PRINCESS DIANA'S BIRTHDAY CAKE
This recipe appeared in the February 1988 issue of Woman's Day magazine and was reprinted in our local paper today. According to the article, "Diana had a special fondness for this cake because it was served at her childhood birthday parties." The baked layers can be wrapped and refrigerated up to three days or frozen up to three months. Unwrap and bring to room temperature before assembling. Completed cake can be refrigerated up to four hours before serving.

Steps:
- Preheat oven to 350F.
- To make cake: Grease bottom and sides of two 8- or 9-inch round layer-cake pans.
- Line bottoms with parchment or waxed paper; grease paper.
- Add granulated sugar to each pan, tilt to coat bottom and sides; shake out excess.
- Beat eggs in a large bowl with electric mixer on high speed until pale, about 1 minute.
- Gradually add the 1 1/2 cups sugar, beating about 2 minutes (or more, as needed) until mixture is thick, tripled in volume and forms a slowly dissolving ribbon when beaters are lifted.
- Working quickly, stir in water and vanilla.
- Fold in flour mixture just until completely blended.
- Pour into prepared pans.
- Bake 30 to 35 minutes until tops are lightly browned and toothpick inserted near center comes out clean.
- Cool in pans on rack 10 minutes.
- Run thin-bladed knife between sides of pans and cakes to loosen.
- Invert pans on rack; peel off paper and cool completely.
- To make filling: Beat cream and vanilla in a large bowl with electric mixer until soft peaks form when beaters are lifted.
- Gradually beat in sugar until cream is of spreading consistency.
- To assemble: Slice each layer in half horizontally, using a long serrated knife.
- Place one layer on serving plate, spread with 1 cup whipped cream, top with one-third of the sliced berries.
- Repeat with two more layers.
- Place remaining layer on top; spread remaining cream over sides and top.
- Garnish with reserved berries.
- Refrigerate until ready to serve.
CHOCOLATE COCONUT MOUNDS CAKE
A yummy chocolate cake that tastes like my favorite Mounds candy bar. What could be better? Made easy with a cake mix. Enjoy!

Steps:
- Prepare cake mix according to package directions and bake in a 9 x 13 greased and floured pan.
- During the last minutes of baking, bring to a boil, 1 c sugar, 1 c milk and marshmallows.
- Watch closely, it burns easily.
- Remove from heat and stir in coconut.
- Pour over cake as soon as it comes out of the oven.
- For frosting, bring to a boil, 1/2 c milk, the butter and 1 c sugar.
- Add chocolate chips and stir until they are melted.
- Pour over second layer of cake and refrigerate overnight.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
- Melt butter in a large saucepan. Remove saucepan from heat and stir white sugar, eggs, and vanilla extract into the melted butter until thoroughly combined.
- Mix flour, cocoa powder, salt, and baking powder together in a large mixing bowl; add butter mixture to the flour mixture and stir to form a smooth batter. Pour the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool completely.
- Beat coconut, sweetened condensed milk, and confectioners' sugar together in the bowl of a stand mixer until very thick; spread over the cake in an even layer.
- Heat prepared frosting in the microwave until the frosting has a pourable consistency, about 75 seconds; pour over the cake and spread into an even layer. Refrigerate cake until the frosting is set, at least 15 minutes.

DIANE'S COLCANNON
While colcannon seems to be associated with St. Patrick's Day, I love the combination of potatoes, cabbage, onion, and bacon all through the cooler months of fall and winter! I attend an annual St. Paddy's Day party and this is the dish I'm always asked to bring...and I'm happy to say that the bowl comes home empty every time!

- Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook for 15 to 20 minutes, until tender.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, crumble and set aside. In the reserved drippings, saute the cabbage and onion until soft and translucent. Putting a lid on the pan helps the vegetables cook faster.
- Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the bacon, cabbage, and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter. Serve immediately.

- Bake cake in a 9x13-inch cake pan by the package directions.
- When cooled, split cake into 2 layers.
- In a saucepan mix sugar, marshmallows and milk.
- Bring to a boil; stir till sugar is melted. Remove from heat and then stir in coconut.
- Put the coconut mixture between split layers and on top; let cool.
- Combine milk, sugar and oleo for topping; bring to a boil.
- Stir chocolate chips in till melted.
- Frost cake with this mixture and refrigerate overnight.

DIANE'S ALMOND JOY CAKE
One of my fondest memories of childhood is of the yummy chocolates that I enjoyed with a bottle (yes, bottle!) of Coke everyday after school. Almond Joys were a favorite, and one bite of this wonderful cake transports me right back to the 60's. Love it!

- FOR CAKE: Mix all cake ingredients in large bowl and beat 2-3 min. NOTE: if you can't find the duncan hines coconut cake mix try this; use a white or yellow cake and add a coconut pudding mix and 2-3 teaspoons of coconut extract. That has worked for several bakers posted in the comments. Good luck to all.
- Pour into 2 9 inch layer pans and bake in 350* preheated oven for 28 minutes. Remove to wire rack and cool 10 min. Turn out onto wire racks and cool completely.
- FOR FROSTING: Beat soft butter and cocoa till soft and well combined, add milk, sugar, salt and vanilla. Beat 2 min until light and fluffy. (Add additional sugar 1 tablespoon at a time - if needed - until it reached spreding consistency. Do the same with milk if it's too thick.)
- In two small pans spread your coconut and nuts and, stirring often, toast to a pretty light brown color. They will need watching as they will burn quickly. I do this as soon as I take my layers from the oven.
- Place one layer on a pretty plate and spread a cup (more or less) of your frosting. Sprinkle coconut and almonds generously. Use most of the coconut and half the almonds.
- Put on next layer and frost top and sides with remaining frosting. Sprinkle coconut around the top edge and along bottom. Sprinkle remaining nuts inside coconut circle on top. Whatever is pleasing to you.
