COLD SESAME NOODLES

12 ounces angel hair pasta
3 tablespoons dark sesame oil
2 tablespoons peanut oil
1-inch piece fresh ginger, minced
3 garlic cloves, minced
1 teaspoon red chili paste, such as sambal
1 lime, juiced
2 tablespoons brown sugar
1/2 cup creamy peanut butter
3 tablespoons rice vinegar
3 tablespoons soy sauce
6 tablespoons hot water
1 tablespoon toasted sesame seeds
2 green onions, thinly sliced on the diagonal
Fresh chopped cilantro leaves, for garnish

Steps:

  • Cook the noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm. Drain immediately and rinse with cold water until cold. Drain the noodles really well and transfer to a wide bowl; toss with the sesame oil so they don't stick together. Chill.
  • In a blender combine the peanut oil, ginger, garlic, chili paste, lime juice, brown sugar, peanut butter, vinegar, soy sauce, and hot water. Blend. Toss the noodles with the peanut sauce until well coated. Serve at room temperature or chilled; garnish with the sesame seeds, green onions, and cilantro.

1/3 cup creamy peanut butter
1/4 cup canola oil
3 tablespoons water
3 tablespoons soy sauce
1 tablespoon red wine vinegar

1 teaspoon ground ginger
3 to 4 garlic cloves, minced
1/8 to 1/4 teaspoon crushed red pepper flakes
1 cup julienned carrots
8 green onions, thinly sliced
Peanuts or sesame seeds, optional

Steps:

  • Cook linguine according to package directions. Meanwhile, in a blender, combine the peanut butter, oil, water, soy sauce, vinegar, sesame oil, ginger, garlic and pepper flakes; cover and process until blended., Drain linguine; place in a large bowl. Drizzle with three-fourths of the peanut sauce; add carrots and onions. Toss to combine. Refrigerate until serving., Just before serving, add the remaining peanut sauce; toss to coat. Garnish with peanuts if desired.

1 pound Chinese egg noodles, spaghetti, or linguine
1/2 teaspoon toasted sesame oil
6 tablespoons sesame paste (tahini) or peanut butter
3/4 cup water, plus more if needed
1 tablespoon rice vinegar or white vinegar
3 tablespoons soy sauce
1 1/2 teaspoons sugar
2 garlic cloves, minced
1 scallion (both white and green parts), thinly sliced
1 1/2 inches of fresh ginger, peeled and chopped (1 tablespoon)
Chinese chili oil (optional)

Steps:

  • Bring a large pot of water to a boil, add the noodles, and cook until just barely tender, 5 to 6 minutes, or according to the package instructions. Drain well. Toss them with the sesame oil to coat. Cover and refrigerate.
  • Meanwhile, in a large bowl, thin the sesame paste by stirring enough water into the paste to achieve the consistency of thick cream. Whisk together the vinegar, soy sauce, and sugar. Add the mixture to the sesame paste. Stir in the garlic, three quarters of the scallion, and the ginger.
  • Just before serving, toss the chilled noodles with the sauce. Garnish with the remaining scallion and drizzle with the chili oil, if using.

6 cloves garlic, minced
6 tablespoons sugar
6 tablespoons safflower oil
6 tablespoons rice vinegar
6 tablespoons soy sauce
2 tablespoons sesame oil
2 teaspoons chili sauce
6 green onions, sliced
1 teaspoon sesame seeds, toasted

Steps:

  • Bring a pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and transfer to a serving bowl.
  • Meanwhile, place a saucepan over medium-high heat. Stir in garlic, sugar, oil, vinegar, soy sauce, sesame oil, and chili sauce. Bring to a boil, stirring constantly, until sugar dissolves. Pour sauce over linguine, and toss to coat. Garnish with green onions and sesame seeds.

One of my favorites! These sesame noodles taste best cold.

1 (16 ounce) package spaghetti
¼ cup sesame seeds
¼ cup tamari
¼ cup sesame oil
2 ½ tablespoons balsamic vinegar
2 tablespoons sucanat
¼ teaspoon chili paste
¼ cup chopped green onions

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, heat sesame seeds in a dry skillet over medium heat until golden brown and fragrant, stirring occasionally, 3 to 5 minutes. Remove from the heat and immediately transfer to a plate to cool.
  • Whisk tamari, sesame oil, balsamic vinegar, sucanat, and chili paste together in a bowl.
  • Drain pasta and transfer to a large bowl. Add dressing, sesame seeds, and green onions. Refrigerate for at least 3 hours or overnight before serving.

12 ounces chinese egg noodles
2 tablespoons sesame oil
1/2 cup tahini or 1/2 cup natural-style peanut butter
1 tablespoon sugar
1/4 cup soy sauce
1 tablespoon rice wine vinegar
Frank's red hot sauce
1/2 cup minced fresh scallions

Steps:

  • Cook the noodles in boiling salted water until they are tender but not mushy.
  • drain and rinse in cold water, toss with 1 Tbls of the oil.
  • Beat together the tahini, sugar, soy sauce, vinegar and remaining oil.
  • Add a dash of hot sauce, taste and season as necessary.
  • Thin the sauce with hot water until it is the consistency of heavy cream.
  • Toss the noodles with the sauce, garnish with scallions and serve.

1 package (10 1/2 ounces) dried udon noodles
1 baby bok choy
1/4 cup smooth peanut butter
5 tablespoons toasted sesame oil
3 tablespoons soy sauce
1/4 cup rice-wine vinegar (not seasoned)
1 large garlic clove, minced
2 teaspoons sugar
1/2 teaspoon crushed red-pepper flakes
Sesame seeds, for garnish

Steps:

  • Bring a large pot of water to a boil; cook noodles according to package directions. Drain; let cool completely.
  • Bring 3 cups water to a boil in a medium saucepan; boil bok choy 30 seconds. Drain; rinse well. Let cool; coarsely chop.
  • Whisk together the peanut butter, oil, soy sauce, vinegar, garlic, sugar, and red-pepper flakes. Put sauce, noodles, and bok choy into a bowl; toss well. Sprinkle with seeds.

Based closely on Rachael Ray Cooking 'Round the Clock. There are a bunch of other sesame noodle recipes here so I wasn't going to post it but I really loved this. It tastes better cold, the next day in my opinion. I used 2 tablespoons of Sriracha hot sauce and it was a bit spicy for the kids so if you have someone who does not like spicy food you might want to cut it back.

1/2 lb spaghetti
1/4 cup low sodium soy sauce
1/3 cup smooth peanut butter, softened in microwave
2 tablespoons cider vinegar
2 tablespoons hot sauce
1 tablespoon sesame oil
1 1/2 cups cabbage, shredded
3 carrots, peeled and shredded
1 cup bean sprouts
2 tablespoons sesame seeds

Steps:

  • Cook spaghetti and drain well.
  • In large bowl whisk soy sauce and softened peanut butter til totally incorporated.
  • Add vinegar, hot sauce and sesame oil and whisk into sauce.
  • Add cooked spaghetti, cabbage, carrots and sprouts. Toss to combine and coat everything evenly with the sauce.
  • Sprinkle with sesame seeds.
