1-1/2 cups reduced-sodium chicken broth or vegetable broth
1/2 cup white wine or reduced-sodium chicken broth or vegetable broth
1 medium onion, chopped
1/2 cup dried lentils, rinsed
1/2 cup uncooked brown rice
1 garlic clove, minced
1 bay leaf
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 cup Italian stewed tomatoes, cut up
1/4 teaspoon salt
1/2 cup reduced-fat shredded Swiss cheese

Steps:

  • In a 1-1/2 qt. baking dish coated with cooking spray, combine the first 10 ingredients. Cover and bake at 350° for 40 minutes. , Stir in the tomatoes and salt. Cover and bake for 20-30 minutes longer or until rice and lentils are tender. Remove and discard bay leaf. Sprinkle with cheese. Bake, uncovered, for 5-8 minutes or until cheese melts.

Here's what you need: flank steak, garlic, grated ginger, sesame oil, low sodium soy sauce, brown sugar, honey, beef broth, broccoli floret, cornstarch, water, sesame seed

1 lb flank steak, sliced into thin strips
3 cloves garlic, minced
½ teaspoon grated ginger
2 tablespoons sesame oil
⅓ cup low sodium soy sauce
¼ cup brown sugar
¼ cup honey
1 cup beef broth
4 cups broccoli floret
2 tablespoons cornstarch
2 tablespoons water
sesame seed, as desired

Steps:

  • In an oiled skillet over medium-high heat, sear the steak until cooked all the way through. Remove from the pan.
  • Add a little more oil, then add the garlic and ginger to the pan. Sauté until soft.
  • Add the sesame oil, soy sauce, brown sugar, honey, and beef broth. Stir until combined.
  • Add the broccoli florets.
  • In a separate bowl, combine cornstarch and water. Add to broccoli mixture. Bring to a boil, until sauce has thickened.
  • Add the beef back into the mixture, and serve over rice with sesame seeds, if desired.

1 lb flank steak, sliced into strips
¼ cup soy sauce, plus 3 tablespoons, divided
2 tablespoons sesame oil, divided
2 tablespoons minced garlic, divided
1 tablespoon brown sugar
½ cup water
1 tablespoon cornstarch
2 teaspoons oil
½ cup onion
1 cup broccoli floret
3 eggs, beaten
2 cups cooked white rice
pepper, to taste
sliced scallions, for garnish

Steps:

  • Pour ¼ cup soy sauce, 1 tablespoon sesame oil, 1 tablespoon of garlic, the brown sugar, water, and cornstarch over the sliced flank steak. Mix well, then let marinate in the refrigerator for at least 1 hour.
  • In a wok or deep skillet, cook the beef and marinade thoroughly, then set aside.
  • In the same pan, heat the oil over medium heat. Sauté the onion, remaining tablespoon of garlic, and broccoli until the onion is translucent. Push the cooked vegetables to the side of the pan.
  • Beat the eggs and pour into the empty half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  • Add the rice, remaining 3 tablespoons of soy sauce, remaining tablespoon of sesame oil, pepper, and the cooked beef. Mix well and let the rice cook until slightly crispy.
  • Serve garnished with scallions.
  • Enjoy!

Basmati Rice with Lentils image

We eat this very nutritious rice dish a lot and frequently serve it to our guests. It is almost a meal in itself, and may be served simply with Karhi, a yogurt sauce, and any vegetable you like.

Yield serves 6

Number Of Ingredients 8

1/2 cup lentils
2 cups basmati rice
3 tablespoons olive or canola oil
Two 2-inch cinnamon sticks
8 cardamom pods
2 bay leaves
1/2 medium onion, cut into fine half rings
1 1/2 teaspoons salt

Steps:

  • Soak the lentils in warm water for 3-5 hours. Drain.
  • Wash the rice in several changes of water. Drain. Soak in fresh water for 30 minutes. Drain.
  • Pour the oil into a heavy, medium pan (that has a tight-fitting lid) and set over medium-high heat. When hot, put in the cinnamon, cardamom, and bay leaves. Stir for 10 seconds. Put in the onions. Stir and fry until they turn reddish brown. Add the lentils, rice, and salt. Turn heat to medium and sauté rice very gently for a minute. Add 3 cups water and bring to a boil. Cover tightly, turn heat to very, very low, and cook gently for 25 minutes.
