1 pound ground pork sausage
2 cups biscuit baking mix
1 pound sharp Cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.
  • Bake in preheated oven for 20 to 25 minutes, until golden brown and sausage is cooked through.

2 lbs bulk pork sausage (half mild and half spicy)
1/2 lb softened cream cheese
1/4 cup snipped chives (or substitute green onions)
1/2 teaspoon cayenne pepper
salt and pepper
1 lemon, juice of
3 cups panko breadcrumbs
1 lb frozen puff pastry, thawed
scallion (to garnish)

Steps:

  • Preheat oven to 400°F
  • In large bowl, combine pork sausage, cream cheese, chives, cayenne, salt, pepper and lemon juice. Fold bread crumbs into meat-cheese mixture until fully combined. Roll mixture into 1-inch balls.
  • Wrap a 1 ½ -inch square of puff pastry around each ball, stretching to cover. Pinch seams to seal. Place seam-side down on greased cookie sheet and bake at 400 F for 10 minutes. Serve garnished with chopped or julienned scallions. Makes about 24 small balls.
  • To freeze: Freeze unbaked balls. Bake them (still frozen) at 375 F for about 17 to 20 minutes, or until browned.

I realize there are A LOT of sausage ball recipes on here, but this one has a combination of ingredients the others don't. These were great for Christmas party finger foods.

3 cups Bisquick baking mix
1 lb pork sausage
10 ounces cheddar cheese, grated
2 tablespoons dried parsley flakes
1 tablespoon Worcestershire sauce
1 teaspoon minced onion
1 teaspoon ground black pepper
1 teaspoon oregano
1 teaspoon garlic powder

Steps:

  • In a bowl, combine all ingredients and mix well.
  • Roll into small balls.
  • Place on ungreased baking sheet and bake in a 375F oven for 15 to 20 minutes or until brown.
  • Serve warm.
