Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
- Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown.
- Remove from oven and top with Cheddar.
- Return to oven for 5 to 10 minutes, or until cheese is melted.
- Let stand for at least 5 minutes and then serve warm.

- Preheat the oven to 350 degrees F.
- Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
- Add the red bell peppers, jalapenos, heavy cream, milk, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.
MAMA DEE'S CORN CASSEROLE
I have had many versions of corn pudding but I have tweaked this to suit my families tastes. Many recipes have added sugar to them but we like it better with season salt and pepper. We think the corn & cornbread mix adds enough sugar. Maybe it's a California thing, not to add so much sugar to things. I am also a diabetic and don't need it. I also changed the name from corn pudding to corn casserole because I think the corn pudding concept is hard to grasp for some people and turns them off to it. It really is a casserole anyway. Enjoy!

- Heat oven to 350 degrees. Spray 10 inch square or 7"x11" inch pan with cooking spray. In large bowl whisk together all ingredients except the last 3 items until well blended. pour into prepared pan. In a bowl, mix together the crushed crackers, melted butter, and shreaded cheddar cheese. Carefully sprinkle over the corn mixture. Cover with foil. Bake for 45 minutes. Remove foil and continue to bake until browned..about 20 more minutes. I make this every Thanksgiving without jalapinos, but other times I make it with them. This year(2010) I delegated the work, so I had my 9 yr old grandson make it. It turned out better than mine. Yummmy. Great job Cayden! Enjoy!

CHEESY CORN & RICE CASSEROLE
This was one of my mothers most requested dishes for the holidays. Originally named "Mexicorn Casserole". I changed the name because it was deceiving. The only thing Mexi about it, is the Mexicorn used in it. Excellent side for your holiday cooking. It's quick, it's easy and it's always a big hit! Hope you enjoy! Out of my desire to provide a protein-filled breakfast to guests and my family who was quickly growing from twin boys + one, I needed a quick make-ahead breakfast recipe. I found a few breakfast casserole recipes in my search and made them simpler and revised it so you can change them up depending upon the guests you may have. If you need a vegetarian casserole or have sausage on hand instead of bacon it's super simple to omit & replace with different ingredients that are sure to please! I make 2 kinds at the same time so everyone can pick their favorite!

- Cut bacon up in small pieces (or break sausage up) cook in pan, drain on paper towel & set aside.
- Preheat oven to 350 degrees.
- Grease 9x13 casserole dish.
- Place a layer of potatoes on the bottom of the dish and sprinkle with salt, pepper, onion powder, & garlic powder. Add rest of the potatoes and repeat sprinkling -- Adjust amounts of seasoning to taste.
- Place bacon (or sausage)**, and cheese on top of potatoes.
- In a mixing bowl whisk eggs together, add milk and whisk until incorporated. Pour evenly over top of layers.
- Bake uncovered for about 1 1/2 hours or more - until liquid is gone.
- **To make a Veggie Version I omit the bacon (or sausage) & add:.
- Chopped Onion.
- Chopped Red Pepper.
- Chopped Mushrooms.
- Make it ahead and cut into squares to place into zip lock bags to freeze.
- For a quick breakfast microwave & Enjoy!
SWEET CORN CASSEROLE
This is always requested over and over again. I love it and I don't really like corn. My best friend made this once and convinced me to try it, now it's a tradition to make for all holidays.

- Stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. Fold about half the crushed crackers into the corn mixture. Sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
