This coffee-flavored cake has been a hit at BBQs, Easter brunch, and birthday parties. I've had coffee haters, and those who dislike cake, compliment me on this recipe and say they love it.

2 cups all-purpose flour
2 cups white sugar
¼ teaspoon salt
1 cup butter
3 tablespoons instant coffee granules
1 cup boiling water
½ cup buttermilk
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
¾ cup butter, softened
3 cups confectioners' sugar
1 tablespoon instant coffee granules, or more to taste
2 tablespoons heavy cream, plus more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 8- or 9-inch cake pans, and dust with flour. In a large bowl, stir together the flour, white sugar, and salt until thoroughly combined.
  • Melt 1 cup of butter in a small saucepan; in a bowl, stir together 3 tablespoons of instant coffee with the boiling water until the coffee has dissolved. Pour the coffee mixture into the melted butter, bring to a boil over medium heat, and stir for about 10 seconds; set the butter-coffee mixture aside to cool.
  • Mix the buttermilk, eggs, vanilla extract, and baking soda in a bowl until the baking soda has dissolved. Mix the cooled coffee mixture into the flour mixture, then gently stir in the buttermilk mixture. Pour the batter into the prepared cake pans.
  • Bake in the preheated oven until the cakes are browned, and a toothpick inserted into the center of each cake comes out clean, about 20 minutes. Allow the cakes to cool in the pans for about 10 minutes before cooling completely on racks.
  • Mix 3/4 cup of softened butter, confectioners' sugar, 1 tablespoon of instant coffee, and cream in a mixing bowl with an electric mixer on High speed until the frosting is light and creamy; mix in additional cream, 1 teaspoon at a time, if needed to whip frosting to spreadable texture. Frost the cooled cake layers.

1 cup sugar

1 (3 1/2 ounce) package instant butterscotch pudding mix
1 (3 1/2 ounce) package instant vanilla pudding
1 cup water
3/4 cup oil
1 teaspoon vanilla
4 eggs

Steps:

  • Preheat oven to 350*. Grease a 9x13 inch pan.
  • Combine and set aside brown sugar, nuts, and cinnamon.
  • In a large bowl, combine flour, sugar, baking powder, salt, pudding, water, cooking oil, vanilla and eggs.
  • Beat 2 minutes at medium speed. Pour 1/3 of batter in prepared pan.
  • Sprinkle with 1/3 of brown sugar mixture.
  • Pour remaining batter over brown sugar and sprinkle with remaining brown sugar mix.
  • Bake at 350* for 45 minutes or when top springs back when touched lightly in center.

This was a depression era recipe made without eggs my grandmother and my mother made. I have changed the ingredients as my husband is lactose intolerant and cut the calories for me. The mayo replaces the fat butter used to add and the dairy is removed by using Fleischman's unsalted margarine which is parve. We are the 3rd generation to enjoy this cake! We hope you like it too!

4 ounces kraft fat-free mayonnaise
1 cup brown sugar
1 cup Splenda sugar substitute
2 1/2 cups unbleached flour
1/2 teaspoon salt
3 tablespoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon clove
1 tablespoon baking powder
1 tablespoon fleischman's unsalted is lactose free light margarine
1 tablespoon vanilla extract
1 cup 8th continent light low-fat soymilk

Steps:

  • Mix all dry ingredients together except baking powder.
  • Remove 1/2 cup and set aside.
  • Add baking powder to larger bowl of dry ingredients.
  • Blend milk, mayo and vanilla to larger amount of dry ingredients.
  • Grease and flour 8 1/2 x 11 pan. Pour in batter.
  • Mix margarine in to the reserved 1/2 cup dry ingredients until crumbly.
  • Sprinkle over batter in pan.
  • Bake 25 minutes at 350°F.
