a large bowl set over a bain marie or in a double boiler at a low simmer. Stir chocolate until melted. Turn off the heat and let stand.
  • Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.
  • Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set. Serve in goblets topped with more whipped cream and shaved chocolate, if desired.

1 tablespoon butter
2 tablespoons water
⅛ teaspoon ground dried chipotle pepper

Steps:

  • Bring a saucepan of water to a simmer over low heat. Place chocolate, butter, 2 tablespoons water, ground chipotle pepper, and salt in a heatproof bowl; set bowl over the simmering water. When the butter melts, whisk the chocolate mixture gently until smooth and shiny. Set aside to cool for a few minutes.
  • Whisk egg yolks, 2 tablespoons water, and sugar in another heatproof bowl over the same pan of simmering water until egg yolk mixture is foamy and hot to the touch, about 3 minutes. Pour hot egg mixture into warm chocolate mixture, whisk until smooth, and set over a bowl of ice to chill. Whisk constantly until mixture has cooled to room temperature or slightly cooler.
  • Pour 1/2 cup and 1 tablespoon cold cream into a chilled metal bowl; whisk until cream holds soft peaks. Place about half the whipped cream into the cooled chocolate mixture; gently fold the cream into the chocolate. Repeat with remaining half of whipped cream, folding gently until nearly all the streaks have disappeared. Divide mousse into 4 6-ounce ramekins.
  • Cover each ramekin with plastic wrap and refrigerate at least 4 hours (up to overnight) before serving.

410g can prunes , in apple juice
1 tbsp brandy (optional)
50g dark chocolate (70% cocoa solids), broken into pieces
grated zest of ½ orange
300g natural Greek-style yogurt
1 tbsp pistachio nuts, roughly chopped

Steps:

  • Drain off and reserve the juice from the prunes, then press each prune gently between your fingers to slip out the stone. Tip the prunes with the apple juice into a food processor or blender (there should be no more than 100ml juice). Add the brandy, if using, then process the fruit to a purée.
  • In a small bowl, microwave the chocolate on High for 1-2 mins until melted. Stir in the orange zest and allow to cool slightly. Divide the yogurt between two bowls and stir the melted chocolate into one of them.
  • Layer alternate spoonfuls of the three mixtures in four dessert tumblers, starting with a layer of prune purée, then natural yogurt followed by the chocolate yogurt mix. Finish with prune purée and top this with natural yogurt. If you like a marbled effect, swirl the layers together using a skewer.
  • Chill in the fridge for at least 1 hr before serving, then scatter over the pistachio nuts to decorate.

1/2 cup Armagnac
1 to 2 tablespoons lemon juice
2 to 3 tablespoons sugar (or to taste)

Steps:

  • Simmer the prunes, covered, in the tea and Armagnac with the lemon juice and sugar until soft (about 15 to 20 minutes). Puree in the food processor and add more sugar if necessary. Cool.
  • Whip the heavy cream and fold it into the prunes.
  • Whip the egg whites and fold them into the prunes. Pour into a serving dish or individual dishes and chill for one to two hours before serving.

I have been on the prowl for the just right deep smooth seductive prune mousse - coupled with Armagnac & just a bit of deep dark chocolate. Mmmmm! This isn't for the faint of heart! Use un-pitted prunes if you can manage to find them and pit them after they've simmered and cooled. Otherwise use pitted but simmer gently! Adapted from NYT 06/10/08. Time does not include 2-3 hours chill time in the refrigerator.

