16 large marshmallows or 1-1/2 cups miniature marshmallows
1/2 cup 2% milk
2 cups heavy whipping cream, whipped
1 graham cracker crust or chocolate crumb crust (9 inches)

Steps:

  • In a heavy saucepan, heat the candy bar, marshmallows and milk over low heat until chocolate is melted and mixture is smooth, stirring constantly. Cool. Fold in whipped cream; pour into crust. , Refrigerate for at least 3 hours. Refrigerate leftovers.

I started making this recipe a few years ago when I found it on the Cadbury website. It has become a favourite in our family, and also a favourite for my market stall. It's rich, chocolatey, and the best mousse I have ever had!

125 g cream cheese
1/2 cup sugar
1 egg
250 g dark cooking chocolate
600 ml thickened cream, lightly whipped

Steps:

  • Beat the cream cheese, sugar and egg together until smooth.
  • Break the chocolate into small pieces and melt over a double boiler or in the microwave.
  • Add the melted chocolate to the cream cheese mixture and stir through until well combined. Stir in the cream, again stirring until well combined. Chill until required.

This silky mousse pie with a chocolate cookie crust is perfect for summer or holiday gatherings.

1 ½ cups crushed chocolate wafer cookies, about 30 cookies
2 tablespoons sugar
1/3 cup butter, melted

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 375 F. Lightly spray an 8-inch pie dish with cooking spray.
  • In a food processor, combine the crushed cookies and sugar; pulse a few times to combine. With the food processor running on low, slowly add the melted butter until the mixture comes together.
  • Transfer the cookie mixture to the prepared pie dish. Press the mixture evenly in the bottom of the dish and up the sides.
  • Bake until set, about 12 minutes. Set aside while you make the mousse filling.
  • Gather the filling ingredients.
  • Separate the egg yolks from the whites. In a large bowl whisk the egg yolks and sugar until light and frothy, about 1 minute.
  • Heat 3/4 cups of the cream in a small saucepan over medium heat until it begins to steam.
  • Remove from the heat, add the chocolate, stirring until it's melted completely. Allow the mixture to cool slightly, about 3 minutes.
  • Very slowly whisk the chocolate mixture into the egg yolk mixture until fully combined. Set aside to cool until room temperature, about 30 minutes.
  • In another large bowl, beat the egg whites with an electric hand mixer on medium speed until stiff peaks form.
  • Fold about 1/3 of the egg whites into the chocolate-egg yolk mixture with a silicone spatula-do not worry too much about losing any of the air from the egg whites.
  • Fold the remaining egg whites into the chocolate-egg yolk mixture until only a few streaks remain (careful not to overmix).
  • Using the bowl the egg whites were in, beat the remaining 1/4 cup cream on medium speed until stiff peaks form.
  • Fold the whipped cream into the chocolate-egg yolk mixture until no streaks remain.
  • Transfer the mousse to the baked pie crust, spreading into an even layer. Refrigerate for at least 6 hours, but overnight is best.
  • Gather topping ingredients.
  • When ready to serve, make the whipped cream. Beat the cream, sugar, and vanilla with an electric hand mixer on medium speed until soft peaks form.
  • Top the pie with the whipped cream and chocolate shavings just before serving.

So, I started with a base recipe, but ended up adding my own ingredients and amounts to get the perfect chocolate mousse pie with chocolate whipped cream topping. Garnish with some finely chopped chocolate and fresh raspberries.

6 ounces semisweet baking chocolate, chopped
3 tablespoons butter, at room temperature
3 large eggs, separated
½ teaspoon cream of tartar
¼ cup white sugar
½ cup cold heavy whipping cream
2 tablespoons white sugar
½ teaspoon vanilla extract
1 (9 inch) prepared chocolate cookie crumb crust
1 cup heavy whipping cream
⅓ cup white sugar
2 tablespoons confectioners' sugar
2 tablespoons cocoa powder

Steps:

  • Chill a large bowl for about 1 hour.
  • Melt chocolate and butter in the top of a double boiler over simmering water until smooth, about 5 minutes; remove from heat and allow to cool slightly. Whisk egg yolks into chocolate one at a time, allowing each yolk to blend completely before adding the next.

1/2 ounce semisweet chocolate, Grated
1/4 teaspoon salt
2 tablespoons water, cold
1/3 cup vegetable shortening
1/4 cup sugar
3 ounces baking chocolate, Cut Up
1 envelope unflavored gelatin
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 cup milk
1/4 cup sugar
3 large eggs, Separated
1 cup heavy cream, Whipped
sweetened whipped cream
1/2 ounce semisweet chocolate

Steps:

  • CHOCOLATE PIE CRUST:
  • Sift the salt and flour into a bowl and cut in the shortening, using a pastry blender, until coarse crumbs form.
  • Add the chocolate and water, tossing with a fork, until the dough forms.
  • Press the dough firmly into a ball and then roll out on a lightly floured surface into a 13-inch circle.
  • Loosely fit the dough into a 9-inch pie plate and trim the edge so that there it reaches 1 inch beyond the rim of the pie plate.
  • Fold the extra under the edge of the crust to from a ridge.
  • Flute the edge and prick the entire surface of the pie shell with a fork.
  • Bake at 400 degrees F for 12 minutes or until a golden brown.
  • Cool on a rack.
  • CHOCOLATE PIE:
  • Stir the 1/4 cup of sugar, the gelatin and salt together in a 2-quart saucepan.
  • Stir in the milk and slightly beaten egg yolks.
  • Add 3 (1 oz) squares of unsweetened chocolate and cook over low heat, stirring constantly, until the chocolate melts and the gelatin dissolves.
  • Remove from the heat and stir in the vanilla.
  • Chill in the refrigerator, stirring occasionally, until the mixture is the consistency of unbeaten egg whites.
  • Remove the chocolate mixture from the refrigerator and set aside Immediately beat the egg whites and cream of tartar, in another bowl, until foamy, using an electric mixer set on high speed.
  • Gradually add the 1/4 cup of sugar, 1 Tbls at a time, beating well after each addition.
  • Continue beating until stiff, glossy peaks form when the beaters are slowly lifted.
  • When the chocolate mixture mounds slightly when dropped from a spoon, beat until smooth, using an electric mixer at medium speed.
  • Fold the egg white mixture into the chocolate mixture; then fold in the whipped cream.
  • Chill in the refrigerator until the mixture mounds well when spooned.
  • Turn into the chocolate pie shell.
  • Chill in the refrigerator for 2 hours or until set.
  • To serve, decorate the pie with puffs of sweetened whipped cream.
  • Grate and sprinkle the chocolate over the whipped cream.
