¾ cup reduced fat sour cream
½ cup nonfat milk

Steps:

  • Place the cubed potatoes in a pot with enough water to cover. Bring to a boil, and cook 15 minutes, or until tender.
  • Drain potatoes and transfer to a bowl. Mash with a potato masher, and gradually mix in the sour cream, nonfat milk, and Dijon mustard. Season with garlic salt and pepper.

1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme

5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.

24 ounces red baby potatoes
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon whole grain Dijon mustard
3 cloves garlic, minced
2 teaspoons honey
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray. In a large pot of boiling water, cook potatoes until tender, about 15-20 minutes; drain well. In a small bowl, whisk together olive oil, Dijon mustard, whole grain mustard, garlic, honey, thyme and rosemary; season with salt and pepper, to taste. Place potatoes onto the prepared baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. Brush each potato with mustard mixture. Place into oven and bake for 18-20 minutes, or until golden brown and crisp. Serve immediately.

  • Fill a large saucepan about halfway, with warm water. Bring to a simmer. Peel and slice potatoes, and add them to the simmering water. Add a few pinches of salt, increase the heat, and bring to a boil. Check the potatoes with a knife. If the knife has some resistance, continue simmering the potatoes until the knife comfortably slides through the potatoes. When the potatoes have cooked through about 15 minutes, drain them in a large colander. Add them back to the saucepan. To the saucepan, add the milk and butter, followed by a the nutmeg. Mash potatoes until smooth. Stir in Dijon mustard. Season with more salt and pepper, to taste.

1 small carrot
250 g mushrooms
1/2 cup vegetable stock
1 tablespoon dark soy sauce
1 tablespoon Dijon mustard
1 tablespoon cornstarch
fresh ground black pepper
4 baked potatoes

Steps:

  • Chop the onion, peel and grate the carrot and slice the mushrooms, halving them across the other way first if they are large.
  • Saute the vegetables in the water or stock, in a large frying pan, until most of the liquid is gone and the vegetables are soft.
  • Mix the remaining ingredients together in a bowl, adding a bit of water if you wish (makes a thinner sauce) and add to the vegetables in the pan. Mix well and cook, stirring, over low heat for about a minute until thickened.
  • Pour over hot, split baked potatoes.
