6 medium tomatoes, finely chopped
3/4 cup finely chopped green pepper
1/2 cup finely chopped onion
1/2 cup thinly sliced green onions
6 garlic cloves, minced
2 teaspoons cider vinegar
2 teaspoons lemon juice
2 teaspoons olive oil
1 to 2 teaspoons minced jalapeno pepper
1 to 2 teaspoons ground cumin
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
Tortilla chips

Steps:

  • In a large bowl, combine the tomatoes, green pepper, onions, garlic, vinegar, lemon juice, oil, jalapeno and seasonings. Cover and refrigerate until serving. Serve with chips.

5 medium-sized vine ripe tomatoes
1 medium onion
1-2 hot peppers, finely chopped, (jalapeño or serrano are good)
1 clove garlic , finely chopped
Juice from 1/2 of a lime

Steps:

  • Chop tomato and onion into a quarter-inch dice. Stir all ingredients together in a bowl. See how easy that was?

A delicious, fresh salsa that is really easy to make. It tastes even better after the flavors have melded for a day.

Number Of Ingredients 6

4 medium ripe tomatoes, cored and seeded
2 - 3 cloves garlic, peeled
Juice from 1 fresh lime (about 1/4 cup)
1 - 2 tablespoons fresh cilantro, stems removed and finely chopped
salt and pepper, to taste
1-2 fresh Jalapenos, diced and seeded, if desired.

Steps:

  • Cut 3 of the tomatoes into quarters and place in blender or food processor. Add garlic cloves and half the lime juice. Pulse until thoroughly combined.
  • Dice remaining tomato into evenly sized small pieces. Stir into tomato garlic mixture to create a chunkier texture. Stir in 1 to 2 tablespoons of fresh cilantro (adjust according to personal preference). Add jalapenos, if desired.
  • Add remaining lime and season with salt and pepper, to taste. Serve with your favorite Mexican entrée or by itself with crispy tortilla chips.

½ sweet onion, chopped
½ green bell pepper, coarsely chopped
¼ cup fresh cilantro
5 slices pickled jalapeno peppers, or to taste
6 fresh tomatoes, quartered
2 teaspoons olive oil
2 teaspoons red wine vinegar
½ lime, juiced
⅛ teaspoon salt

Steps:

  • Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor. Pulse until finely chopped. Add tomatoes, and pulse just a few times until the tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.
  • In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, and salt.
  • Pour dressing over tomatoes, and stir well. Cover, and refrigerate for at least 1 hour.
