ROAST PORK TENDERLOIN WITH DIJON SAUCE



Roast Pork Tenderloin with Dijon Sauce image

This Tenderloin is so easy to cook, and results in juicy, tender pork every time!

1 pound pork tenderloin
1 tablespoon dijon mustard
2 tablespoons olive oil (divided)
kosher salt & black pepper ( to taste)
1 tablespoon butter
1 clove garlic (minced )
¾ cup chicken broth
¾ cup heavy cream
½ teaspoon dry mustard powder
1 tablespoon Dijon mustard
½ teaspoon dried thyme (or two sprigs fresh thyme)

Steps:

  • Preheat oven to 400° F. Line a baking sheet with foil.
  • Combine dijon mustard and 1 tablespoon olive oil in a small bowl. Brush over pork tenderloin and season with salt & pepper.
  • Heat 1 tablespoon olive oil in a large pan over medium-high heat. Brown the pork evenly, about 2-3 minutes per side, and transfer to the prepared baking sheet. Cook 18-20 minutes or until a thermometer reads an internal temperature of 145° F.
  • While pork is cooking, add butter and garlic to the same pan and cook 1 minute or until garlic is fragrant. Add chicken broth and scrape up any brown bits.
  • Stir in cream, mustard powder, dijon mustard, and thyme. Bring to a boil, reduce heat and simmer until thickened, about 8-10 minutes. Remove from heat.
  • Remove pork from the oven and rest for 5 minutes. Slice and serve with mustard sauce.

1 tablespoon extra-virgin olive oil, or more as needed
2 ½ pounds whole pork tenderloins
salt and black pepper to taste
¼ teaspoon garlic powder, or to taste
1 onion, chopped
1 (8 ounce) package sliced fresh mushrooms
¼ cup white wine
1 (10.75 ounce) can condensed cream of mushroom soup
2 tablespoons Dijon mustard
¼ cup sour cream

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season pork tenderloins with salt, pepper, and garlic powder. Cook pork in the oil, turning until browned on all sides, 5 to 6 minutes. Remove from pan, and set aside. In the same skillet, cook onion and mushrooms until they brown lightly and begin to soften; 3-5 minutes.
  • Pour wine into slow cooker; stir in the onion and mushrooms. Place browned pork on top of the vegetables.
  • Combine mushroom soup, Dijon mustard, and sour cream in a bowl. Spread mixture over pork. Cover slow cooker; cook on Low until pork is tender and liquids have formed a sauce; 7 to 8 hours.

1 tablespoon all-purpose flour
2 teaspoons dried basil
2 teaspoons dried thyme
2 teaspoons ground cinnamon
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 boneless pork loin roast (3 to 4 pounds)
2 tablespoons canola oil
1 medium apple, cut into wedges
1 medium onion, cut into wedges
1 medium lemon, cut into wedges
1 fresh rosemary sprig

Steps:

  • Preheat oven to 325°. In a small bowl, mix flour, basil, thyme, cinnamon, salt and pepper; rub over pork., In a large skillet, heat oil over medium-high heat. Brown roast on all sides. Place roast in a shallow roasting pan, fat side up. Arrange apple and onion around roast. Squeeze lemon juice from 1 wedge over pork; add lemon wedges to pan. Place rosemary over pork., Roast 1 to 1-1/2 hours or until a thermometer reads 145°. Remove roast, onion and apple to a serving platter; tent with foil. Let stand 15 minutes before slicing.

2 each pork tenderloins
2 large eggs eggs, beaten
1 tablespoon Dijon mustard
1 teaspoon dried thyme leaves
¾ teaspoon salt
½ teaspoon ground black pepper
1 cup plain bread crumbs
2 tablespoons olive oil
1 cup apple cider

Steps:

  • Adjust oven rack to lowest position and heat oven to 450 degrees F (230 degrees C). Line a lipped cookie sheet with foil; spray with vegetable cooking spray. Split each pork tenderloin lengthwise almost but not all the way through with a sharp knife. Open up each pork tenderloin and pound lightly with fist to flatten. Combine eggs, mustard, thyme, salt and pepper in a shallow pan. Mix breadcrumbs and olive oil in a separate shallow baking pan. Working one at a time, coat tenderloin completely in egg mixture then dredge in breadcrumbs, pressing to adhere. Set on prepared baking sheet. This dish can be prepared and refrigerated for 60 minutes prior to cooking.
  • Bake until golden brown and cooked through (150 to 160 degrees F on a meat thermometer ), about 20 minutes. Let rest 5 minutes. While tenderloin is resting heat a skillet, add the apple cider and reduce by half. Slice tenderloin, spoon the sauce over and serve.
