Best Ever Jalapeno Poppers image

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

2 jars (12 ounces each) whole jalapeno peppers, drained
1 jar (5 ounces) olive-pimiento cheese spread
3/4 cup all-purpose flour, divided
6 tablespoons cornmeal, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup buttermilk
Oil for deep-fat frying

Steps:

  • Cut off stems and remove seeds from peppers. Stuff with cheese spread. Refrigerate for at least 2 hours., In a shallow bowl, combine 1/4 cup flour, 2 tablespoons cornmeal, salt, pepper and buttermilk until smooth; set aside. In another shallow bowl, combine remaining flour and cornmeal. Dip stuffed peppers into buttermilk batter, then dredge in flour mixture., In a deep cast-iron or electric skillet, heat oil to 375°. Fry peppers, a few at a time, until golden brown. Drain on paper towels.

1 cup flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
2 eggs, slighty beaten
1 cup beer
1/2 quart vegetable oil
8 -10 medium jalapeno peppers (sliced in half or quarters)

Steps:

  • In a bowl mix together flour, salt, pepper, chili powder, garlic powder, eggs and beer together until well combined.
  • Heat vegetable oil in a deep fryer or a large heavy pot to 365 degrees.
  • Dip/coat the jalapeno slices into the batter, then carefully drop into the hot oil.
  • Fry until browned (the slices will float to the surface when fully cooked, they should be browned and crispy).

  • Mix flour, salt, black pepper, red chili powder, garlic powder, eggs and beer together in a bowl.
  • In a deep fryer or large pot heat oil to 365 degrees F (180 degrees C).
  • Dip each jalapeno slice in the batter.
  • Place battered jalapenos in the deep fryer.
  • The jalapenos are fully cooked when they float to the surface of the oil.
  • They should be golden brown and crispy.
  • Serve with Ranch dressing as an appetizer or on nachos or hamburgers.

¾ cup shredded cheddar cheese
¾ cup shredded monterey jack cheese
½ teaspoon garlic powder

2 tablespoons water
1 lb jalapeño, tops removed, seeded, and halved
1 package wonton wrapper
2 cups oil, for frying

Steps:

  • Add the cream cheese, cheddar cheese, and Monterey Jack cheese, garlic powder, oregano, salt, and pepper to a bowl. Stir to combine. Add 1 tablespoon of water a time until the mixture is smooth enough to be a spreadable paste.
  • Fill each jalapeño half with 1 tablespoon of the cheese mixture.
  • Place a filled jalapeño on a wonton wrapper, fold over the side edges, then using the tip of your finger, wet the remaining edges of the wonton with water and continue to roll. Repeat with remaining jalapeños.
  • In a large pot, heat oil to 350˚F (180˚F).
  • Fry the egg rolls in small batches until golden brown and crispy.
  • Transfer the egg rolls to a paper towel-lined plate.
  • Enjoy!

This recipe came from a co-worker years ago, she brought these in for a birthday. They are absolutely addictive. I am requested to make this all the time and have given it out too many times to count. Enlist some helpers with the spreading and rolling. *Note: I have found that fresh jalapenos can be tricky finding out if they have the right amount of heat. I buy 4-6 peppers, process 3 of them & add them to the cream cheese mixture. If I have the desired heat I stop, if not I add 1 more pepper at a time. I've never had to use more than 6. Hope this helps :)

2 (8 ounce) packages cream cheese, softened at room temp (you may use the less fat or fat free)
2 -4 fresh jalapenos, chopped (red and or or green)
1/4 of a fresh onions, chopped or 1 tablespoon onion powder
2 packages carl budding deli roast beef or 2 packages honey ham deli meat, chopped
1 (24 count) package flour tortillas (fajita size you may have leftovers, use for something else)

Steps:

  • In a medium sized bowl soften cream cheese to room temperature.
  • Add to the cream cheese, the jalapenos, deli meat and onion mixing thoroughly.

10 -13 flour tortillas
8 ounces cream cheese
8 ounces sour cream
4 ounces chopped drained black olives (optional)
1 cup shredded cheddar cheese
1/2-1 cup chopped green onion
1/4 cup chives
garlic powder, to taste
season salt (optional)
salsa, to taste
1 jalapeno, chopped very fine (optional)

Steps:

  • Mix all items together.
  • spread a thin layer on tortillas.
  • When you spread across the Tortillas make sure that you leave two edges with out the spread (each end of the roll).
  • They will be cut off as waste since they will not lay flat.
  • Roll up, Cover and chill over night or at least for 1.
  • 5 hours.
  • After chilled slice about 1/2 inch size.
  • ***If you add to much salsa and it is to Spicy, just add in some more sour cream, not Cream Cheese.
  • ***I also tend to use almost a cup more Cheddar Cheese.
  • ***I tend not to use the Olives or Chives but everything else.
  • ***On the season salt 1Tsp will do just fine.

6 large jalapeno peppers
Oil for deep-fat frying
1 cup refrigerated fully cooked barbecued shredded pork (about 8 ounces)

3 teaspoons paprika
12 ounces beer
White barbecue sauce, optional

  • Cut off stem end of jalapenos. Using the tip of a small knife, remove seeds and membrane. In a large saucepan, bring 8 cups water to a boil. Add jalapenos; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove and immediately drop into ice water. Drain and pat completely dry., In an electric skillet or deep fryer, heat oil to 375°. In a small bowl, mix pork, cheese and barbecue sauce; spoon into jalapenos. In another bowl, whisk flour, cornstarch, salt and paprika; stir in beer just until moistened., Using tongs, dip stuffed jalapenos into batter; fry in batches until golden brown, 3-4 minutes. Drain on paper towels. If desired, serve with white barbecue sauce.

We found out by accident that simple cream cheese and tortilla roll ups are delicious deep fried. These can be made ahead and stored in freezer bags until they're ready to be fried.

2 -8 ounces cream cheese, softened
1 1/2 cups sharp cheddar cheese, shredded
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
3/4 teaspoon cumin
3/4 teaspoon coriander
1/4 teaspoon salt
3/4 teaspoon chili powder
2 dashes cayenne pepper
40 canned jalapeno slices, minced
4 burrito-size flour tortillas

Steps:
