MISSISSIPPI MUD COOKIES

Non-bake cookie with coconut, oats and nuts.

2 cups white sugar
½ cup butter
½ cup milk
3 cups rolled oats
6 tablespoons unsweetened cocoa powder
½ cup chopped walnuts
½ cup flaked coconut
1 teaspoon vanilla extract

Steps:

  • Bring sugar, milk and butter to boil. Boil for 2 minutes and remove from heat.
  • Stir in cocoa and vanilla. Stir in remaining ingredients to coat well.
  • Drop onto waxed paper by the tablespoonfuls. Cool and enjoy!

Why smash perfectly good cookies just to make another batch of cookies? 'Cause they're YUMMY! Made with crushed sandwich cookies, the small pieces of broken cookie dust make the dough speckled - I've been told they look like they're made with dirt!

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup white sugar
½ cup packed brown sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 ½ cups chocolate sandwich cookie crumbs

Steps:

  • Sift together the flour, baking soda, and salt. Set aside. In a medium bowl, cream the white sugar, brown sugar, and the butter together until smooth. Stir in the eggs and vanilla. Add the flour mixture, and stir until just combined. Stir the crushed cookies into the dough. Cover, and chill the dough for 1/2 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Drop dough by rounded spoonfuls onto prepared cookie sheets. Bake for 10 to 11 minutes in the preheated oven. Remove to cool on wire racks.

2 cups sugar
1/2 cup butter
3 tablespoons cocoa
1/2 cup evaporated milk or 1/2 cup milk
1 teaspoon vanilla
1/2 cup peanut butter (I use crunchy PB)
3 cups oatmeal (quick cooking)

Steps:

  • Combine butter, cocoa, sugar, and milk in a large saucepan.
  • Bring to a full boil, reduce heat and simmer for one minute stirring constantly.
  • Add vanilla and peanut butter mixing well.
  • Stir in oats.
  • Quickly drop onto waxed paper by the spoonful or desired amount.
  • Let cool and enjoy.
  • Do not under or over cook ingredients in saucepan. Once oats are stirred in drop onto wax paper immediately. I do not suggest in double batching this particular recipe.

Steps:

  • Sift together the flour, baking soda, and salt. Set aside.
  • In a medium bowl, cream the white sugar, brown sugar, and the butter together until smooth. Stir in the eggs and vanilla.
  • Add the flour mixture, and stir until just combined. Stir the crushed cookies into the dough.
  • Cover, and chill the dough for 1/2 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Drop dough by rounded spoonfuls onto prepared cookie sheets. Bake for 10 to 11 minutes in the preheated oven. Remove to cool on wire racks.
