- Directions: If using prawns, cook them in boiling water until they turn pink, about 1-2 minutes. Remove them from water and set aside. Place Jalapeños on a baking sheet under the broiler, turning occasionally until skins blisters and is lightly browned on all sides. Remove and place peppers in a sealed Ziploc bag. In a small bowl, combine cream cheese, cumin, salt, pepper, garlic, and cilantro. Beat eggs in a small bowl and set aside. Place bread crumbs in another small bowl. Remove Jalapeños from Ziploc bag and remove skins, Slice stem and cap off Jalapeños, removing seeds carefully. Cook bacon strips in a large frying pan until just cooked through. Set aside on a plate lined with paper towels. Stuff each pepper with cream cheese mixture and a cooked prawn. Wrap each pepper with one to two strips of bacon. Pour vegetable oil into a heavy saucepan and set over medium-high heat. Roll peppers in the eggs, then coat with bread crumbs. Deep-fry peppers in batches until golden brown on all sides, about 3-5 minutes. Drain on a plate lined with paper towels. Serve immediately. Steps:
- Cut stems from peppers.
- Remove seeds, using a small sharp knife (do not split peppers).
- Stuff each with pimiento cheese.
- Cover and chill at least two hours.
- Combine 1/4 cup flour, 2 tablespoons cornmeal, and next 3 ingredients; set batter aside.
- Combine remaining 1/2 cup flour and 1/4 cup cornmeal.
- Dip stuffed peppers in batter; dredge in flour mixture.
- Pour oil to depth of 2 to 3 inches in a Dutch oven; heat to 375º.
- Fry peppers, a few at a time, 1 to 2 minutes on each side or until golden.
- Drain on paper towels.
FRIED PICKLED JALAPENOS
Steps:
- Serving suggestions: sour cream and shredded iceberg or Romaine lettuce
- Combine the cheeses in a small bowl. Using a paring knife, make an incision the length of each jalapeno (don't cut the peppers in half). Remove the seeds then carefully fill each pepper with cheese. Dip the stuffed peppers in buttermilk then roll them in flour. (If you prefer a thicker crust, repeat the process.)
- Fill a large frying pan with about 3 inches of oil and heat over medium-high until a thermometer registers a temperature of 350 degrees F. (The oil temperature can also be tested by dripping a little water into the oil. If the oil sizzles immediately, the oil is hot enough.)
- Working in batches, fry the peppers, turning them once or twice, until they are crisp and golden. Drain the peppers on paper towels. Let them cool for about 10 minutes then serve them on a bed of shredded lettuce topped with sour cream.

Steps:
- I'm using this great grill rack I bought from Sur La Table. It basically just a stand for the peppers so you dont have to slice them in half longways and lets you make a whole stuffed pepper. It also comes with a really interesting tool to gut the jalapenos.
- pre-heat oven to 400.
- Cut stems off all Jalapenos and gut them of seeds.
- Cut Cheddar Cheese into 12 "sticks" that you can shove into the jalapenos.
- Cut 6 Bacon strips in half.
- Stuff cheese stick into jalapeno.
- Wrap pepper with bacon and "pin" it pepper using tooth picks.
- Place peppers on grill rack and bake for 15 minutes.

- Slice peppers lengthwise, remove seeds and core; fill with cheese.
- Roll out sausage with rolling pin, between two layers of plastic wrap. Remove plastic from sausage, and wrap a thin coating of sausage around each jalapeno.
- Roll peppers in spicy seasoned coating mix.
