For dessert in a hurry, I jazz up pudding mix to create this delicious pudding. The recipe is easy to double and serve in a no-fuss graham cracker crust.-Kim Jorgensen, Coulee City, Washington

2 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1/2 teaspoon ground nutmeg
1/4 teaspoon rum extract
Additional ground nutmeg, optional

Steps:

  • In a bowl, combine the first four ingredients. Beat for 2 minutes. Spoon into individual dishes. Sprinkle with nutmeg if desired.

One night I really needed a dessert fix and only had a few things on hand. I searched on recipe zaar for a quick easy recipe and saw mention of an eggnog pudding. But it didn't call for eggnog. It instead called for rum extract but I didn't have any. I did have eggnog though so decided to try this.... I was happy I did!

1 (3 1/2 ounce) package vanilla instant pudding mix
1/2 cup milk
1 1/2 cups eggnog
1 pinch nutmeg
1 pinch ground cinnamon

Steps:

  • Empty pudding mix into bowl and add the spices -- then add the eggnog and milk and wisk as usual. Let chill for a bit before eating.

My sister-in-law shared this recipe with our family when she married my brother. When we serve it on Christmas Eve, one serving of pudding included an almond. The person with the almond gets a gift. Each year everyone wants to win!

6 (.25 ounce) envelopes unflavored gelatin
1 ½ cups water
2 quarts prepared eggnog
6 egg whites
½ cup white sugar
½ teaspoon ground nutmeg
1 (12 ounce) package frozen raspberries, thawed

Steps:

  • Mix gelatin and water in the top of a double boiler over simmering water, stirring frequently until gelatin is dissolved and mixture is warm, 5 to 10 minutes.
  • Pour eggnog into a large bowl; gradually stir gelatin mixture into eggnog. Refrigerate eggnog-gelatin mixture until thickened, 2 to 3 hours.
  • Beat eggnog mixture with an electric mixer until light and fluffy.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add sugar and nutmeg, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Fold egg white mixture into eggnog mixture.
  • Pour eggnog pudding into a serving bowl and refrigerate until set, about 1 hour. Spoon pudding into 8 individual serving bowls; add raspberries to each serving.

Cook over medium heat, stirring constantly, until pudding thickens and coats back of spoon, about 5 minutes. Remove from heat; stir in bourbon. Spoon into small bowl. Place plastic wrap directly on surface of pudding. Refrigerate until set, about 3 hours.
  • Just before serving, in chilled small bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Divide pudding evenly among 4 serving bowls. Top each with whipped cream; sprinkle with nutmeg.
