1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 Tbsp. butter
1/4 cup panko bread crumbs
2/3 cup shredded smoked Gouda cheese
2/3 cup shredded CRACKER BARREL Extra Sharp Cheddar Cheese
1/4 cup milk
1/8 tsp. ground nutmeg
1/8 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 375ºF.
  • Prepare Dinner in large saucepan as directed on package. While Macaroni is cooking, melt butter in small skillet. Add bread crumbs; cook and stir 5 min. or until toasted.
  • Combine shredded cheeses; stir half into Dinner with milk and seasonings. Spoon into 1-1/2-qt. casserole; top with remaining shredded cheese mixture and crumbs.
  • Bake 20 min. or until heated through.

This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

1 (16 ounce) package seashell pasta
2 ½ tablespoons butter
2 tablespoons all-purpose flour
2 ½ cups milk
½ teaspoon salt
¼ teaspoon ground white pepper
4 ounces smoked Gouda cheese, shredded

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a small saucepan over medium heat. Stir in the flour and cook until a roux forms. Stir in the milk, salt and pepper; cook, stirring constantly, until sauce is smooth and thick and coats the back of a spoon. Remove from heat and stir in cheese.
  • Combine cooked pasta and cheese sauce; transfer to prepared dish.
  • Bake in preheated oven for 15 minutes, or until heated through.

Don't be tempted to use anything less than extra sharp cheddar cheese. For this dish to have the cheesy flavor expected, it requires a VERY sharp cheese combined with the smoked gouda.

5 slices bacon
1 1/2 cups panko breadcrumbs
1 lb short pasta (penne, elbow macaroni, etc)
4 tablespoons butter
4 tablespoons all-purpose flour
4 cups milk
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
8 ounces sharp cheddar cheese, grated and divided (about 2 cups)
8 ounces smoked gouda cheese, grated and divided (about 2 cups)

Steps:

  • Fry bacon in a large skillet until crisp, remove to paper towels to drain. Add panko bread crumbs and toast in skillet until golden. Remove from heat and crumble bacon into bread crumbs, toss to combine.
  • Using salted water, cook the pasta according to package directions, but do not rinse; set aside.
  • Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in the milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese (note: add cheese about a cup at a time, stirring to incorporate so as not to cause graininess).
  • In a large bowl combine cooked pasta and cheese sauce. The sauce will be thin, but will thicken once baked.
  • Pour the pasta mixture into a lightly greased 8 x 11 x 2 baking dish. (Use a spatula to scrape out every ounce of that saucy goodness.) Sprinkle the top with the remaining cup of cheese and sprinkle with the prepared bacon/panko topping. (note: a layer of shredded parmesan cheese may be added prior to the sprinkling of the crumb topping, if desired.).
  • Bake at 400° for 20-30 minutes or until bubbly. Remove from oven and allow to rest about 10-15 minutes.

This is one of those family recipes that has evolved over the span of my lifetime. I first learned to cook this when I was a preteen. It continued to tweak it during my married life. I had some leftover Gouda in the fridge and decided to add it. Since then, it has become my picky kids favorite. In our house this is the main meal. Serve with a green salad, steamed broccoli and garlic toast or crusty sour dough bread. EDIT TO ADD 4/2012: if doubling this recipe, use only 5 tablespoons of flour and 6 cups of milk. If you do not, you run the risk of a not so creamy and somewhat dry end result. I have also added a bit more milk because the under cooked macaroni will absorb some of the milk. Feel free to add more American cheese. The amounts can be increased to your liking.

3 tablespoons butter
1 teaspoon chicken bouillon or 1 teaspoon salt and pepper
8 ounces elbow macaroni
3 tablespoons all-purpose flour
1/2 teaspoon mustard powder
3 cups milk, any
4 ounces sharp cheddar cheese, coarsely grated, about 1 cup
4 ounces American cheese, sliced, about 6-8 slices
2 ounces gouda cheese, coarsely grated, about 1/2 cup
nonstick cooking spray

Steps:

  • Preheat oven to 350°F.
  • Bring a large pot of water to a boil. Spray a shallow 8x8 baking dish; set aside.
  • Generously salt boiling water; add pasta. Cook, according to package instructions, until 2 minutes short of al dente.
  • Drain pasta, rinse with cold water, drain and return to pot.
  • While pasta is cooking, melt butter in a large saucepan over medium. Whisk in seasonings; then whisk in flour to form a thick paste.
  • Slowly whisk in milk. Bring to a low boil; reduce heat to low, and simmer until sauce is thickened, 2 to 3 minutes. Remove from heat.
  • To baking dish, layering:.
  • Add 1/2 of cooked macaroni. Add 1/2 of sauce, 1/2 of each cheese. Repeat and top with cheeses.
  • Can be made several hours in advance, covered and refrigerated until time to bake.
  • Bake covered for 15-20 minutes.
  • Uncover and bake until topping is golden and sauce is bubbling, an additional 15-20 minutes.
  • *If refrigerated, additional time may be needed until it is bubbly and slightly browned.
  • Cool 5 minutes before serving.
  • *Notes: I use a packet of G. Washington Golden seasoning instead of salt & pepper. If you can find it, it is a great universal seasoning for sauces.
  • April 2012, EDIT TO ADD: if doubling this recipe, use only 5 tablespoons of flour and 6 cups of milk. If you do not, you run the risk of a not so creamy and somewhat dry end result. 21 ounces smoked gouda cheese, shredded

Steps:

  • Heat the milk in a large saucepan over medium-low heat to 185 degrees F.
  • In a separate large pot over medium heat, make the roux by melting the butter and slowly whisking in the flour and onion powder. Once the milk has reached temperature, add the roux and the cheese. Using an immersion blender, carefully blend all ingredients until smooth. Season with salt and pepper. Stir in the macaroni.

Continue whisking and cook for 2 minutes. Gradually whisk in milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese, reserving about a cup of cheese. Pour the pasta in a lightly greased 8 x 11 x 2 baking dish. Spoon the cheese sauce over the pasta, stirring lightly to even out the sauce in the pan. Sprinkle the top with the remaining cup of cheese and the paprika. 1 pound ditalini or small elbow macaroni
2 tablespoons plus 1/2 teaspoon unsalted butter

  • Preheat the oven to 375 degrees F. Put the water, 1/2 teaspoon of the salt, and the oil in a large, heavy saucepan over high heat and bring to a boil. Add the macaroni and cook, stirring occasionally, until tender, about 8 minutes. In a small, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. Remove the white sauce from the heat and stir in the cheese. Continue stirring until the cheese melts. Lightly grease a 6 1/2 by 10-inch casserole dish with the remaining 1/2 teaspoon butter. Combine the cheese sauce and macaroni in a large mixing bowl and mix well. Pour into the prepared casserole and bake until lightly golden on top, about 20 minutes. Remove from the oven and serve hot. Garnish with parsley.
