FAMOUS DAVE'S COUNTRY ROASTED CHICKEN

Steps:

• Mix ingredients for chicken seasoning.
• Store in a covered container.
• Place the chicken in a 2 gallon sealable plastic bag.
• Pour a mixture of the Italian dressing and lemon juice over chicken, turning to coat.
• Marinate in refrigerator for 3 hours, turning every 30 minutes.
• Remove chicken from bag and drain.
• Season generously with 1/3 cup Roast Chicken Seasoning.
• Preheat the oven to 375.
• Arrange chicken on a rack in a baking pan.
• Tent loosely with foil.
• Bake 1 1/2 to 2 hours or until a meat thermometer registers 170 to 180F, removing the tent 20 minutes before the end of baking process.
• Let stand for 10 minutes before carving.

• Roast Chicken Seasoning: Mix all ingredients. Store in a covered container.
• Roast Chicken:.

• Bake 45 minutes or until a meat thermometer registers 175 degrees.

DAVE'S MOCHA CHICKEN

Steps:

• In a medium, nonreactive container, mix the soy sauce, brown sugar, sherry, coffee, and 2 tablespoons olive oil. Place chicken legs in the mixture. Cover, and marinate in the refrigerator 3 to 4 hours.
• Remove chicken from the marinade mixture, and set aside. Transfer the marinade to a medium saucepan, and bring to a boil.
• Heat remaining olive oil in a medium skillet over medium-high heat. Season chicken with pepper, and brown on all sides in the skillet. Pour the hot marinade mixture into the skillet. Reduce heat, and simmer 30 minutes, or until chicken is no longer pink and juices run clear. Cool slightly before serving.

DAVE'S SPECIAL CHICKEN

Steps:

• Cut chicken breast into chunks. Cook chicken over medium heat in oil till chicken is done. Boil rice bags as directed on box.
• After chicken is done, add marinara sauce. Let simmer for 5 minutes. Add rice and mozzarella cheese.
