LEFTOVER THANKSGIVING PANINI

Steps:
- Spread the mustard on both slices of bread, then lay a slice of cheese on each piece. On one slice, arrange the turkey and the cranberry sauce. On the other slice, lay on the dressing and spoon the gravy over the top.
- Carefully unite the two halves into one sandwich, then spread the top side of the bread with 1 tablespoon of the butter.
- Invert the sandwich, butter-side down, onto a hot panini maker (or a grill pan or skillet over medium-low heat; see Cook's Note). Spread the top with the remaining 1 tablespoon butter.
- Close the panini maker and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted. (If using a grill pan or skillet, flip the sandwich halfway through to grill on the other side.)
- Pull the sandwich off the heat and slice it in half--this sandwich is to die for!

Steps:
- 1. Mix dijon mustard and apricot preserves together; set aside.
- 2. Mix cranberry sauce and chopped pecans; set aside.
- 3. Spread all bread slices on one side with dijon mustard and apricot mixture; top with slice of swiss cheese, shredded turkey, cranberry mixture, another slice of swiss and top with other bread with dijon/apricot side down.
- 4. Slather both sides of each sandwich generously with softened butter and grill in a panni press or in a heavy skillet, pressing with a spatula as they cook. Slice and serve.
BLACK FRIDAY TURKEY AND STUFFING PANINI
It's Black Friday, the day after Thanksgiving. You've got a fridge full of leftovers, and you're famished after a morning of door-buster sales. I promise you this hot and toasty sandwich will really hit the spot! I recommend #141048 for the stuffing!

- Pre-heat panini grill to medium-high. Warm leftover turkey and stuffing in the microwave.
- Butter 1 side of each slice of bread, lay butter-side down on your work surface.
- On one slice of bread, layer ingredients in the following order: 1 slice cheese, turkey, stuffing, black pepper (if desired), 1 slice cheese, top piece of bread, with buttered sides facing out.
- Place assembled sandwich on the hot grill, and close, pressing down for about a minute to consolidate ingredients. Continue cooking for a few minutes, until golden brown.
