1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 cup milk
1 teaspoon dried onion flakes
2 1/2 cups cubed, fully cooked ham
1 cup frozen peas, thawed
2 hard-cooked eggs, chopped
pastry shells (8 in.)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth.
  • Gradually add milk and onion; bring to a boil.
  • Cook and stir for 2 minutes or until thickened.
  • Stir in ham, peas, and eggs.
  • Pour into an ungreased 8 inch square or an 11x7x2 inch baking dish.
  • On a floured surface, roll pastry to fit top of dish; place over filling.
  • Seal and flute edges; cut slits on top.
  • Bake at 425 degrees for 25 minutes or until crust is golden brown and filling is bubbly.

2-1/2 cups cubed fully cooked ham
1 cup frozen peas, thawed
2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Lightly sauteed sweet onions and deli ham flavour a very simple quiche.

1 Tenderflake® Frozen Deep Dish Pie Shell
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium Vidalia onion, thinly sliced
5 ⅓ ounces Maple Leaf® Deli Ham, cubed into 1/2-inch
3 large eggs eggs, beaten
3 tablespoons milk
3 tablespoons table cream (18%)
1 tablespoon finely chopped parsley
1 pinch salt and pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Prepare pie shell according to package directions. Remove from oven and set aside to cool.
  • Heat olive oil and butter in a large skillet. Add onions and cook over medium-low heat until softened, about 15 minutes. Add ham and cook for an additional 5 minutes. Remove from heat.
  • Whisk together eggs, milk, cream and parsley in a medium bowl. Season with salt and pepper.
  • Spread the onion and ham mixture over the bottom of the baked piecrust. Pour egg mixture over top.
  • Bake for 40-50 minutes or until the filling has set. Cool for 10 minutes before slicing. Serve warm.

1-1/2 pounds potatoes, peeled and cubed
3 garlic cloves, minced
1/4 cup milk
1 tablespoon butter
1/4 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
FILLING:
1 cup sliced fresh mushrooms
1 cup sliced carrots
1/2 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon butter
2 cups cubed cooked venison
1-1/2 cups beef broth
1/4 teaspoon dried thyme
1/8 teaspoon ground nutmeg
3 tablespoons all-purpose flour
3 tablespoons cold water
1/3 cup shredded cheddar cheese
2 tablespoons minced parsley

Steps:

  • Cook potatoes in boiling water until tender; drain and mash. Add the garlic, milk, butter, rosemary, salt and pepper; set aside. , In a large skillet, saute mushrooms, carrots, onion and green pepper in butter until tender. Add the venison, broth, thyme and nutmeg. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until meat and vegetables are tender., Combine the flour and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to a greased 2-qt. baking dish. Spread mashed potatoes over the top. , Bake, uncovered, at 350° for 30-40 minutes or until bubbly. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with parsley.

1 1/4 cups minced cooked ham (packed into the measuring cup)
1 cup swiss cheese, shredded (packed into the measuring cup)
2 -4 tablespoons minced onions (or fresh dill)
3 eggs
1 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne pepper (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Combine ham, cheese and onions or dill and place in pie shell.
  • Beat eggs, milk, salt, pepper, and cayenne until frothy and pour over ham mixture.
  • Bake in preheated 375 degree oven for 45-50 minutes, until set and golden brown.
  • Let stand 10 minutes before serving.
  • Makes 8 servings.