1/2 lb prune
1 1/2 cups brewed tea (preferably orange pekoe)
1/2 cup armagnac
2 tablespoons lemon juice
2 tablespoons sugar (or to taste)
1 cup heavy cream
2 egg whites
1 ounce extra dark chocolate, finely grated

Steps:

  • Place prunes, tea, & sugar in a nonreactive saucepan with a cover. Gently simmer covered 10 minutes, add Armagnac & simmer uncovered for 5 minutes more. Add lemon juice. Set aside 4 prunes to drain for garnish.
  • Puree rest of the prunes in food processor with 1/2 of the simmering liquid. Add more liquid by the tablespoonful if needed to keep puree from becoming too thick. You are shooting for a loose but jammy (not liquidy) consistency. Taste & add more sugar if necessary. Cool to room temp then chill in fridge 30 minutes to 1 hour - do not let get too thick to fold in whipped cream.
  • Whip the heavy cream to stiff peaks and fold it into the prune puree.
  • Whip the egg whites until sharp peaks form (but not dry) and fold them into the prunes. Fold the grated chocolate into mousse with the egg whites.
  • Pour into tall champagne flutes, dust with cocoa powder, garnish with reserved prune and chill for two hours before serving.

8 ounces dark chocolate (highest cocoa content possible)
4 eggs, sparated
6 sponge cakes, cut to the size of the ramekins
6 tablespoons brandy
2 tablespoons kirsch (or cherry brandy or black cherry juice, or fresh orange juice)
6 ounces dark mixed fruit (rasberrys, blackcurrants, mulberries, blackberries, etc)
2 tablespoons water
3 tablespoons icing sugar
4 tablespoons whipped cream (Optional, to serve)
grated chocolate (, Optional, to serve)
1 tablespoon cornflour (or agar agar, not sure on the proportion though)

Steps:

  • In a heavy based pan place the fruit, the water and 2 Tbsp Brandy (or juice, if you prefer).
  • Heat until just under boiling, add sugar and Cornflour, stir and boil for 5 minutes.
  • Reduce heat if too much liquid is evaporating.
  • In 4 small Ramekin dishes, place the sponge cake and drench in brandy (Use a fresh fruit juice if you dont want to use alcohol, but use less).
  • Cover with the"jam" you have just made.
  • Set aside and refrigerate when cool.
  • Break chocolate into a glass bowl and heat over a Bain Marie until it melts, remove from heat and place on a damp cloth so you can beat the mixture without it slipping around.
  • Beat the egg yolks and add them to the chocolate, beating thoroughly until it is homogenized.
  • Add kirsch, brandy or juice and beat again.
  • Leave to cool for 15 minutes.
  • Beat up the egg whites till the soft peak stage, then fold them into the chocolate mixture.
  • Spoon the mousse over the chilled sponge and jam in the ramekins.
  • Cover with foil and chill for at least 2 hours (or if your in a hurry shove'em in the freezer for 20 minutes and then put them in the fridge, not as nice but ok in an emergency).
  • To serve add a dollop of whipped cream and some shaved chocolate.

¼ cup granulated sugar
1 ¾ cups heavy cream, chilled

Steps:

  • Fill a medium saucepan halfway with water and bring to a simmer over medium heat. Set a heatproof bowl on top of the saucepan, making sure the bottom of the bowl is not touching the water. Add the chopped chocolate to the bowl, stirring occasionally with a rubber spatula until completely melted, 3-4 minutes. Turn off the heat and let sit until ready to use.
  • Make the salted caramel: Evenly sprinkle the sugar over the bottom of a small skillet or saucepan and cook over medium heat, swirling the pan occasionally, but not stirring, until it starts to turn amber brown, 10-12 minutes. Add the butter and whisk until incorporated, 1-2 minutes. Slowly drizzle in the heavy cream and whisk to combine. Boil for 1 minute, then remove the pan from the heat. Whisk in the vanilla and flaky salt.
  • Make the mousse: In a medium bowl, whip the egg whites with an electric hand mixer on medium-high speed until foamy, 1-2 minutes. Gradually add the sugar and continue whipping until stiff peaks form, 5-6 minutes.
  • In a separate medium bowl, whip the heavy cream with the hand mixer on medium-high speed until soft peaks form, 4-5 minutes.
  • Add ¼ cup of the salted caramel to the melted chocolate and stir to combine. Reserve remaining salted caramel for garnish. Add the whipped egg whites to the chocolate mixture and gently fold with a rubber spatula to combine.
