EASY GARLIC DILL PICKLES RECIPE

Steps:
- Wash and remove the spines on the pickling cucumbers. Cut into rounds or icicles if desired or leave them whole.
- Combine vinegar and water in a large stockpot and bring to a boil.
- In each quart-sized canning jar place 1 head of dill, 2 cloves of garlic, 1 tsp. of pickling spice, 1 tbs. of pickling salt.
- Pack the cucumbers into the canning jars, then cover with hot brine leaving 1/2 inch of headroom.
- Remove any air bubbles from the jars, wipe the rims clean and place the jar lids on finger tight.
- Process in a water bath canner for 15 minutes or according to your altitude.
- After canning remove the jars and place on a towel in a draft-free place to sit for 24 hours. Any jars that have not seeled in 24 hours need to be reprocessed or placed into the refrigerator.
REFRIGERATOR PICKLES: CAULIFLOWER, CARROTS, CUKES, YOU NAME IT

- In a medium saucepan, bring 4 cups water to a boil, reduce the heat so the water simmers and add the garlic. Cook for 5 minutes. Add the vinegar and salt, raise the heat and bring to a boil, stirring until the salt dissolves. Remove from the heat.
- In 2 clear 1-quart jars, place a few sprigs of dill. Divide the seeds and peppercorns between the jars. Using tongs, remove the garlic from the brine and place 5 cloves in each jar. Then pack the jars full of cucumbers, carrots, scallions or green beans, cauliflower and chiles. You want them to be tightly stuffed.
- Bring the brine back to a boil, pour it over the vegetables to cover completely, let cool, then cover and refrigerate. The pickles will taste good in just a few hours, better after a couple of days. And they'll keep for about 3 months.
DILL-PICKLED VEGETABLES

- In a large saucepan of boiling water blanch onions 3 minutes and drain in a colander. Cool onions just until they can be handled and peel. Arrange onions and carrots in two 1-quart Mason-type jars.
- In pan bring vinegar, water, sugar, dill seeds, and salt to a boil and simmer 3 minutes. Pour hot mixture over onions and carrots and cool completely. Add celery. Chill vegetables, covered, at least 12 hours to develop flavors. Pickled vegetables may be made up to 3 weeks ahead but do not add celery until 1 day before serving.
PICKLED VEGETABLES
Simmer these vegetables in a vinegar solution for 10 minutes. Nibble these pickled vegetables before a meal or put them into a taco.

- Combine vinegar, sugar, and salt in a medium saucepan with 3 cups cold water; bring to a boil over high heat and stir to dissolve sugar. - Place cauliflower, onions, cucumbers and peppers in a large bowl. In another large bowl, mix ice water and salt; pour over vegetables. Let stand 4 hours., Rinse vegetables and drain well. In a Dutch oven, bring sugar, vinegar, celery seed, turmeric and cloves to a boil. Add drained vegetable mixture; return to a boil. Reduce heat; simmer, uncovered, until vegetables are heated through, 5 minutes., Pack hot vegetables and liquid into six hot 1-pint jars, leaving 1/2-in. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

PICKLED VEGETABLES

- Combine all ingredients in large nonreactive* saucepan. Bring to boil over medium-high heat, stirring occasionally. Reduce heat to low and simmer 10 minutes. Strain into bowl; return brine to same pan and set aside.
- Pour water to depth of 1 inch in medium pot; place vegetable steamer rack in pot. Bring water to boil. Place onions on rack. Cover pot; steam onions until just tender, about 5 minutes. Using spoon, transfer onions to bowl. Cool and peel onions. Steam carrots until crisp-tender, about 3 minutes; transfer to separate bowl and cool. Steam cauliflower until crisp-tender, about 3 minutes; transfer to separate bowl and cool. Steam squash until crisp-tender, about 2 minutes; transfer to separate bowl and cool.
- Place half of grapes in bottom of 1 jar. Arrange half of bell pepper pieces atop grapes. Continue to layer half of each vegetable (including tomatoes) in jar, pressing layers firmly to compact and evenly distributing half of star anise, bay leaves, dill sprigs, garlic slices and chilies among vegetables. Repeat layering with remaining grapes, vegetables and seasonings in second jar.
- Bring reserved brine to boil. Ladle enough boiling brine into each jar to fill completely. Close jars tightly.
- Let pickles stand at room temperature until completely cool about 3 hours. Chill 2 days. (Can be made 1 week ahead; keep refrigerated. Brine may become cloudy.)
- Nonreactive cookware interiors that will not adversely affect foods include stainless steel, anodized aluminum, enamel linings, and nonstick surfaces.
